HEARTY VEGETARIAN LENTIL STEW
A hearty vegetarian lentil stew that's delicious, inexpensive, and goes a long way. Even if you're not a vegetarian, it makes a fulfilling, delicious meal. A nice crusty bread goes well on the side. Great to bring to work. This is a bulk recipe that keeps well refrigerated and reheats very nicely. Don't be afraid to scale down if need be.

Steps:
- Bring water and lentils to a boil in a large saucepan. Cover, reduce heat to low, and simmer until tender, 15 to 20 minutes. Increase heat to high, add wine, and let it sizzle and bubble for 1 minute. Reduce heat to medium-low, cover, and simmer for 3 minutes.
- Stir in carrots, celery, vegetable broth, diced tomatoes, onion, bell pepper, cabbage, tomato paste, brown sugar, curry powder, garlic, onion powder, salt, pepper, and cumin. Cook, stirring frequently, until flavors are well blended and vegetables are tender, 45 minutes to 1 hour.

LENTIL STEW GERMAN STYLE
Hardy and easy stew that will warm you on a cold winters day and fill your belly without emptying your wallet. My family in Germany uses smoked and salted pork belly but smoked bacon works very well, too.

Steps:
- Dice potatoes and carrots small.
- Ad lentils, potatoes and carrots and the bacon or pork belly slices in a large pot, season and boil with 2 cups of broth and 1 cup of water for approximately 1 hour. Ad the remaining 1 cup ounce by ounce if stew gets too thick over time.
- Stew is best re-heated the next day :D if you want it quicker just let stew cool down and re-heat. Stew should be very thick with little liquid.

Steps:
- In a large pot, cook all ingredients except for flour, vinegar and wine for about 45 minute in the water lentils were soaked inches.
- Add flour/water mix, vinegar, and wine.
- Cook for another 15-20 minute.
- Serve over noodles, spaetzle, rice, etc. Add more vinegar to taste.

LINSENEINTOPF - BERLIN-STYLE LENTIL STEW
This is modified from Kate Rodriguez's recipe on suite101. She says that "One of the most popular and enduring dishes in Germany is lentil stew (Linseneintopf), a tasty blend of lentils, vegetables and broth, adaptable to different tastes." I say: it's veggies and lentils! (Meat is only optional, and you'll find this dish quite satisfying without!)

Steps:
- Bring the lentils with 3 cups of water to a boil, reduce to a simmer, and cook for about 25 minutes while you prepare the other ingredients.
- In a soup pot over medium heat, saute the onion and spring onion in canola oil for about 5 minutes, until softened. Add the potatoes, carrots and celery and saute 3-4 minutes.
- Add 3 more cups of water and the stock cubes. Cover the pot, bring to a boil, then reduce heat and simmer on low for 20-25 minutes, till the lentils and vegetables are completely cooked. Add the final cup of water, if needed to reach desired consistency.
- If preparing the omnivorous version, drop in the sausages, and continue simmering for 5 minutes.
- Remove from heat and stir in nutmeg, to taste, along with the vinegar. Season with salt and pepper.
- Lentil stew is usually served with bread or rolls. White vinegar is also offered at the table for those who want a stronger sour flavor in their soup.

GERMAN LENTIL SOUP
This is a really good lentil soup recipe I created based on the favorite German Lentil Soup which has been served for years at Karl Ratzsch's in Milwaukee. Serves a small crowd, tastes great the next day, and freezes well. Garnish with croutons.

- Place lentils in a 5 to 6 quart slow cooker. Add chicken stock, bay leaf, carrots, celery, onion, and ham. Season with Worcestershire sauce, garlic powder, nutmeg, hot pepper sauce, caraway seed, celery salt, parsley, and pepper.
- Cover, and cook on Low for 8 to 10 hours. Remove bay leaf before serving.
