LEMON VANILLA SUGAR COOKIES

- Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment paper.
- Combine the flour and salt in a medium bowl and whisk to combine. Put the butter, granulated sugar, confectioners' sugar and lemon zest in a large bowl. Beat with an electric hand mixer on medium speed until light and fluffy, about 3 minutes. Add the egg yolk and vanilla and beat until well combined. Add the flour mixture in 2 batches and mix until just combined.
- Scoop the dough with a 2-ounce cookie scoop, filling it fully with the dough. Then shape it into a straight-sided patty (like a hockey puck) that is 2 inches wide and 1/2 inch thick. Put the formed cookie on the prepared baking sheet. Repeat to make 7 to 8 more cookies and making sure there is at least 1 inch of space around each cookie on the baking sheet.
- Bake until the cookies have spread out and flattened by about half and the bottoms are lightly browned, 10 to 12 minutes, rotating the pan once halfway through the cooking time. Let cool 10 minutes on the baking sheet, then transfer to a wire cooling rack to cool completely.
- Flip your cookies upside down so the flattest side is up. Use the yellow icing to make a thin line around the edge of each cookie. Then make 2 loops around the interior of the yellow border with the white icing and use a toothpick to fill in any gaps between the two colors. Fill in the middle space with the yellow icing and then make a circle with the white directly in the center. Immediately use a scribe or toothpick to lightly drag from the edge of the cookie to the middle to create the segments of your lemon. Repeat with the remaining cookies.
- Let the icing dry and crust over or serve immediately.
MEYER LEMON CARDAMOM CRINKLE COOKIES

- Preheat the oven to 350 degrees F. Set out 2 sheet pans. Whisk to combine the flour, cardamom, baking powder, 1/2 teaspoon salt, and lemon zest in a large bowl and set aside.
- Sift the powdered sugar into another bowl to ensure there are no lumps and set aside.
- In an electric standing mixer fitted with the paddle attachment, spread the butter around the bowl by mixing on low for about 20 seconds. Bump the speed up to medium low, and slowly stream in the granulated sugar. Cream the butter and sugar on medium speed for about 2 minutes.
- (We are cutting little holes in the butter with the abrasive sugar, and those little holes will expand from the leavening properties of the baking powder during baking so we can get that soft cakey texture for the cookies.)
- Scrape down the bowl with a spatula, add the eggs one at a time, and mix on medium until incorporated. Add the vanilla and beat until blended.
- Turn off the mixer and add the flour mixture. Mix on low speed until the flour disappears.
- Use a number 40 (1 1/2 tablespoons) scoop to portion out your cookies, then roll the portioned dough into small balls. Roll the balls in the sifted powdered sugar, and place on the sheet pan at least 2-inches apart.
- Bake for 13 to14 minutes, until the surface of the cookies have cracked and puffed up. The cookies will not be browned. Cool the cookies on a wire rack and serve.
- Creaming the butter and sugar together is such an important step. This method ensures that the cakey tender texture characteristic of this cookie is achieved.
CARDAMOM COOKIES
Steps:
- Preheat oven to 350°F and line two large baking sheets with parchment paper.
- In a small bowl, combine the flour, cardamom, baking soda and salt.
- In a large bowl, combine softened butter, granulated sugar and brown sugar. Cream with electric beaters on medium-high until fluffy.
- Add egg, molasses, lemon juice and vanilla extract. Beat on high until creamy and light and just combined.
- On low speed, gradually add the flour mixture until just combined.
- Divide the dough into 1 1/2 tablespoon-sized balls using a spring-loaded scoop.
- Bake for 9-11 minutes or until cookies are firm and slightly darker at the edges.
- Cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.

CARDAMOM AND LEMON COOKIES
We discovered that cardamom is a really popular spice in Norway, used in many cake and biscuit recipes. Some say the spice was first brought back to the country hundreds of years ago by Vikings who worked as mercenaries in what was then Constantinople (now Istanbul). Whatever the truth, Norwegians are certainly keen on their cardamom. We made these cookies on a boat on the Geiranger Fjord - a stunning spot.

- Preheat the oven to 190C/375F/Gas 5. Line 2 large baking trays with baking parchment.
- Using an electric hand-whisk, beat the butter, sugar and lemon zest together in a large bowl until pale and fluffy.
- Beat in the flour, almonds and cardamom until the mixture is well combined and comes together to form a stiff dough.
- Roll the dough into 24 balls and place 12 on each baking tray - make sure you leave space between each one.
- Press each cookie with a cookie stamp or the bottom of a glass to flatten and leave decorative indentations in the dough.
- Bake a tray at a time for 12-14 minutes until the cookies are pale golden brown.
- Leave them to cool on the tray for a few minutes, then transfer to a wire rack. They will crisp up as they cool. Store the cookies in an airtight tin and eat within 7 days.
LEMON COOKIES
I made these lemon cookies for my Christmas cookie tray this year. They are a light a delicate cookie with a texture a bit like shortbread. I cut them into various shapes, including people and made them a bit like 'lemon bread men'. The recipe originally came from the UK TV cook Rachel Allen. I originally posted this trying to convert from grams to ounces and it was too confusing. So, I have put it back to grams :)

- Preheat the oven to 350 degrees.
- Put the flour and lemon zest into a mixing bowl and rub in the soft butter.
- Add the sugar and bring the whole mixture together to form a stiff dough. Don not add any water, however tempting.
- Roll out the dough to about 1/2 cm thickness and cut into shapes with a cookie cutter.
- Place carefully on a baking tray and cook in the oven for 6 to 10 minutes until they are a pale golden color.
- Remove from the oven and cool on a wire rack.

- Beat butter and sugar together by hand or in a mixer, until pale and fluffy. Blend in egg and vanilla extract. In a separate bowl, stir together flour, cardamom and salt. Stir into butter mixture until just combined. Gather dough together, shape into 2 discs, wrap and chill until firm, about 1 to 2 hours, or freeze until ready to use (then thaw overnight in fridge).
- Preheat oven to 325°F On a lightly floured work surface, roll out first disc of dough to just less than ¼-inch thick. Cut out desired shapes and lift with a spatula onto a parchment-lined baking sheet. Roll second disc, saving all scraps to re-roll for more cut-outs. If you choose, add sprinkles or other decorations onto cookies before baking. Bake for 12 to 15 minutes, until edges of cookies just begin to brown. Let cool before removing from tray.
- Cookies will keep in an airtight container for up to 2 weeks.

- For glaze, combine icing sugar and milk and whisk until smooth. Brush cookies with glaze and allow to dry on cooling rack for 1 hour.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
