LAZY LASAGNA
This Instant Pot Lazy Lasagna recipe comes together fast and easy with the Instant Pot pressure cooker, and your family will love it.

- Set Instant Pot to SAUTE. Add the olive oil and butter and allow it to sizzle. Add the onions and garlic cook for 2 minutes. Stir regularly.
- Add ground beef and cook until about 4 - 5 minutes, or until no longer pink. Drain grease and return to Instant Pot.
- Add pasta sauce, beef broth, wine, water and Italian seasonings. Mix well.
- Add pasta. Stir to make sure noodles are covered with the liquid.
- Set Instant Pot to MANUAL or PRESSURE COOK on HIGH PRESSURE for 20 minutes. Lock lid and make sure vent is closed. When coking time ends, release pressure and wait for steam to completely stop before opening lid.
- Stir in cheese, but reserve about 1/2 cup mozzarella cheese if you would like to sprinkle a bit on top of the lasagna when you serve it.

- Using the Sauté function on your instant pot, brown ground beef and onion. Drain excess grease, and scrape off any bits off the bottom of the pan to prevent a burn error.
- Return drained beef and onions to the instant pot insert. Stir in cream cheese and spaghetti sauce until creamy.
- Put the uncooked pasta on top of the sauce. Do not stir.
- Add just enough water to submerge the noodles, around 3 cups. Do not stir!
- Cover and seal the instant pot. Cook on high pressure for 4 minutes. Release pressure following Quick Pressure Release method.
- Stir to combine. Optional: add as much Grated Parmesan and/or Shredded Mozzarella cheeses. Stir and serve!
INSTANT POT LAZY LASAGNA

- Press the saute function and once the pot is hot, add the ground beef, salt, and pepper. When almost all of the pink is gone, add it the onions and garlic, and cook until the onions are translucent. Drain grease if there is any. Also scrape any bits off the bottom to prevent the burn signal.
- Press cancel. Add in the sauce. Mix to combine.
- Add the noodles on top of the meat and sauce mixture.
- Add the water on top of the noodles. Do NOT mix. Gently press down any noodles that are not submerged in the water.
- Place the lid on your pot. Secure and set to sealing. Set the time to 4 minutes (high pressure).
- When the pressure cycle is done, quick release the pressure (you don't want the noodles to over cook). If there is foam it is spurts out. Close the valve for 3 seconds, open for 3 and repeat until spurting stops.
- Stir in the cottage cheese.
- Add the mozzarella on top. Place the lid back on to trap the heat. Let sit until it is all melted and amazing.
- Serve immediately.

I know, not another lasagna recipe. This is a delicious change from the usual recipe. My husband loves it because of the cream cheese and pepperoni in it. I don't remember were I got it but, have had it for years. Hope you will try it.

- Cook beef and onion in heavy skillet, drain.
- Stir in tomato sauce and next 6 ingredients. Cook over low heat 10 minutes.
- Combine the cream cheese, cottage cheese, sour cream, and eggs; stir well. Spoon a small amount of meat sauce into a lightly greased baking dish.
- Layer with half each of lasagna noodles, cheese mixture, pepperoni, meat sauce, and cheese. Repeat layer with rest of ingredients. Sprinkle with parmesan cheese.
- Cover, bake for 30 minutes. Let stand 10 minute before serving.

- Heat oven to 350°F.
- Brown meat with onions in large skillet; drain. Stir in pasta sauce and water; set aside. Mix cream cheese spread and milk in medium bowl until blended. Add ricotta, 1 cup mozzarella and Italian seasoning; mix well.
- Spread 1/2 cup meat sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with layers of 6 noodle pieces, half the cream cheese mixture and 1 cup of the remaining meat sauce. Repeat layers. Top with remaining noodles and meat sauce; cover.
- Bake 45 min. or until heated through. Sprinkle with remaining mozzarella and Parmesan. Bake, uncovered, 5 min. or until mozzarella is melted. Let stand 10 min. before serving.
