EASY CHEESY SPINACH
Steps:
- Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
- BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

- Heat oven to 375ºF.
- Pound chicken to 1/4-inch-thickness on work surface; turn smooth sides down. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
- Whisk egg in shallow dish until blended. Combine cracker crumbs and remaining Parmesan in separate shallow dish. Spray 13x9-inch baking dish with cooking spray. - Mix first 4 ingredients and egg yolk until blended.
- Unroll crescent dough, then separate into 8 triangles. Cut each triangle diagonally in half. Spoon 1 Tbsp. spinach mixture onto center of each triangle. - 1. Heat oven to 400^. Beat the egg and water in a small bowl with a fork. Stir the cheeses,onion and garlic powder, in a medium bowl.
- 2. Sprinkle the flour on the work surface. Unfold the pastry sheet. Brush with the egg wash. Top with the cheese mixture and very dry spinach. Starting at short side., roll up like a jelly roll. Cut into 20 --1/2-inch slices. Place cut side down onto 2 baking sheets. Brush the slices with the egg mixture.
- 3. Bake 15 minutes or until golden brown. Remove and let cool on wire racks for 10 minutes.
- 4. For Pesto Swirls: Omit all ingredients except the flour and the puff pastry. Unfold the pastry sheet as directed above. Spread 1/2 of an 8 oz. pkg. cream cheese, softened, on the pastry sheet to within 1/2 inch of the edge. Top with 3 Tablespoons pesto sauce and sprinkle with 1/4 cup finely chopped walnuts. Brush the edge of the pastry sheet with water. Roll up and proceed as above.
- 5. For Ham & Broccoli Swirls: Omit the spinach, cheeses, onion and garlic powder. Unfold the pastry and brush with the egg mixture as above. Spread 1/2 of and 8-oz. container whipped cream cheese with chives on the sheet. Top with 1 cup thawed, and well drained chopped broccoli and 1 cup finely chopped cooked ham. Proceed as above.
- 6. For a flavor twist: Try a different cheese. Any shredded cheese will work in this recipe.
CHICKEN PARMESAN BUNDLES
Juicy chicken stuffed with a cream cheese and spinach filling and topped with marinara.

- Preheat oven to 375 degrees F.
- In a mixing bowl. Combine softened cream cheese, drained spinach, 1 cup Mozzarella, and Parmesan cheese.
- Season with salt and pepper, to taste.
- Cut each chicken breast in half to make them around 1/4-inch thick.
- Place a few tablespoons of spinach mixture on the widest end of each chicken breast.
- Roll up and secure closed with toothpicks; set aside.
- In a small mixing bowl, whisk eggs; set aside.
- Crush Ritz crackers in a small resealable bag, pour into a small mixing bowl and set aside.
- Dip each chicken bundle in egg until coated, then roll in cracker crumbs and place seam side down in a
- 9 x 13 inch baking dish sprayed with nonstick cooking spray.
- Bake for 30 minutes.
- Remove from oven, carefully remove all toothpicks, and spoon 2 tablespoons of marinara on top of each chicken bundle and top with a sprinkle of the remaining mozzarella cheese.

- Preheat oven to 400 degrees.
- Mix spreadable cheese, spinach and pepper in a small bowl.
- Roll out one sheet of pastry dough onto a floured surface, rolling into a 12 inch square.
- Cut pastry into 16 (3 inch) squares.
- Place about 1 teaspoons of cheese mixture in the center of each square.
- Brush edges each square with water.
- Bring edges together up over filling and twist tightly to seal.
- Fan out corners of pastry for a nice look.
- Place bundles about 2 inches apart on a baking sheet.
- Bake approximately 13 minutes or until golden brown.

- 2. Combine cheese, spinach, pepper, shrimp in small bowl, mix well.
- 3. Roll out one sheet of thawed puff pastry on floured surface into 12" square. Cut square into sixteen 3-inch squares.
- 4. Place about 1 tsp cheese-shrimp mix in center of each square.
