BANANA BANANA BREAD
Why compromise the banana flavor? My banana bread is moist and delicious with loads of banana flavor! Ultimate comfort food, and it's WONDERFUL TOASTED!! (Make sure to use bananas with a lot of black on them for the best flavor! The blacker the bananas, the stronger the banana flavor of the bread.)

Steps:
- Preheat oven to 350°.
- Lightly grease 9 x 5 loaf pan.
- In large bowl, combine flour, soda and salt.
- In separate bowl, cream together butter and brown sugar.
- Stir in eggs and mashed bananas until well blended.
- Stir banana mixture into flour mixture; stir just to moisten.
- Pour batter into prepared loaf pan.
- Bake in preheated oven for 60-65 minutes until a toothpick inserted into center of loaf comes out clean.
- Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
GLUTEN FREE CHOCOLATE PEANUT BUTTER BANANA BREAD
I composed this recipe from 3 others mixing and matching the ingredients to make the perfect soft, moist bread. It tastes just regular chocolate peanut butter banana bread. My family, including my 4 kids, loved it so much it was eaten within 2 days. There are lots of ingredients, but it is well worth it to get such a soft, moist and delicious gluten free bread.

Steps:
- Preheat oven to 350.
- Grease (2) 9x5 non-stick loaf pans.
- Cream together butter, eggs, vanilla peanut butter, applesauce, bananas and Sugar.
- In a separate bowl combine flour, baking powder, baking soda, xanthan gum, salt and baking cocoa.
- Gradually add the dry ingredients to the wet ingredients, mix/stir until smooth (batter will be a little thick).
- Spoon batter into greased loaf pans; Bake at 350 for 50-60 minutes until a knife inserted into it comes out clean. Let cool 10 minutes and remove from loaf pans and cool.
- ** Can be made egg free buy substituting an egg replacer or using more applesauce.
- *** try adding your favorite things like chocolate chips, nuts or raisins. And top with brown sugar before baking.

- In a bowl, cream shortening, sugar and egg. Combine dry ingredients; add to creamed mixture alternately with milk. Fill greased muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until golden. Let cool for 3-4 minutes. Meanwhile, combine sugar and cinnamon in a small bowl. Roll warm muffins in melted butter, then in sugar mixture. Serve warm.

Flaky and light, these scones are perfect for snacking or for breakfast. Made from ingredients you probably have on hand, they can be a special treat any time and are one of my favorite breakfast recipes to have with tea or coffee.

- Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
- Mix flour, 1/4 cup sugar, baking powder, and salt in a bowl. Add butter and mix with fingers until coarse crumbs form. Gently mix yogurt, egg, and vanilla extract into flour mixture until dough is just combined.
- Turn the dough out onto a lightly floured surface and knead briefly, for five or six turns. Pat or roll the dough out into a 1-inch thick round. Cut into 8 wedges and place onto the prepared baking sheet. Brush each wedge with milk and sprinkle with remaining 1 tablespoon sugar.
- Bake in the preheated oven until lightly browned, about 15 minutes. Serve warm or cool completely and store in an airtight container.

All I can say is Yummy! This cake is sponge-like, but moist. You can put almost any frosting/filling with it- Cream cheese frosting, butter cream, chocolate frosting and it all tastes wonderful. Adults as well as kids love this one. I've had this one for years.

- Mash the bananas until smooth and lump free, stir in the lemon juice then set aside.
- Cream the butter and sugar together. When smooth add the eggs and vanilla extract. Beat for 1 minute then stir in the mashed bananas, mixing thoroughly. Add the dry ingredients and mix until combined, then stir in the milk.

- Mash bananas (I like to puree mine).
- Cream shortening, sugar and egg yolks and add to bananas.
- Add soda dissolved in hot water.
- Add nuts, vanilla and banana extracts.
- Sift flour and salt together and add to mixture.
- Fold in beaten egg whites(stiff).
- Put in greased 9 x 5 loaf pan.
- Bake at 325 degrees for 45 to 55 minutes, until toothpick comes out clean.
- Makes one large loaf.
