This Lemon Herb Rice recipe is simple to prep, super refreshing and goes great with a variety of flavors. Using just a few basic ingredients, like fresh parsley, lemon juice and garlic, you can easily transform plain white rice into something fabulous!

2 cups Long Grain White Rice
4 cups Chicken Broth (can substitute vegetable broth)
4 tablespoons Butter
2 tsp Garlic (minced)
1 tablespoon Parsley (chopped )
1 tsp Salt
2 tablespoons Lemon Juice

Steps:

  • In a medium saucepan over medium heat, add the uncooked rice, chicken broth, butter, minced garlic, parsley, and salt. Bring to a boil, then cover and reduce the heat to low.
  • Let simmer, without stirring or removing the lid, for about 18-20 minutes, or until the rice is tender and all water has absorbed. It is important to keep the lid on until you need to check to see if the rice is done.
  • Once the rice is tender and all of the liquid has absorbed, remove from the heat and let the rice sit, covered, for about 5 minutes. Add the lemon juice and fluff the rice using a fork, then serve immediately. Enjoy!

Steps:

  • Bring chicken stock and lemon juice to simmer in saucepan.
  • In skillet add oil, heat, add garlic and cook until softened.
  • Add rice, stir.
  • Add stock, salt & pepper and bring to boil.
  • Lower and simmer 20-25 minutes.
  • Remove from heat, stir in herbs, lemon zest and additional salt & pepper.

1/2 medium red onion, thinly sliced
1 medium carrot, shredded
1/4 cup vegetable oil
2 cups long-grain white rice
2 tablespoons rice wine vinegar
2 teaspoons packed light brown sugar
1 Kirby cucumber, seeded and diced
1/2 cup chopped salted roasted peanuts
1/2 cup fresh cilantro, roughly chopped
1/2 cup fresh mint, roughly chopped
1/2 cup fresh basil, roughly chopped
1 bunch watercress, tough stems removed, leaves torn

Steps:

  • Remove 2 wide strips zest from 1 lemon with a vegetable peeler. Combine 1 strip zest with the vegetable oil in a small saucepan over medium heat and cook until the edges of the zest turn slightly golden, about 5 minutes. Let the lemon oil cool.
  • Meanwhile, cook the rice as the label directs, adding the remaining strip lemon zest to the water. Transfer the rice to a large bowl, discarding the zest, and fluff with a fork. Let cool to room temperature.
  • Meanwhile, make the dressing: Juice both lemons into a medium bowl. Add the vinegar, brown sugar, 1 1/4 teaspoons salt and 1/2 teaspoon pepper and whisk until the sugar dissolves. Discard the zest from the lemon oil, then whisk the oil into the dressing. Add the onion slices and let marinate 15 minutes.
  • Add the carrot, cucumber, peanuts, cilantro, mint, basil and watercress to the bowl with the rice. Add the dressing mixture and gently toss. 1 tablespoon plus 1/2 teaspoon

Steps:

  • Bring a large pot of water to a boil over high heat. Add the rice and 1 tablespoon of the salt and cook, stirring occasionally, until the rice is tender, 12 to 15 minutes. Drain through a fine-mesh sieve and rinse under cold water to stop the cooking. Shake the sieve to drain as much water as possible.
  • Melt the butter in a large nonstick skillet over medium heat. Add the rice and the remaining 1/2 teaspoon salt and stir with a heatproof rubber spatula to coat all the rice with the butter. Once the rice is warmed through, about 3 minutes, transfer the rice to a serving bowl and add the herbs plus additional salt, if needed. 1 small yellow onion, finely diced
2 cups long-grain white rice

  • Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, taking care not to let them color, 3 to 5 minutes. Add the rice and stir to coat with the oil. Add 3 cups water and 1 teaspoon salt and bring to a boil. Reduce the heat to low, then cover and cook until all of the liquid has been absorbed, about 20 minutes. 1 1/2 cups brown rice (long, medium or short)
1 small onion, finely chopped
1 tablespoon olive oil
1/2 teaspoon salt
2 1/2 cups low sodium chicken broth
1 ounce parmesan cheese, grated (about 1/2 cup)
1/4 cup fresh parsley, minced
1/8-1/4 cup fresh basil, minced (original is 1/4 cup)
1 lemon, juice and zest of (original is 1/2 tsp)
1/8-1/4 teaspoon ground black pepper

Steps:

  • Adjust an oven rack to the middle position.
  • Preheat oven to 375°F.
  • Spread rice in a 8x8 glass baking dish.
  • Combine the onion, oil, and salt in a medium saucepan. Cover and cook over medium-low heat, stirring occasionally, until the onion is softened, 8-10 minutes.
  • Stir in the broth and bring to a boil.
  • Once broth is boiling immediately pour it over the rice.
  • Cover the baking dish tightly with a double layer of foil.
  • Bake until rice is tender, about 1 hour 10 minutes.
  • Remove baking dish from oven, uncover, and fluff the rice with a fork.
  • Stir in the parmesan, parsley, basil, lemon juice, lemon zest and pepper.
  • Cover the dish with a clean kitchen towel and let stand for 5 minutes.

Basmati Rice: 2 cups( cooked in 2 cups of water and leave it cool).
1 Big lemon: Squeeze the juice and keep it aside.
2 sprigs fresh curry leaves
1 tsp each of mustard seeds, black gram lentils, yellow split lentils.
1 tsp turmeric
2 green chillies
1 inch ginger cut into very small pieces
1/4th cup groundnuts and cashewnuts(optional)
1 tbsp of sunflower oil

Steps:

  • Now take a saucepan and add tbsp of sunflower oil.
  • Add groundnuts, cashewnuts, mustard seeds, black gram and yellow split lentils and saute for 2 minutes.
  • As soon as the mustard seeds start spluttering, add green chillies, ginger pieces, curry leaves and saute for 1 minute
  • Now add turmeric and salt. Take the freshly squeezed lemon and pour the juice on and put a lid on the saucepan.
  • Switch off and mix this with rice. Serve hot or cold with a pickle or on its own.

a mugful of American long grain rice
250g pack chestnut mushrooms
2 tbsp olive oil
2 large garlic cloves , finely chopped
5 tbsp chopped parsley
3 tbsp snipped chives
finely grated zest 1 lemon

Steps:

  • Fill a roomy saucepan with water, bring to the boil and tip in a heaped teaspoon of salt - the water will bubble furiously. Pour in the rice, stir once and return to the boil, then turn the heat down a little so that the water is boiling steadily, but not vigorously.
  • Boil uncovered, without stirring (this makes for sticky rice) for 10 minutes. Lift some out with a slotted spoon and nibble a grain or two. If they're too crunchy, cook for another minute and taste again. They should be tender but with a little bite. Drain the rice into a large sieve and rinse by pouring over a kettle of very hot water.
  • Meanwhile, chop the chestnut mushrooms into smallish chunks and fry in olive oil in a large frying pan over a high heat for 4 minutes until golden. Stir in garlic and fry for 1 minute.
  • Drain and rinse the rice and toss it into the mushrooms with the parsley, chives and lemon zest. Try a little and add salt if necessary. The zingy, fresh flavours go really well with grilled fish.
