BUDDY'S FISH HASH
This is a 75-year-old family recipe. Buddy is now in his late 70s and can vividly remember his father making this for him as a child. (His dad died when he was 7.) His dad worked with the Coast Guard Station in Virginia Beach and this meal was a staple for the station crew as well as his family.

Steps:
- Steam or boil the fish 7 to 8 minutes. Remove the fish and let cool 3 minutes, then very carefully peel and discard the skin. Slowly remove the meat from the bones using a fork or small knife (take your time with this as the more you pay attention, the fewer small bones you will find in your finished meal).
- Chop the baked potato into bite-size chunks and add the fish to the potatoes. Top with the bacon and onions, then add vinegar and pepper, to taste. Mix all the ingredients together to a hash, using a fork, and enjoy!

- After they reach a boil, turn off the heat and let them cook for 20 minutes.
- After 20 minutes, replace the hot water with cold to stop cooking.
- Bring a large pot of salted water to a boil.
- Once boiling, add cod and cook until just flaky, about 15 minutes.
- Once the cod is cooked, remove hot water and cover in cold water to stop cooking.
- Sautee diced garlic and onions butter until fragrant.
- Add vegetables (except capers and parsley) and potatoes.
- And cook until just tender, about 15 minutes.
- Mix cooked ingredients.
- Garnish with chopped parsley and capers and eggs sliced in half.
CODFISH HASH

- Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender.
- Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl.
- Add butter, onion, parsley, and egg to the bowl; mash the mixture together. Mold the mixture into patties.
- Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.

- In a small saucepan, bring water to a boil. Add cod; simmer 2 minutes. Remove pan from heat and let stand until room temperature, about 30 minutes. Remove cod from water; discard water. Discard any skin and bones from cod; shred with a fork. Set aside. , Meanwhile, in a large bowl filled with cold water and 1 teaspoon salt and stir to dissolve. Add cabbage and rinse; drain. , In a large saucepan, heat oil. Add onions, peppers and tomatoes; cook until onions are tender, 4-5 minutes. Add cabbage and remaining 1 teaspoon salt. Cook, covered, until cabbage is tender and translucent, 5-6 minutes. Stir in fish; cook until heated through. Serve over rice, if desired.

PORTUGUESE SALT COD HASH
Steps:
- 1. At least 24 hours prior to preparing the dish, rinse the cod well to remove any surface salt, then soak it in a large bowl with plenty of water, changing the water several times during the 24 hours. When ready to begin the recipe, drain and rinse the salt cod again. 2. Fill a bowl with cold water and set aside. Bring a large pot of water to a boil, slip the cod into the pot, and cook until it flakes easily, about 12 minutes, depending on the thickness of the fillet. Remove the fish from water with a slotted spoon and place in the bowl of cold water to stop the cooking. 3. When cool, remove the fish from the bowl, pat it dry with paper towels, and set aside. 4. In a medium saucepan with high sides, heat the vegetable oil over medium-high heat until it reaches 365°F (185°C). Add the potato cubes and fry until golden, 5 to 7 minutes. Transfer the potatoes to paper towel to drain and set aside. 5. Heat 1/4 cup of the olive oil in a large skillet over medium heat until hot. Saute the onion, bell pepper, and bay leaves until the onions are glassy and soft, 5 to 7 minutes. Break the cod into large flakes and add it to the skillet. Add the chopped garlic and another 1/4 cup of olive oil and continue to cook until the onions are golden, making sure not to burn the garlic, about 3 minutes. 6. Stir the fried potatoes and olives into the cod mixture until warmed through. Season with salt and white pepper to taste. Remove the skillet from the heat and discard the bay leaves. Sprinkle the parsley over the cod mix and toss. Set aside. 7. Heat the remaining 2 tablespoons of olive oil in a non-stick skillet over medium high heat. Fry the eggs over easy, 2 to 4 minutes. 8. To serve, mound the salt cod hash in the center of four plates and top each with an egg. Bring to the table immediately.
