1 ½ cups cake flour ( - (200g))
1 ⅓ cup sugar ( - (260g); divided)
1 teaspoon baking powder ( - (5g))
½ teaspoon salt ( - (3g))
½ teaspoon cream of tartar ( - (1g))
6 large egg yolks ( - (100g))
6 large egg whites ( - (200g))
⅓ cup vegetable oil ( - (80g))
¼ cup water ( - (60g))
1 teaspoon vanilla bean paste ( - substitute with vanilla extract)

Steps:

  • Preheat your oven to 355 degrees F. Add the egg yolks, vegetable oil, water, vanilla, salt, and half of the sugar to a large mixing bowl. Whisk well to combine. (The remaining half of the sugar will be used for the egg whites.)
  • Sift the cake flour and baking powder, into the egg yolk mixture in three batches. Fold after each time until well combined. Avoid over mixing.
  • Add the egg whites and cream of tarter to a large mixing bowl. Beat on medium high speed while adding the remaining half of the sugar. Add the sugar in three batches until you've reached firm peaks. See Note 1.
  • Add half the beaten egg whites to the egg yolk mixture. Fold gently to combine then add the remaining half. Fold gently again to avoid deflating the batter. The batter should be light, airy, and fluffy.
  • Spray the inside of your ungreased, aluminum chiffon cake pan with water including the inner tube. This helps prevent the cake from sticking too much to the pan once baked. Pour the batter into the pan and fill up to 75% full otherwise you may risk overflow.
  • Bake at 355 degrees F for 25 to 35 minutes. Your baking time will depend on how shallow or deep your pan is. See Note 2. Check after 25 minutes for doneness. It's ready when a toothpick inserted in the center comes out clean and the top is a golden brown color. If your pan is tall and deep, you may have to bake it longer.
  • Remove from the oven and immediately flip the chiffon pan upside down to invert it. Cool it down as soon as possible to prevent it from sinking and deflating.Drape a cold, damp towel over it to cool it down as quickly as possible. Rinse the towel under cold water and wring it dry. Drape it over the pan again and repeat this process until the pan is no longer hot. See Note 3.
  • Once the cake has cooled, flip over the pan and carefully run a knife along the sides of the pan to help remove it. Then run a knife along the bottom of the pan to remove it from the base.
  • Invert the cake again so the flat side is facing up and dust on powdered sugar. Slice and serve.

4 tablespoons powdered milk
6 tablespoons butter
2 eggs
1 teaspoon vanilla extract

1/2 cup skim milk
1 teaspoon margarine

Steps:

  • Method: To prepare cake: Preheat oven to 350 degrees.
  • Beat egg yolks and 1 cup sugar.
  • Fold in flour, salt and baking powder.
  • In a separate bowl, beat egg whites to soft peaks with remaining sugar.
  • Gently fold egg whites into batter.
  • If you are using oil or butter for added richness, fold that in last.
  • Pour batter into ungreased 9 inch, round cake pan.
  • Bake about 20 minutes, or until toothpick inserted comes out clean and cake is a light golden brown.
  • To prepare filling: In a chilled bowl with a hand mixer, whip cream until it forms soft peaks.
  • In a separate bowl, combine sugar, powdered milk and warm mashed taro until blended.
  • Add butter and combine.
  • Wait until mixture has cooled to room temperature, then fold in whipped cream.
  • Slice cake in half horizontally.
  • Spread filling on bottom layer with spatula.
  • Add top layer of cake.
  • Note: Peel taro root, cut into 1/3 inch thick slices and steam until soft, about 30 minutes.
  • When root is cooked, mash it with a fork or ricer.

You can think of the chiffon cake as angel food cake's even fluffier cousin. This is the recipe from Tartine Bakery in San Francisco.

Yield Makes 1 cake

Number Of Ingredients 11

2¼ cups (315 g) all-purpose flour
2 tsp. baking powder
1½ cups (300 g) sugar
¾ tsp. salt
½ cup vegetable oil, such as safflower or sunflower
6 large egg yolks
¾ cup water
2 tsp. vanilla extract
1½ tsp. lemon zest, grated
10 large egg whites
¼ tsp. cream of tartar or lemon juice

Steps:

