BAKED APPLE PANCAKE
Sunday at Bickford's in the Boston area was a regular to enjoy their Baked Apple Pancake. Now a resident of Miami Beach, I couldn't find anything like it, therefore, I created this one. For success you must use a 7"-10" cast iron skillet..

Steps:
- Preheat oven to 425 degrees. Beat eggs until light and fluffy in a medium size bowl.
- Add milk, vanilla and a few dashes of cinnamon.
- Add flour and beat for 30 seconds into a light batter.
- Set aside.
- Mix together the sugar and cinnamon.
- Melt butter in skillet then add sugar mixture.
- Immediately add sliced apples stirring to coat evenly.
- Cook apples 3 minutes on medium heat, stirring to coat.
- Remove from heat and pour in egg batter, arranging the apples evenly on top.
- Sprinkle with a little more cinnamon.
- Bake in a 425 degree oven for 13-15 minutes (it will puff up).
- Remove from oven and sprinkle with powdered sugar.
- Cut into 4 wedges and serve hot with lemon wedges and butter, or with maple syrup (or both).
EASY LIGHT PANCAKES
Steps:
- In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, combine milk, oil and vanilla; add to dry ingredients and stir just until moistened. Preheat a lightly greased griddle or skillet. Pour batter by 1/4 cupfuls onto griddle; cook until light brown. Turn and cook other side. Serve immediately with syrup or topping of choice.

Why not treat your family to these easy to make, out of the ordinary pancakes. They taste so good on a cold morning. You can top this dish with vanilla whipped cream instead of the maple syrup...or use both!

Steps:
- Preheat oven to 375 degreed F.
- Melt butter in an 8 inch oven proof skillet or casserole.
- Saute apples in the butter.
- Sprinkle with sugar and cinnamon, cooking until the sugar is melted and the apples have begun to soften.
- Mix together eggs, flour and milk in a medium sized bowl.
- Pour over the apples.
- Bake for 20-30 minutes or until puffed and done in the center.
- Serve warm with maple syrup.
GERMAN APPLE PANCAKE (BABY APPLE PANCAKE) RECIPE
Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Peel the apples and slice them into ½" thick wedges. Place tham aside.
- Add 4 butter cubes to your cast iron pan and place it in the oven for 4 minutes, or until butter is just melted and pooled. Remove from oven with oven mitts.
- Add 2 tablespoons of granulated sugar and all the brown sugar to the pan and mix with the melted butter.
- Mix the apple wedges with nutmeg, cinnamon, and 2 tablespoons of granulated sugar.
- Add the apple wedges to the pan. Place it in the oven and bake for as long and it takes to finish the next steps.
- Add the flour and salt to a large bowl and mix it with a whisk until combined.
- Add the milk and vanilla extract and whisk until batter is lump-free.
- Add the eggs and whisk until the custard batter is fully combined.
- Carefully remove pan cast-iron from oven with mitts.
- Slowly pour the custard batter over the apples. Then carefully return it to the oven using oven mitts to protect your hands.
- Bake the pancake for 25 minutes at 350°F on the center oven rack. When done, the edges will puff up and be golden-brown in color. The center will spring back when pressed cooked. You will see pooled butter in the center. This is normal.
- Slice the pancake and remove the slices with a spatula. Enjoy warm.

APPLE PUFF PANCAKE
Steps:
- In a small bowl, combine flour and salt. Add the eggs, milk and butter. Pour into a greased 8-in. square baking pan. Bake at 400° for 20-25 minutes or until lightly browned. , Meanwhile, combine the chopped apple, jelly and cinnamon in a saucepan. Cook and stir until jelly is melted. Cut pancake into fourths; place two pieces on each plate. Top with apple mixture.
