LENGUA DE GATO

Steps:
- Preheat oven to 350 F. Line 2 baking sheets with parchment paper and set aside.
- In the bowl of a stand mixer, combine butter and sugar. Use the paddle attachment to cream the mixture until light and fluffy. Scrape the sides of the bowl with a spatula as needed.
- While beating, add the egg whites gradually, mixing well after each addition.
- Beat in the vanilla extract.
- In a small bowl, combine flour and salt. Add to the butter mixture.
- While beating at low speed, gradually add the dry mixture to the butter mixture and beat until moistened. Increase the speed to medium-high and continue to beat until well-incorporated.
- Transfer the batter into a large pastry bag with a 1/4-inch round tip or Ziploc bag with the tip cut off.
- Pipe the batter into about 1/4-inch thick and 3 inch-long logs on the prepared baking sheets at about 2 inches apart.
- Bake in a preheated 350 F oven for about 14 to 17 minutes, or until the sides are starting to brown, but tops are still light in color.
- Remove from the oven, allow to slightly cool, and transfer to a cookie rack while still warm.
- Allow to cool completely. Cookies will crisp up as they cool.

- Add flour gradually and mix well.
- Using a cake decorating tube, form dough into oblong, tonguelike shapes.
- Bake in 375 degrees for 10 minutes or until golden brown.
- Remove and let cool.
- Store in airtight jars or store in freezer.

- Preheat oven to 425 F.Greas and flour several baking sheets.
- Cream together the butter and sugar thoroughly.
- Add the white of one egg,beat thoroughly.Repeat with the remaining egg whites.
- Add the vanilla and flour,mix well.
- Place the dough in a pasry bag fitted with a round tip.Pipe the dough onto the baking sheets in strips 2-3 inches wide,making sure to leave enough space in between the cookies for them to expand.
- Bake each batch for 6-8 minutes or until the edges are very lightly browned.
- Remove the cookies to a wire rack to cool.50-60.

Steps:
- Cream butter sugar.
- Add egg whites then whole eggs gradually, vanilla.
- Add combined dry ingr (flour, salt). Beat
- until smooth.
- Place mixture into a piping bag with plain tip. Pipe unto greased then floured baking sheet about 2" long. Leave around 1 1/2" spaces in between for they will flatten when baked.
- 325ºF 20-25min until edges are brown. Remove immediately from the baking sheet after baking (because they will stick real bad on the sheet if you left the cookies on the sheet to cool).
- Cool at room temp and store in airtight container.

- 1. Preheat oven to 350F.
- 2. Cream the butter until light colored and fluffy. Add the sugar, vanilla and zest. Continue beating for 1 minute.
- 3. Add the egg whites and beat until the mixture is very light in texture. Gradually add the flour and salt.
- 4. Scoop the dough into a pastry bag fitted with a 1/4 inch round tip (#11 or #12). Pipe dough onto a greased cookie sheet in 2 1/2 inch lengths. Leave space between cookies, as they will spread while baking.
- 5. Bake for 5 minutes, or until the cookies are very lightly browned on the edges. Watch carefully, as they burn easily. Remove them IMMEDIATELY from the pan and let cool on a rack.

- Lightly grease baking sheets.
- Cream butter and sugar together.
- Add egg whites, one at a time, mixing well after each.
- Add flour and then vanilla, mixing well.
- If dough seems to soft, add a bit more flour.
- Force through a pastry bag or cookie press fitted with a medium star tip onto baking sheets, making cookies about 3 inches long.
- Bake for 10 minutes or until lightly browned.
- Cool on wire racks completely.
- If desired, make sandwich cookies by spreading with jam or melted chocolate, or be truly decadent by making jam filled sandwich cookies and then dipping in chocolate!