  • Preheat the oven to 325°F. Line the bottom of a 10" springform pan with 3" sides with parchment paper cut to fit exactly. Do not grease the sides of the pan.
  • Sift together the flour and baking powder into a large mixing bowl. Add 1¼ cups of the sugar and the salt and whisk to combine. In a small bowl, whisk together the oil, egg yolks, water, vanilla, and lemon zest. Make a well in the flour, add the yolk mixture, and then whisk thoroughly and quickly for about 1 minute until very smooth.
  • Place the egg whites in a large mixing bowl. Using a mixer fitted with the whisk attachment, beat on medium speed until frothy. Add the cream of tartar or lemon juice and beat on medium-high speed until the whites hold soft peaks. Slowly add the remaining ¼ cup sugar and beat on medium-high speed until the whites hold firm, shiny peaks. Using a rubber spatula, scoop about one third of the whites onto the yolk mixture and fold in gently to lighten the batter. Gently fold in the remaining whites just until combined.
  • Pour the batter into the prepared pan, smoothing the top with an offset spatula if necessary. Bake until a cake tester inserted into the center comes out clean, 45-55 minutes. Let cool in the pan (the sides of the pan will help hold the structure of the cake as it cools) on a wire rack. To unmold, run a small, thin knife around the sides of the pan to loosen the cake and then release and lift off the pan sides. Invert the cake, peel off the parchment, and then use as directed in individual recipes. The cake will keep, well wrapped, in the refrigerator for up to 4 days or in the freezer for up to 1 month.

Steps:

  • Set oven to 325 degrees.

  • In a large bowl, sift together flour, baking powder and salt, then sift one more time, then beat in oil, egg YOLKS, 1/4 cup plus 3 tablespoons lemon juice, water and lemon peel with an electric mixer at low speed for about 3 minutes.
  • In a large dry copper or stainless steel bowl beat the room temperature egg whites with cream of tartar until stiff but not dry.
  • Fold in about 1/4 of the whites into the batter to lighten, the gently fold in the remaining whites.
  • Pour the batter into the ungreased tube pan.
  • Tap on the counter to release any air pockets.
  • Bake for about 1-1/4 hours, or until the cake is springy to the touch.
  • Immediately invert cake in pan over neck of a bottle (I use an empty beer bottle for this).
  • Cool the cake completely while inverted.
  • Remove the cake from the bottle and place on the counter.
  • Run a knife around the edges of the pan to loosen cake.
  • Transfer the cake to a serving plate.
  • Dust with powdered sugar.

This is a good cake for birthday parties, can be served with whipped cream and fruit, frosting it is also good, or take it up a notch and cut the top off and scoop out some of the middle and fill with ice cream before replacing the top (make sure to keep it cold!) Found this in an old Better Homes and Garden Cookbook from the 1960's and made it for my Dad's birthday.

1 1/2 cups sugar
3 teaspoons baking powder

1/2 cup salad oil
7 egg yolks
3/4 cup cold water
1 teaspoon vanilla
7 egg whites
1/2 teaspoon cream of tartar
1/4 cup boiling water
2 tablespoons sugar
2 ounces unsweetened chocolate squares

Steps:

  • Sift together the cake flour, 1 1/2 cups sugar, baking powder and salt.
  • Make a well in the center of dry ingredients and add in order: salad oil, egg yolks, cold water, and vanilla. Beat until satin smooth.
  • In a large bowl, beat egg whites and cream of tarter until very stiff peaks form. If there is a speck of grease or egg yolk, the whites won't whip up!
  • Pour egg yolk mixture in thin stream over entire surface of the egg whites, GENTLY folding to blend.
  • Remove 1/3 of the batter to a separate bowl.
  • Blend together the boiling water, 2 Tbsp sugar and unsweetened chocolate, melted; cool.
  • Gently fold chocolate mixture into 1/3 portion of batter.
  • Spoon half the light batter into UNGREASED 10 inch tube pan; top with half the chocolate batter. Repeat layers. With narrow spatula or butter knife, swirl gently through batters to marble. Leave definite areas of light and dark batters.
  • Bake in a 325 degree oven, about 65 minutes or till cake springs back when pressed lightly with finger.
  • Invert cake in pan and cool completely before removing from pan.

Burnt honey
½ cup honey
½ tsp. kosher salt
⅓ cup chilled heavy cream
Poached rhubarb
3 green cardamom pods, cracked open (optional)
1 cup (200 g) organic cane sugar or granulated sugar
3 slender pink rhubarb stalks (about 300 g), trimmed, leaves removed, cut into 3x½" pieces
Cake and assembly
Nonstick vegetable oil spray or vegetable oil
½ cup (65 g) sesame seeds
½ cup plus 1 tsp. (72 g) cake flour
1 tsp. baking powder
½ tsp. kosher salt
2 large egg yolks, room temperature
2 Tbsp. plus ¾ tsp. (35 g) tahini
8 Tbsp. (100 g) organic cane sugar or granulated sugar, divided
3 large egg whites, room temperature
⅛ tsp. cream of tartar or a dash of vinegar or fresh lemon juice
⅔ cup chilled heavy cream
Special Equipment: A 6"-diameter and 3"-tall cake pan

Steps:

