GRILLED LEMON-PEPPER PORK TENDERLOIN

Steps:
- Heat coals or gas grill for direct heat. In small bowl, mix all ingredients except pork and oil. Brush oil over all sides of pork. Rub lemon peel mixture over pork.
- Cover and grill pork over medium-low heat 15 to 20 minutes, turning occasionally, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.
- Remove pork from grill; cover with foil. Let stand 5 to 10 minutes before slicing.

LEMON PEPPER PORK LOIN
Delicious and refreshing marinade for a pork loin. The amount of marinade ingredients you use depends on how big your roast is. You could also do this marinade on thick cut medallions. Slice thin after cooked for delish appetizer sandwiches or on a salad. Left over meat make for great Cuban sandwiches.

- 1. Drizzle Olive Oil Over All Sides of The Roast. Either Zest a Lemon, chop finely and sprinkle over the top and black pepper (or you can use lemon pepper, probably a few tablespoons for a whole loin,) a Few Tablespoons of Chopped Parsley, a Few Cloves of Fresh Crushed Garlic & a Little Salt
- 2. Make sure all the ingredients get on all sides. Roll in saran wrap and let sit in the fridge a few hours or over night, unwrap, then bake at 350 until done, usually about 2 hours (depends on the size).

LEMON SALT MARINATED PORK TENDERLOIN

- Preheat oven to 425 degrees F.
- Finely zest the lemons.
- Using a mortar and pestle, work the salt and lemon zest together. Add a few turns of black pepper and 1 tablespoon of olive oil. Stir to blend. Rub the lemon salt mixture all over the pork.
- In a large saute pan heat the remaining 1 tablespoon of olive oil until hot but not smoking, add tenderloins to pan and sear on all sides, about 5 minutes total. (If you have a small pan, sear 1 tenderloin at a time.) Move pan with pork to the oven and cook until a meat thermometer reads 155 degrees F, about 6 to 8 minutes.
- Remove pork from the pan and let rest on a cutting board for about 5 minutes. Slice the tenderloins against the grain on a diagonal bias, fan out on a plate, and serve with Honey Roasted Applesauce.
- Preheat oven to 425 degrees F.
- Peel the apples with a vegetable peeler, remove the core and cut into 1-inch chunks.
- Heat a medium saute pan on medium-high heat with the butter in it. When the butter begins to brown add the lemon juice and cook for 30 seconds. Stir in the apples and salt. Saute for 3 to 4 minutes until the edges just begin to color. Add the honey and put in oven for about 15 to 20 minutes until the apples are soft and lightly caramelized.
- Mash with a fork for a chunky version, or put in food processor for a smoother sauce. Serve warm, room temperature or cold.
- Yield: 4 to 6 servings
- Cook's Notes: Most applesauce recipes call for cooking the apples on the stovetop from start to finish. I prefer to start them on the stovetop and then finish them in a hot oven. The oven heat concentrates their flavors by drying and caramelizing them slightly. Although I have suggested a couple of apple varieties, you can use what good cooking apples are available in your area.
PORK TENDERLOIN WITH LEMON AND FENNEL

- Combine 1 tablespoon of the lemon oil, garlic paste, zest, fennel seeds, and pepper in a small bowl. Rub the mixture over the pork tenderloins and let stand at room temperature, covered, for 30 minutes. Meanwhile, preheat the oven to 425 degrees F.
- Heat the remaining 2 tablespoons lemon oil in a large skillet over medium heat. Brown the pork tenderloins, about 5 minutes total. Transfer to a baking pan and roast the pork for about 15 to 20 minutes, or until an inserted instant read thermometer reads 150 degrees F, about 15 to 20 minutes, for medium, or to desired doneness. Remove the pork to a platter and let sit for 10 minutes before cutting into thin slices.
- Variation: If you'd like to serve fresh fennel alongside the pork, after browning the pork, add the fennel to the same skillet. Cook the fennel, stirring frequently, over medium heat until it begins to brown, about 10 minutes. Add a minced garlic clove, a teaspoon of sugar and cook, stirring, for 1 minute. Add 3/4 cup cool water, bring to a boil and simmer until the liquid is all evaporated and the fennel is fork-tender, about 5 minutes. Stir in 1 tablespoon of fresh lemon juice and season with salt and pepper.
- Place the oil and the zest in a glass jar. Let stand at room temperature for at least 2 weeks, shaking occasionally.
- Pour the oil through a strainer and discard the zest. Transfer to a jar and store, tightly covered, at in refrigerator.
LEMON-GARLIC PORK TENDERLOIN

- You can season the meat as liberally as you would like.

- Preheat oven to 400 degrees F (200 degrees C).
- Tear off a generous square of tin foil for each chop, enough to wrap and seal completely. Coat both sides of each chop with lemon pepper.
- Put 1 tablespoon butter and 1 tablespoon olive oil in the middle of each square of tin foil. Put the peppered chops on top of the butter and oil. Put 1 tablespoon of butter and 1 tablespoon olive oil on top of each chop. Add 1 teaspoon Worcestershire sauce over the top of each chop. Wrap each chop tightly and place on middle rack of oven. Bake for 35 minutes.

- Place flour in a shallow dish and stir in 1 teaspoon lemon zest. Season pork with salt and pepper, then coat with flour, shaking off excess.
