1/4 tsp baking powder
1 Large Egg
3 Tbsp granulated sugar
2 Tbsp vegetable oil
1 tsp grated lemon zest
2 tsp lemon juise
1 Tbsp Icing Sugar

Steps:

  • Spray a 16 oz mug with non-stick cooking spray.
  • In a small bowl, combine dry ingredients until well mixed. Using a fork, beat in egg, oil, lemon zest and lemon juice until well blended.
  • Pour into mug and microwave on High for 90 seconds.
  • Cool in mug and eat directly out of mug or remove carefully to a plate.

Steps:

  • Combine flour, baking powder, baking soda, and salt in a small bowl. Whisk together milk, brown sugar, olive oil, egg, lemon juice, and lemon zest in a separate bowl. Add milk mixture to flour mixture and stir until batter is well combined, leaving a few lumps.
  • Grease a large microwave-safe mug with butter. Pour batter into the mug. Microwave for 3 minutes. Remove and leave to set for 5 minutes.

1 tablespoon butter, melted
2 tablespoons sugar
3 tablespoons milk
2 tablespoons + ½ teaspoon fresh squeezed lemon juice, divided
¼ cup flour
½ teaspoon baking soda
⅛ teaspoon salt
2 teaspoons lemon zest
2 tablespoons confectioners sugar

Steps:

  • Combine melted butter and sugar in a coffee mug. Stir to combine.
  • Add the milk and 2 tablespoons of lemon juice to the mug ingredients, and stir.
  • Add the flour, baking soda, and salt to the wet ingredients, and stir until incorporated. Stir in the lemon zest.
  • Place the mug into the microwave and heat for 75 seconds, until set and no longer wet in the middle. Check the cake at 60 seconds as microwave cooking times vary.
  • Prepare the glaze by whisking together the confectioners sugar and remaining ½ teaspoon of lemon juice. Adjust sugar and lemon juice as needed to reach desired consistency. Drizzle the glaze on top of the mug cake.
  • Serve the cake in the mug or turn out onto a plate.
