I "HATE" MAYONNAISE TUNA FISH SANDWICH

Okay, I admit it - I Hate - I mean HATE mayonnaise - but who wants to eat a "dry" tuna sandwich. So I came up with this solution that we now enjoy (My daughter calls it "Tuna toast"). So if you're a mayo hater like me - or ya just want a change - here goes...

Number Of Ingredients 5

6 ounces canned tuna
2 -4 slices twelve-grain bread
butter or margarine
1 -2 tablespoon olive oil
1/2 teaspoon lemon pepper seasoning

Steps:

  • Drain tuna.
  • Toast 2-4 slices twelve grain bread (2 if you want a BIG sandwich, 4 if you want to share).
  • Butter toast.
  • Mix tuna with olive oil (I admit - I just pour so measurements are "guesstimated") and 1/2 teaspoon (again - I just give a few shakes) of lemon pepper salt.
  • If you like you may make mixture in advance or overnight to allow the flavors to blend (just remember to refrigerate if you make in advance).
  • At this point if you like chopped celery or whatever you normally add to your tuna sandwich - go for it -- Hey you can use this as a base idea and go from here - I won't take offense if you "tweak" the recipe.
  • Enjoy.
  • (Note: You might be asking, "Why not just buy tuna packed in oil?" - Cuz adding olive oil is healthier and more flavorful and plus YOU determine how much oil goes in).

When I was a child my Mom just used tuna packed in spring water mixed with a spoonful of Miracle Whip salad dressing, but when I became an adult my tastes changed. *Note: Cooking time: is toasting time.

2 (5 ounce) cans tuna (chunk light packed in spring water)
2 tablespoons Miracle Whip (Salad Dressing)
2 tablespoons sweet onions (minced)
8 teaspoons Miracle Whip
8 slices bread (toasted)
4 slices muenster cheese (sliced)
1 cup iceberg lettuce (shredded)
1 tomatoes (medium, sliced)
2 cups potato chips (optional)

Steps:

  • Drain water from cans of tuna.
  • Mix tuna, 2-tablespoons of Miracle Whip and onions together and divide in quarters.
  • Pair up the 8 slices of toast.
  • Spread 1-teaspoon on each slice of toast.
  • Build each sandwich with 1-slice of cheese, tuna mixture, 1/4 of the shredded lettuce, 1-2 slices of tomato and other slice of toast.
  • Place two toothpicks to hold each sandwich together approximately 1" from two opposite corners.
  • Cut sandwiches diagonally and serve with potato chips.

2 tablespoons of your favorite mayonnaise
1/4 teaspoon dried dill weed

Steps:

  • Drain tuna.
  • Mix with mayo and dill.
  • Put on toasted bread with a slice of cheese and you're good to go!

I can't eat mayo, so I never really liked tuna until one day I tried making it like this. It's really simple, but a great alternative if you don't like mayo.

2 slices bread
2 tablespoons cream cheese with chives
2 1/2 ounces tuna
1 slice provolone cheese
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Heat a frying pan to medium heat.
  • Spread one slice of bread with cream cheese.
  • Top with tuna.
  • Add the provolone on top of the tuna.
  • Top with second slice of bread.
  • Butter the outside slices of the sandwich and grill in the pan like a grilled cheese sandwich.
  • Another option is to grill in a panini maker.
  • A quicker and perhaps lighter option is to toast the bread in a toaster before assembling the sandwich and then microwave for 30 seconds or so just enough to melt the cheese.
  • You can experiment with different cheeses--I have used Swiss, Munster and sharp cheddar as well.
  • You can change the cream cheese to plain or veggie as well.
  • If the tuna is still to "dry" for you, try mixing 1-2 tablespoons sour cream with the tuna before assembling the sandwich.

I grew up in Provincetown MA and used to order the tuna fish sammie from a little cafe next to the New Art Cinema (where I worked as a teen). This recipe was inspired by that simple little sandwich with my own little twist.

1 (5 ounce) can tuna fish
1/2 tablespoon sweet bread & butter pickle, minced
1 1/2 tablespoons mayonnaise (more or less to your taste)
1 hard-boiled egg
1/2 teaspoon pickle juice
1 teaspoon red pepper relish
1/4 teaspoon celery salt
1/8 teaspoon pepper
1 pita pocket
alfalfa mixed sprouts, handful to taste
1 leaf baby bibb lettuce
cape cod potato chips, 1 handful (made in Hyannis, MA)
4 dashes Italian dressing

Steps:

  • Mix all ingredients together in tuna mix and refrigerate for 20 minutes while preparing the rest.
  • Slice pita pocket in half and gently open. Place lettuce leaf inside pockets.
  • Gently add chilled tuna mix.
  • Top with alfalfa sprouts and a handful of crushed potato chips.
  • Splash all with Italian dressing, to taste.
  • Cross Commercial street and go behind the post office and enjoy your sammie on the beach!

4 tilapia fillets
4 large hamburger buns with sesame seeds
4 large leaves romaine lettuce
4 ounces cheddar cheese
4 tablespoons chipotle mayonnaise (recipe below)
chipotle pepper, in adobe sauce (used to make chipotle mayo)
1 tablespoon soft butter
1 tablespoon emeril's southwest seasoning (or see Emeril's Southwest Seasoning)
2 tablespoons extra virgin olive oil

Steps:

  • Heat olive oil on medium high in a large frying pan. Sprinkle tilapia fillets liberally with southwest seasoning. When oil is hot, add fillets. Cook 3 minutes on each side. Remove fish to a plate.
  • Slice cheese into thin slices. Make chipotle mayonnaise (see recipe below).
  • Heat grill pan to medium high. Lightly butter the buns and grill, buttered side down until browned. Add thinly sliced cheese to the bottom of each bun. Melt the cheese under a broiler or toaster oven and remove from oven. Add a fish filet to each bun. Place a romaine lettuce leaf on top of the fish. Add 1 tablespoon of chipotle mayonnaise to each bun top and place the bun on top of lettuce.
  • Chipotle Mayonnaise Recipe:.
  • Place one 7 or 8 oz. can of chipotle peppers in adobe sauce in food processor. Pulse until peppers are well chopped. Add 3 tablespoons of the chipotle sauce to 1 cup of mayonnaise. Freeze or refrigerate remaining chipotle sauce for future use. Refrigerate remaining chipotle mayonnaise.
