LEMON DILL TUNA SALAD



Lemon Dill Tuna Salad image

Make a refreshing lemon dill tuna salad without mayo!

2 cans no salt added albacore tuna (5oz each)
3 stalks of celery
2 tbsp fresh dill
Zest from 1 lemon
3 tbsp lemon juice
3oz feta cheese (I prefer the block feta in brine)
1 tsp fresh cracked black pepper

Steps:

  • Open and drain tuna cans. Chop celery into small pieces. Add lemon juice, feta cheese, lemon zest and black pepper to a mixing bowl. Mix until they are evenly combined.
  • Add tuna, celery and fresh dill to the bowl. Toss to combine again. Serve with black pepper on lettuce, bread or with crackers or cucumbers.

1 cup quinoa
9 ounces tuna
2 raw garlic cloves
2 medium whole tomatoes, Red, Ripe
3/4 cup shredded carrot
2 medium spring onions or 2 medium scallions
2 teaspoons olive oil
2 tablespoons lemon juice
1/2 teaspoon sea salt

Steps:

  • Cook quinoa in water. Set aside.
  • Chop vegetables and add to cooked quinoa.
  • In a separate bowl, mix lemon juice, zest, garlic and olive oil. Toss with quinoa, vegetables and tuna.
  • Serve.

1 onion , sliced
350g pepper , sliced
1 tbsp olive oil
1 red chilli , finely chopped
225g pouch ready-to-eat quinoa
350g cherry tomato , halved
handful black olives , chopped
225g jar albacore tuna in olive oil, flaked

Steps:

  • Fry the onion and peppers in the oil until soft. Add the chilli and cool slightly.
  • Mix the quinoa, onion mixture, cherry tomatoes, olives and tuna together. Divide between 4 plates, pour over a little of the oil from the tuna jar, season and serve.

  • First cook the quinoa: Add 1 cup quinoa and 2 cups water to a medium pot and bring to a boil. Once water is boiling, reduce heat to low, cover and allow quinoa to cook for 15 minutes. After 15 minutes, fluff quinoa with a fork and transfer to a large bowl to allow to cool.
  • Next make the dressing by adding avocado, greek yogurt, lemon juice, garlic, basil, cilantro and salt and pepper to a blender or food processor and process until smooth and creamy. Set aside.
  • Add veggies to quinoa along with dressing, peas and flaked yellowfin tuna. Stir well, then taste and adjust seasonings as necessary, including adding more salt and pepper.
