FRESH CREAM SALAD DRESSING FOR NEW SALAD GREENS
My mother and grandmother both used this recipe every spring and summer as the lettuce started to produce in the garden. It is quick and simple with only a few ingredients, yet served with just fresh leaf lettuce and spring onions, so good! You might have to adjust the ingredients depending on what you like better, sweet or tart.

SALAD WITH CREAM DRESSING
The inspiration for this salad that my wife prepares occasionally at home comes from the area of France where I was raised, near Lyon. It is always better done at home; the dressing lends itself to individual rather than high-volume preparation, and the delicacy required to properly clean and thoroughly dry the greens without bruising them is more easily achieved in the home kitchen. The salad should be cool but not ice cold, and should be tossed at the last minute, just before serving, especially if Boston or red-tipped leaf lettuce is used.

Steps:
- Remove and discard any damaged outer lettuce leaves and tear the lettuce into two-inch pieces. Wash in a sink full of cool water, lifting the lettuce from the water and placing it in a salad dryer. Dry thoroughly. You should have about eight cups of greens.
- For the dressing, place the vinegar, pepper, salt and cream in a salad bowl and mix together with a spoon, preferably wooden.
- At serving time, toss the greens with the dressing and serve immediately.

CREAMY LETTUCE SALAD
Round out the fast feast with quick-to-fix Creamy Lettuce Salad. "This recipe is a family favorite I recall my mom serving often when I was growing up," relates Jacquie Troutman of Zephyrhills, Florida. "She particularly liked it because it was so easy to make and called for things she usually had on hand." CREAM DRESSING FOR LETTUCE SALAD - GERMAN DRESSING
Posting for ZWT 6 and another recipe from About.com for German recipes. Recipe states: Mix this salad dressing ("Salatsauce") in the bottom of the bowl and then add lettuce. Toss to coat and serve. I personally don't care for a too sweet salad dressing, so I would just but a teaspoon for us, but that is up to personal preference. Serve with any veggies of your choice along with the lettuce. Also add cheese of choice and croutons if you like and I personally would add garlic salt/powder.

ANN J'S POLISH SOUR CREAM LETTUCE
Different and refreshing. If you like cucumbers in sour cream, you'll like this. A vintage recipe made by my little old Polish mother, who received it from an even older Polish lady. I've never seen this recipe anywhere else. I suspect it might have a bit of a German history somewhere. Use these measurements as a guide; this is for a fairly large head of lettuce.

Steps:
- 1. Place salad ingredients into a very large bowl. (I put mine into a 13 cup size Tupperware bowl.)
- 2. In another bowl, add the creamy dressing ingredients. Stir thoroughly to blend the ingredients together.
- 3. Pour the creamy dressing, a little at a time, over the salad, and stir gently to combine.
- 4. Once the creamy dressing has been completely mixed into the salad, serve the salad immediately.
- 5. *Note: When making this salad, you can pretty much use any type of lettuce, but my daughter and I agree, we much prefer using romaine lettuce; picked fresh from ones garden, but you can use store bought lettuce, even the iceberg lettuce. Also, when adding the leaves to the bowl, I pretty much left the leaves whole, except for the leaves that were a bit too large, then I tore those in half.
