These Grilled Lemon Chicken Kabobs are a fun addition to your barbecue dinner. They're delicious and so easy to make! Chicken is marinated in sour lemon and savory herbs, then skewered and grilled to perfection.

4 boneless skinless chicken breasts
1/2 cup lemon juice (about 2 lemons)
2 tablespoons olive oil
2 teaspoons lemon pepper
1 teaspoon dried basil
1 teaspoon dried oregano
¼ teaspoon salt

Steps:

  • Cut chicken breasts into small, bite sized pieces, about 1 1/2 inches. Place chicken breast pieces in a gallon-size resealable plastic bag. Pour in lemon juice, olive oil, lemon pepper, basil, oregano, and salt. Shake it a bit so all the chicken tenders get covered.
  • Let marinate in the fridge for 30 to 60 minutes.
  • Thread your chicken pieces onto skewers, metal or wooden. If using wooden, be sure to soak them in water during the marinating time so they don't burn on the grill.
  • Preheat an outdoor grill to high heat.
  • Grill your chicken on a well oiled grate, about ten minutes, until the chicken is cooked to an internal temperature of 165 degrees F, flipping every few minutes so that all sides receive grill marks. Serve immediately.

1/2 cup (120 ml) Garlic-Infused Oil,
1/4 cup (60 ml) lemon juice
1 tablespoon Dijon mustard
1/2 cup (16 g) finely chopped fresh flat leaf parsley
1/4 cup (8 g) finely chopped mixed fresh herbs, (such as basil, oregano, rosemary, tarragon and thyme)
1/4 cup (16 g) finely chopped scallions, (green parts only)
Kosher salt
Freshly ground black pepper
1 1/2 pound (680 g) skinless, boneless chicken breast, (cut into large bite sized cubes)
12 cherry tomatoes
1 green bell pepper, (cored, cut into large bite sized pieces)
1 red bell pepper, (cored, cut into large bite sized pieces)
2 medium zucchini, (ends trimmed, cut crosswise into 1-inch (2.5 cm) discs)
Red onion, (not for the FODMAPers! Please read headnote and instructions below, cut into large bite-sized pieces)
Vegetable oil

Steps:

  • Whisk the oil, lemon juice and mustard together in a large bowl until combined. Whisk in parsley, herbs and scallions, then taste and season well with salt and pepper. Set aside.
  • Add the vegetables - except NOT the onion - and chicken to the bowl as you prep them and toss well to coat. Cover bowl with plastic wrap and refrigerate for at least an hour or up to overnight. Bring to room temperature before cooking.
  • Thread the vegetables and chicken as shown in the images onto skewers. We like using metal skewers, but you could use sturdy, thick bamboo skewers as well. Create a skewer or two with the addition of the red onion for those who are NOT following the low FODMAP diet.
  • Prepare a medium hot grill, propane or hardwood charcoal, or preheat a grill pan indoors. Brush (your clean) grates with a little vegetable oil.
  • Grill for about 6 to 8 minutes total, turning a few times. Get some nice char marks on there! Remove to platter your kebobs are ready to serve after a 5-minute rest. We enjoy these kebobs at room temperature, as well.

This is a great marinade for kabobs, do not marinade the chicken for more than 5 hours or the lemon juice will start to *cook* the chicken. This recipe may be doubled to 10-12 breasts but prepare two separate marinades in two separate bowls, do not combine the doubled marinade into one bowl. Feel free to thread on you favorite veggies such as mushrooms, cherry tomatoes or whatever you desire! If you prefer a sweeter glaze then increase the honey by a couple tablespoons.

1 cup vegetable oil
1/2 cup low sodium soy sauce
1/3 cup honey (can use more) or 1/3 cup light corn syrup (can use more)
1/4 cup lemon juice
3 large garlic cloves (sliced into thirds, or use 1/2 teaspoon garlic powder or to taste)
1/2 teaspoon black pepper
1 pinch cayenne pepper (optional) or 1 pinch cayenne pepper, to taste (optional)
6 large boneless skinless chicken breasts (cut into 1-inch cubes)

Steps:

  • In a bowl mix together the oil with soy sauce, honey, lemon juice, garlic slices, black pepper and cayenne.
  • Place the chicken cubes in the bowl and toss to coat with the marinade.
  • Cover and chill for 4 hours.
  • Remove the chicken from the marinade.
  • Pour marinade into a saucepan then remove the garlic slices and discard; boil for 10 minutes over medium-low heat (start timing the 10 minutes after boiling starts).
  • Thread the chicken onto wooden skewers that have been soaked in cold water for 30 minutes.
  • Place the skewers on a grill and cook for 18-20 minutes or until the chicken is cooked through, basting with cooked marinade during the last 10-12 minutes of cooking.
  • Delicious!

1/3 cup olive oil
1 tablespoon grated lemon rind
1/4 cup lemon juice

Steps:

  • Cut chicken into 1 1/2 inch cubes, or 1/2 inches by 1 inch strips (as long as the chicken breast allows). Combine all marinade ingredients, whisk together well. Add chicken, stir to coat, refrigerate, 1-4 hours, I often like to put it in the 'fridge overnight. ( I put into all ziploc bag) Thread chicken onto soaked wooden ( or metal) skewers. Grill over medium heat, turn for even cooking.

Steps:

  • Whisk together all the marinade ingredients in a small bowl. Arrange the vegetables in a shallow dish or plastic container, pour the marinade over them, cover, and refrigerate for 2 hours.
  • Prepare a grill. Grill the vegetables 6 inches from the heat source until they are tender, brushing them with the leftover marinade as they cook. Cooking times will vary according to the vegetable.

Juice and zest of 4 lemons, plus 2 whole lemons
5 sprigs fresh rosemary, finely chopped
5 sprigs fresh sage, finely chopped
3 cloves garlic, smashed and finely chopped
1/2 teaspoon crushed red pepper
Extra-virgin olive oil
8 chicken thighs, trimmed of excess fat
Kosher salt

Steps:

  • In a small bowl combine the lemon juice and zest, chopped herbs, garlic, crushed red pepper, and 1/2 cup of olive oil. Whisk to combine.
  • Place the chicken thighs in a wide flat dish so they are in a single layer. Add the herb mixture. Massage the thighs to coat with the herb mixture. Cover and refrigerate overnight. Note: If doing a quick marinade, leave the chicken out of the fridge for up to 1 hour.
  • Preheat grill. Brush and oil the grill to clean.
  • Remove the chicken from the marinade and brush off any excess herbs and oil. Season the chicken generously with salt and drizzle with a little bit of fresh olive oil.
  • Cut the 2 whole lemons in half and cut the tips off the ends; this will allow the lemons to stand up without rolling around. Place the chicken, skin side down, on the preheated grill. Place the lemons, flesh side down, on the preheated grill. Grill the chicken for 3 to 4 minutes and then rotate the chicken 90 degrees to create the lovely crosshatch pattern. Grill the chicken for another 3 to 4 minutes. Turn the chicken over and grill for another 4 to 5 minutes. Check for doneness (the chicken should be well cooked). Check the lemon halves to see if they are beautifully caramelized. Turn over to grill on the bottom for 2 to 3 minutes.
  • Serve the chicken with grilled lemon.

Don't be worried when you see the light corn syrup in the ingredients, it comes together great! It's a great change. You can even skip the vegetables and just skewer the chicken. Enjoy!

½ cup soy sauce
½ cup light corn syrup
¼ cup lemon juice
2 tablespoons sesame seeds
½ teaspoon garlic powder

1 (8 ounce) package fresh chopped mushrooms
2 onions, quartered
1 green bell pepper, cut into large chunks

Steps:
