Steps:

  • Melt butter in a small skillet. Pepper the skillet with 1/2 tablespoon of the pepper, then lay the chicken breast onto the pepper. Squeeze fresh lemon juice onto the chicken, then season with the remaining pepper.
  • Saute chicken breast for about 5 to 7 minutes, then turn to the other side, squeeze lemon juice onto the other side and saute for another 5 to 7 minutes (or until chicken is cooked through and juices run clear).

Moist and tasty, these chicken breasts are a staple at our house. Four 7-ounce breasts will yield 6 servings that are a smidgen over 4 1/2 ounces. For best results, try to use chicken breasts that are roughly the same size. Check the internal temperature at 10 minutes if sizes are irregular or if they are thicker than normal.

2 teaspoons lemon-pepper seasoning
½ teaspoon dried oregano
¼ teaspoon freshly ground black pepper
2 tablespoons avocado oil, or as needed
4 (7 ounce) boneless, skinless chicken breasts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Combine lemon-pepper, oregano, and pepper in a small bowl; pour onto a plate.
  • Pour 1 to 2 tablespoons avocado oil into the bottom of a skillet, just enough to cover the bottom, and heat over medium-high heat until it shimmers.
  • Dredge both sides of the chicken in the seasoning and place into the shimmering oil. Sear until golden, about 3 minutes on each side. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 12 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I came up with this recipe because I love chicken but there are only so many ways to try to fix it before you get tired of it, or have fixed it over and over again! So I came up with this recipe and really like it!

4 chicken breasts
1 cup hot sauce (not Tabasco, I prefer Frank's hot sauce)
1 cup lemon pepper marinade (McCormick's)
1 yellow pepper
1 green pepper
1 red pepper

Steps:

  • When the chicken breasts are thawed, mix the Frank's hot sauce and lemon pepper marinade together.
  • Marinate chicken breasts for about an hour in the refrigerator.
  • While marinating, slice the yellow, green and red peppers into thin slivers and set to the side in the skillet.
  • Place the chicken breasts on the grill on the top rack; grill slowly so chicken breasts stay nice and juicy.
  • When chicken is almost completely cooked, remove from grill and place in the skillet on top of the peppers.
  • Baste the chicken with the remaining sauce mixture that was not used and cook until chicken is completely cooked and peppers and tender!

3 boneless skinless chicken breasts (or as many as you want)
lemon pepper seasoning
vegetable oil

Steps:

  • Put your chicken breasts in a pan and liberally coat with lemon pepper seasoning and put in the refrigerator overnight, or 5-8 hours prior to cooking, depending on how strong you want the flavor to be.
  • Remove from refrigerator and coat the chicken in flour.
  • Fill large frying pan with enough vegetable oil so that it covers the chicken breasts halfway. Put it on Medium-High heat.
  • Place chicken breasts in the oil and let it fry, uncovered, for 20 minutes.
  • After 20 minutes, flip the chicken breasts and let sit for another 20 minutes, or until fully fried.
  • Enjoy!

2 tablespoons thinly sliced green onion
4-1/2 teaspoons lemon juice

1/8 teaspoon ground mustard
1/8 teaspoon lemon-pepper seasoning

  • Flatten chicken to 1/2-in. thickness. In a large skillet, cook chicken in 1 tablespoon butter over medium heat for 5-7 minutes on each side or until juices run clear. 2 skinless, boneless chicken breast halves

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Grease a broiler pan with 1/2 tablespoon olive oil.

4 boneless skinless chicken breasts (6-8 oz each)
lemon pepper seasoning
8 slices pepper bacon
4 slices cheddar cheese (or your favorite cheese)
4 sandwich buns
mayonnaise (or dressing of your choice)
tomatoes, slices (optional)
4 lettuce leaves (optional)
sliced onion (optional)

Steps:

  • On a cutting board, pound the chicken breasts briefly with a mallet to flatten the thick parts so they'll cook more evenly.
  • Cut each strip of bacon in half. Arrange strips in a large (12") skillet and cook over medium heat until it reaches your desired crispness. Remove cooked bacon from skillet and put on paper towels to absorb excess grease.
  • Pour off all but approximately 1 tablespoon of the bacon grease. (you can pour it all off and then add back 1 TB - you decide!).
  • Heat skillet again, over medium-low to medium heat.
  • Liberally sprinkle both sides of the chicken breasts with lemon pepper. When the skillet is hot, place all 4 chicken breasts in it. Cook approximately 4 minutes on one side.
  • Flip the chicken breasts over. Arrange the bacon slices on top. Then place sliced cheese on top of the bacon.
  • Cover the skillet and cook for about another 4 minutes. The cheese should be well-melted. To test doneness, poke the fattest part of a breast with a sharp knife - you shouldn't see any pink meat left in the middle.
  • Dress your bun with mayonnaise, a dijon/mayonnaise combo, or ranch dressing.
  • Put chicken on bun. It tastes great without veggies, but you can also add leafy lettuce, sliced tomato, and sliced onion.

1 cup long grain white rice
14 ounces chicken broth
5 tablespoons mccormick california style lemon pepper
1/2 cup of melted margarine
4 boneless skinless chicken breasts, thin sliced or tenderloins only

Steps:

  • Preheat oven to 350.
  • Sprinkle lemon pepper on both sides of breasts. Sprinkle the lemon pepper to your own taste.
  • Using a non-greased 9"x13" glass baking dish place the chicken, and melted margarine (or butter) inside. Cover.
  • Bake for 30 Minutes.
  • Remove from oven. Remove chicken and set aside. Add one cup of long grain white rice, one can of chicken broth (or equal amount of bouillion). Stir together and cover tightly with foil.
  • Put pan back in the oven.
  • Bake 30 Minutes.
  • Remove from oven, and place chicken back inside.
  • Cook for another 15 minutes.
  • This update to the recipe (11/19/13) brings it back to its roots and eliminates the problems people were having with under cooked rice/overcooked chicken.
