SLOW COOKER BEEF BARBACOA



Slow Cooker Beef Barbacoa image

Tacos, taco salads, burrito bowls, egg scrambles...the options are endless when it comes to this tender, perfectly spiced slow cooker beef barbacoa.

Number Of Ingredients 14

2 ½ lbs. boneless beef chuck roast, cut into 2-inch cubes and trimmed of fat
½ cup water
½ medium onion, quartered
6 garlic cloves, peeled
3 tablespoons tomato paste
Juice of 1 lime (about 2-3 tablespoons)
1 tablespoon ground cumin
1 tablespoon dried oregano
¾ teaspoon fine salt
¼ teaspoon black pepper
Pinch of ground cloves
Pinch of ground chipotle pepper (optional)
3 bay leaves
⅛ tsp. ground cloves

Steps:

  • Place the cubed chuck roast in the bottom of the slow cooker.
  • To a blender or food processor, add the water, onion, garlic, tomato paste, lime juice, cumin, oregano, cloves, chipotle pepper (if using), salt and pepper. Blend or process until smooth.
  • Pour the tomato mixture over the chuck roast and stir. Place bay leaves on top of the meat.
  • Cover and look on low heat for 7 hours (or high for 3 ½ hours) or until the meat is tender and shreds easily with a fork. Remove meat to a clean plate or shallow dish using a slotted spoon. Shred with two forks then return to the slow cooker and stir into the liquid. Taste and season with additional salt and pepper as needed.

This is a Sandra Lee Semi-Homemade recipe. I did brown my seasoned beef first, and I cooked mine on Low overnight (8-9 hours). My family really enjoyed it.

2 lbs beef stew meat, cut into bite size pieces
2 cups potatoes, diced
1 cup frozen corn kernels
1 small onion, chopped
1 (16 ounce) jar chunky salsa
1 (10 3/4 ounce) can Campbell's creamy ranchero tomato soup
1 cup low sodium beef broth
1 cup Corona beer

Steps:

  • Season stew meat with salt and pepper to taste. Place in crock pot with potatoes, corn, onion and salsa.
  • Combine soup, broth and beer and add to crock pot, stirring thoroughly.
  • Cook on High 4 to 6 hours.

I found this marinade recipe on the "Life Tips" website while looking for methods of freezing vegetables. Use this on steaks for grilling, roasts, kabobs. This recipe provides great Mexican flavoring, is quick and easy to prepare, and delicious to boot.

  • Blend all ingredients well.
