4 5 ounces each boneless pork chops
4 garlic cloves (minced)
3/4 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon crushed dried rosemary
juice of 1/2 lemon
2 tablespoons minced flat-leaf parsley

Steps:

  • Trim any fat from the pork chops. Place the pork chops and garlic in a large bowl. In a small bowl, stir together the salt, pepper, paprika, oregano, thyme and parsley. Sprinkle the salt mixture over the pork chops and garlic, and turn to coat.
  • Squeeze the lemon juice over the pork chops. Let rest for 15 minutes.
  • Preheat the broiler. Line a baking sheet with foil. Lightly coat with cooking spray. Place the pork chops on the baking sheet.
  • Broil the pork chops until just cooked through, about 4 to 5 minutes per side.
  • Sprinkle the pork chops with parsley. Serve.

4 cloves garlic, chopped
1 lemon, zested and juiced
2 tablespoons chopped oregano leaves, plus more for garnish
1/2 cup canola oil
1 1/2 pounds pork tenderloin
Salt and freshly ground black pepper
1 head radicchio, cut into quarters
2 beefsteak tomatoes, cut into wedges
1/4 cup red wine vinegar
1 heaping tablespoon Dijon mustard
1 tablespoon anchovy paste
Honey
1/2 cup extra-virgin olive oil
2 cups baby arugula
1 English cucumber, cut into big hunks
1 cup pitted kalamata olives
1 tablespoon capers
1/4 pound Greek feta, crumbled

Steps:

  • Combine the garlic, zest, juice, oregano and oil in blender and blend until smooth. Put the pork in a baking dish, add the marinade and turn to coat. Cover and refrigerate for at least 1 hour and up to 4 hours.
  • Heat a grill to high. Remove the pork from marinade and season with salt and pepper, to taste. Grill until golden brown on all sides and cooked to medium doneness. Brush the radicchio and tomatoes with oil and grill until lightly charred. Remove the pork from the grill to a cutting board and loosely tent with foil. Let rest 10 minutes before slicing. Remove the radicchio and tomatoes from grill and set aside to cool slightly.
  • Whisk together vinegar, mustard, anchovy paste and a touch of honey in a medium bowl. Slowly whisk in the olive oil until emulsified. Add the radicchio, tomatoes, arugula, cucumber, olives, and capers and toss to combine. Transfer to a platter and top with feta and pork slices. Garnish with fresh oregano and serve.

4 teaspoons lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons dried oregano

4 boneless pork loin chops (3/4 inch thick and 4 ounces each)

Steps:

  • In a large bowl, mix first 9 ingredients. Add pork chops and turn to coat. Cover; refrigerate 8 hours or overnight., Drain pork, discarding marinade. I found this in Cuisine Tonight and it looked and sounded quick, easy and delicious. I haven't tried it yet but when I do I think I will use a few panko crumbs with the breadcrumbs to get them a little crunchier.

1 1/2 cups fresh breadcrumbs
2 tablespoons chopped fresh oregano or 2 teaspoons dried oregano
1 teaspoon kosher salt
1/2 teaspoon lemon-pepper seasoning
1 large lemon, juice and zest of
4 boneless pork loin chops (5-6 oz. each)
2 tablespoons olive oil
1/3 cup mayonnaise
1/3 teaspoon minced garlic
1/4 teaspoon paprika

Steps:

  • Preheat oven to 400 degrees.
  • Combine bread crumbs, oregano, salt, pepper and zest in a shallow dish. Set aside 1 tablespoon lemon juice for the aioli. Place remaining lemon juice in another shallow dish. Dip pork chops into lemon juice, then into bread crumb mixture, pressing breading into both sides of pork.
  • Heat oil in an oenproof saute pan over medium heat until oil begins to sizzle. Saute pork chops on one side until brown and crispy about 5 minutes. Flip pork chops.
  • Transfer saute pan to the oven and roast chops until pork reaches an internal tmeperature of 150 degrees on an instant-read thermometer, about 10minutes. Carefully remove saute pan from oven. Tent pork loosely with foil; let meat rest 5 minutes.
  • Stir together mayonnaise, garlic, paprika and the reserved 1 tablespoon lemon juice for the aioli in a small bowl. Serve pork chops with aioli.

This recipe comes from New Zealand celebrity chef Mike King courtesy of the NZ Pork Industry Board. The marinade is simple to prepare and imparts a wonderful smell and aroma to the pork. As written, this recipe includes my favorite vegetables for kebabs but you should feel free to use your own. Cooking time includes marinading the pork.

1 lb lean pork loin, cut into 1 inch cubes
1/2 cup lemon juice
1 tablespoon oil
2 teaspoons dried oregano
1 teaspoon rosemary sprig
1 garlic clove, crushed
1/4-1/2 teaspoon fresh ground black pepper
1 medium red pepper, cut into large chunks
1 medium zucchini, cut into 3/8 inch thick slices
8 grape tomatoes
1 medium onion, cut into large chunks
8 medium white mushrooms

Steps:

  • For the marinade combine all ingredients in a resealable plastic bag or non-reactive bowl.
  • Trim the pork of all visible fat and cut into 1 inch cubes. Place cubes in bag and marinate in the fridge for 30 minutes. (You can also toss the vegetables in if you like. Mushrooms and zucchini are especially good in absorbing the flavor.).
  • In the meantime soak wooden skewers in water.
  • Wash and cut vegetables for kebabs.
  • Thread kebabs alternating between the pork cubes and vegetables. Depending on the size of your pork cubes and the length of the skewers, you will have 1 large or 2 small skewers per person.
  • Place on indoor or outdoor grill and cook for 8 to 10 minutes.

Steps:

  • Place lemon juice, olive oil, garlic, black pepper and oregano in a plastic food storage bag and mix well.
  • Use a sharp knife and make several small slits into the pork chops before adding them to the marinade mixture.

small handful flat-leaf parsley , chopped
½ tsp fennel seeds , roughly chopped
zest and juice 1 lemon , plus 1 lemon, quartered

  • Sit the chops in a dish. Mix together the garlic, parsley, fennel seeds, lemon zest and juice, oil and bay, then rub all over the chops. Leave the chops to marinate for at least an hour, or up to a day.