  • Burnt honey
  • Bring honey to a boil in a medium saucepan (slightly larger than you think you'll need because the honey will bubble up) over medium heat and cook until golden brown and toasty smelling, about 2 minutes. Remove from heat and stir in salt. Carefully pour in cream (this will help stop the cooking). The honey will bubble and sputter, so be careful. Stir with a wooden spoon or rubber spatula until homogenous. Let burnt honey mixture cool, then transfer to an airtight container. Cover and chill until cold, at least 3 hours. Do ahead: Burnt honey mixture can be made 3 days ahead. Keep chilled.
  • Poached rhubarb
  • Bring cardamom (if using), sugar, and ¾ cup water to a boil in a medium saucepan over medium-high heat, stirring to dissolve sugar.
  • If using cardamom, remove from heat, cover, and let sit 15 minutes to infuse. Set syrup back over medium-high heat and return to a boil.
  • Add rhubarb and cook until mixture just starts to bubble again; remove from heat. Cover and let sit until rhubarb pieces are softened but still hold their shape, 70-80 minutes. Do ahead: Rhubarb can be poached 1 day ahead. Transfer to an airtight container; cover and chill.
  • Cake and assembly
  • Preheat oven to 350°F. Lightly coat cake pan with nonstick spray or lightly oil. Line bottom with a parchment paper round and spray or oil round. Pour sesame seeds into pan and gently shake and tilt pan to coat bottom and sides, pat out any excess. Sift cake flour, baking powder, and salt into a medium bowl.
  • Whisk egg yolks, tahini, 6 Tbsp. (75 g) sugar, and 3 Tbsp. room-temperature water in a small bowl to combine. Add dry ingredients and whisk well; set batter aside.
  • Beat egg whites and cream of tartar in the bowl of stand mixer fitted with the whisk attachment on medium speed just until foamy bubbles appear, about 15 seconds. With the motor running, sprinkle in remaining 2 Tbsp. (25 g) sugar a teaspoonful at a time, beating 15-20 seconds after each addition to incorporate before adding more. (Take the time to build a strong meringue and your cake will thank you for it.) Beat until meringue is glossy and stiff peaks form.
  • Using a rubber spatula, add one third of meringue to reserved batter and fold until just streaky, taking care not to deflate meringue. Repeat two more times, dividing remaining meringue in half and mixing the final addition until no streaks remain. Immediately scrape batter into prepared pan and lightly tap pan on counter to evenly distribute and even out size of bubbles.
  • Bake cake until a tester inserted into the center comes out clean and top is puffed and bounces back when gently pressed, 30-35 minutes. Immediately invert cake onto a wire rack, peel away parchment round, and turn right side up. Let cool (the top will flatten as it cools). Invert cake onto a cake or other large plate so sesame crust is on top.
  • Beat chilled burnt honey mixture and cream in the clean bowl of a stand mixer fitted with the whisk attachment (a medium bowl and a whisk will also work) until medium firm peaks form. (You want that perfect dollop consistency, where it holds its shape on a plate but still has some slack.)
  • To serve, slice cake into six wedges with a serrated knife, using a long, gentle sawing motion. This will help preserve the crumb of the cake and give you a clean wedge. Divide, cut side down, among plates and spoon a couple of heaping tablespoonfuls burnt honey cream alongside. Using a fork, lift 3-4 rhubarb pieces out of the syrup and arrange next to cake. Drizzle a little rhubarb syrup over the cake if desired. Do ahead: Cake can be baked 2 days ahead; keep tightly wrapped at room temperature. Burnt honey cream can be made 3 hours ahead; cover and chill. Beat again briefly before using if needed.

3 egg yolks
8 egg whites
1 teaspoon cream of tartar
3 tablespoons sugar

2 1/2 cups fat-free whipped topping, thawed
fresh mint sprig (optional)

Steps:

  • FILLING: Combine 1 teaspoon lime rind, 1/4 cup lime juice, and sweetened condensed milk in a small bowl, stirring until blended. Cover and chill 3 hours.

4 eggs
90 g taro root, paste
30 g oil
70 g flour
50 g sugar
80 g milk

Steps:

  • Separate egg yolk and whites into separate bowls.
  • Add 15g sugar, sifted flour, purple yam powder, oil and milk to the yolks. Mix well until there are no lumps. Do not overmix as you don't want the gluten to come out of the flour.
  • Cover mixture and leave it to the side.
  • Beat egg whites with sugar until stiff peak. Lower mixing speed to low to reduce the size of the air bubbles for the consistent final product.
  • Add 1/3 of the egg whites to the yolk mixture. mix it until its well incorporated. Don't worry about folding here as you are trying to get the yolk to a similar texture as the whites.
  • Add yolk mixture into the remaining 2/3 of egg whites. Fold in the mixture well and you want a thick consistency that runs down your spatula, like a ribbon consistency.
  • Add batter to the aluminium cake tin (make sure its aluminium, do not use non-stick). Bake on lower shelf for 160 C for about 30 mins.
  • Once its out of the oven, drop the cake from a height to get rid of the hot air, tip it upside down on a rack to cool down.
