- Cut the lemon in half. Squeeze the juice from one half and slice the rest. Divide the lemon juice and slices between 2 mugs, along with the sliced ginger.
- Fill the mugs with boiling water and leave to steep for 3 mins or until cool enough to sip. Sweeten with honey if you like.

- Combine first four ingredients in a large saucepan. Bring to a boil. Reduce heat and simmer, uncovered, for 10 minutes.
- Remove ginger and lemon strips and discard them.
- Place tea bags in a teapot and immediately add simmering water mixture.
- Cover and let steep according to package directions.
- Remove tea bags and discard.
- Garnish with lemon slices if desired.
- Serve immediately.

LEMON BALM GINGER TEA
Steps:
- Put sugar, water and ginger into a small pan and bring to a boil over medium heat. Boil, without stirring until the sugar disolves.
- Turn off the heat and allow the mixture to steep and cool. When cool, strain mixture and discard ginger.
- Place lemon balm leaves in bottom of heat-proof container. Pour boiling water over leaves and allow to steep for 3-4 minutes. Strain mixture into a conatainer and cool.
- Fill large glass with ice. Add 2 Tbsp. ginger syrup to glass. Finish filling with lemon balm infusion. Allow to cool.
