3 cups reduced-sodium chicken broth or vegetable broth
1-1/3 cups uncooked long grain rice
1 can (4 ounces) chopped green chilies, drained
3/4 teaspoon salt
1 tablespoon each minced fresh parsley, cilantro and chives
1/2 teaspoon grated lemon zest
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine the broth, rice, chilies and salt; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. Remove from the heat; let stand for 5 minutes. Fluff with a fork and stir in the remaining ingredients.

2 cups Long Grain White Rice
4 cups Chicken Broth (can substitute vegetable broth)
4 tablespoons Butter
2 tsp Garlic (minced)
1 tablespoon Parsley (chopped )
1 tsp Salt
2 tablespoons Lemon Juice

Steps:

  • In a medium saucepan over medium heat, add the uncooked rice, chicken broth, butter, minced garlic, parsley, and salt. Bring to a boil, then cover and reduce the heat to low.
  • Let simmer, without stirring or removing the lid, for about 18-20 minutes, or until the rice is tender and all water has absorbed. It is important to keep the lid on until you need to check to see if the rice is done.
  • Once the rice is tender and all of the liquid has absorbed, remove from the heat and let the rice sit, covered, for about 5 minutes. Add the lemon juice and fluff the rice using a fork, then serve immediately. Enjoy!

1 cup vegetarian chicken broth
3/4 teaspoon fresh lemon juice
1 tablespoon olive oil

  • Lower heat and simmer 30-40 minutes until all liquid is absorbed & rice is soft. (Note: Rice may take more or less time depending on temperature, so check periodically until done).
  • Remove from heat, stir in herbs & lemon zest. Add additional salt & pepper if desired.

1 medium carrot, shredded
1/4 cup vegetable oil
2 cups long-grain white rice
2 tablespoons rice wine vinegar

1 Kirby cucumber, seeded and diced
1/2 cup chopped salted roasted peanuts
1/2 cup fresh cilantro, roughly chopped

Steps:

  • Remove 2 wide strips zest from 1 lemon with a vegetable peeler. Combine 1 strip zest with the vegetable oil in a small saucepan over medium heat and cook until the edges of the zest turn slightly golden, about 5 minutes. Let the lemon oil cool.
  • Meanwhile, cook the rice as the label directs, adding the remaining strip lemon zest to the water. Transfer the rice to a large bowl, discarding the zest, and fluff with a fork. Let cool to room temperature.

a mugful of American long grain rice
250g pack chestnut mushrooms
2 tbsp olive oil
2 large garlic cloves , finely chopped
5 tbsp chopped parsley
3 tbsp snipped chives
finely grated zest 1 lemon

Steps:

  • Fill a roomy saucepan with water, bring to the boil and tip in a heaped teaspoon of salt - the water will bubble furiously. Pour in the rice, stir once and return to the boil, then turn the heat down a little so that the water is boiling steadily, but not vigorously.
  • Boil uncovered, without stirring (this makes for sticky rice) for 10 minutes. Lift some out with a slotted spoon and nibble a grain or two. If they're too crunchy, cook for another minute and taste again. They should be tender but with a little bite. Drain the rice into a large sieve and rinse by pouring over a kettle of very hot water.
  • Meanwhile, chop the chestnut mushrooms into smallish chunks and fry in olive oil in a large frying pan over a high heat for 4 minutes until golden. Stir in garlic and fry for 1 minute.
  • Drain and rinse the rice and toss it into the mushrooms with the parsley, chives and lemon zest. Try a little and add salt if necessary. The zingy, fresh flavours go really well with grilled fish.

Basmati Rice: 2 cups( cooked in 2 cups of water and leave it cool).
1 Big lemon: Squeeze the juice and keep it aside.
2 sprigs fresh curry leaves
1 tsp each of mustard seeds, black gram lentils, yellow split lentils.
1 tsp turmeric
2 green chillies
1 inch ginger cut into very small pieces
1/4th cup groundnuts and cashewnuts(optional)
1 tbsp of sunflower oil

Steps:

  • Now take a saucepan and add tbsp of sunflower oil.
  • Add groundnuts, cashewnuts, mustard seeds, black gram and yellow split lentils and saute for 2 minutes.
  • As soon as the mustard seeds start spluttering, add green chillies, ginger pieces, curry leaves and saute for 1 minute
  • Now add turmeric and salt. Take the freshly squeezed lemon and pour the juice on and put a lid on the saucepan.
  • Switch off and mix this with rice. Serve hot or cold with a pickle or on its own.

3/4 cup long-grain rice
1/4 cup chicken broth
2 garlic cloves, minced and mashed into a paste with 1/2 teaspoon salt
1 tablespoon minced peeled fresh gingerroot
1/4 cup finely chopped scallions
2 teaspoons fresh lemon juice
1 teaspoon soy sauce
1/2 teaspoon salt, or to taste
1/2 cup packed coriander sprigs, washed well, spun dry, and chopped fine

Steps:

  • To a kettle of boiling salted water add rice and return to a boil stirring. Boil rice 10 minutes. Drain rice in a large sieve and rinse. Set sieve over another kettle of boiling water (rice should not touch water) and steam rice, covered with a kitchen towel and lid, 20 minutes, or until tender (check water level in kettle occasionally, adding water if necessary).
  • In a large bowl stir together remaining ingredients except coriander and add rice. Toss mixture until combined well. Cool rice to room temperature and stir in coriander.
