LEMON MINT COOLER

Chava Karlovich of Monroe, Connecticut shares this fizzy warm-weather beverage that blends sherbet and ginger ale with tangy ice cubes made with lemon juice and chopped mint. It's sure to hit the spot when served with a meal or as an afternoon refresher.

Time 15m

Yield about 5 cups.

Number Of Ingredients 6

2-1/4 cups water
1/2 cup coarsely chopped fresh mint
1/2 cup lemon juice
2 medium lemons, sliced
1/2 cup lemon sherbet, softened
1 liter ginger ale, chilled

Steps:

  • For mint ice cubes, combine the water, mint and lemon juice; pour into 2 ice cube trays. Freeze until set. In a pitcher, combine the lemons and sherbet; slowly stir in ginger ale. Add the mint ice cubes.

This is a summer delight! I found this several years ago in a magazine. It's addictive, and it's a breeze to mix up. Go ahead! Pour yourself a glass of summer!

Number Of Ingredients 6

1 1/2 cups granulated sugar
1/3 cup fresh lemon juice
2 cups milk (I used 1%)
1 tablespoon lemon extract
1/2 teaspoon grated lemon, rind of
2 liters carbonated lemon-lime beverage, well-chilled (7-up)

Steps:

  • Beat sugar and lemon juice on high speed for 3 minutes or until sugar is partially dissolved.
  • Gradually add milk, beating constantly on high.
  • Stir in lemon extract and lemon peel.
  • Transfer this lemon/sugar mixture to serving pitcher.
  • Refrigerate until ready to serve.
  • Just before serving, gently stir in soda.
  • Best served over ice.
  • This could possibly be made with Splenda, and also might be tasty with orange juice/extract instead of lemon.

Number Of Ingredients 7

1 can (12 ounces) frozen limeade concentrate, thawed
2/3 cup thawed lemonade concentrate
1 teaspoon orange extract
1-1/2 cups water
6 cups chilled diet lemon-lime soda
1 medium lemon, sliced
1 medium lime, sliced

Steps:

  • In a large container, combine the limeade and lemonade concentrates and orange extract. Stir in water. , Just before serving, stir in lemon-lime soda. Serve over ice. Garnish with lemon and lime slices.

  • Start by finely chopping the mint leaves and cucumber. Doing this will allow the juices and flavor to extract into the water better.
  • Next fill a pitcher with water and add the mint leaves and cucumber to it. You want to allow these to sit in the water for at least 15 minutes to infuse. I personally like to let mine infuse overnight.
  • Take a slotted spoon and remove the cucumbers and mint leaves from the water. It’s even easier if you have a special pitcher with a built in infuser.
