LEMON-GARLIC SHRIMP ORZO SKILLET

Lemon-Garlic Shrimp Orzo Skillet image

You know that phrase, "a little goes a long way?" Well, that absolutely applies to this dish, which tastes rich and buttery but actually only includes 2 tablespoons of butter! The trick is waiting until the end to add the butter when it can enrich the orzo, which has already been flavored by cooking in broth, and the zucchini, which has a naturally buttery taste when sautéed. The shrimp, also added at the end, gets infused with all the flavors already in the pan, so the whole dish is redolent of garlic and butter and only needs a squeeze of lemon and sprinkle of fresh herbs for contrast. Garnishing with a bit of nutty Parmesan takes it all over the top.

Time 45m

Yield 4

Number Of Ingredients 12

1 tablespoon vegetable oil
1 large zucchini, cut in half lengthwise and into 1/4-inch slices (about 2 cups)
1/4 teaspoon salt
4 cloves garlic, finely chopped (about 4 teaspoons)
3/4 cup uncooked orzo pasta (about 5 oz)
1 1/2 cups Progresso™ reduced sodium chicken broth (from 32-oz carton)
1 lb uncooked large shrimp (21 to 30 ct), peeled, deveined, tail shells removed
2 tablespoons butter
1/4 cup grated Parmesan cheese
1 teaspoon fresh lemon juice
1 teaspoon fresh thyme leaves, chopped
1 tablespoon finely chopped parsley

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add zucchini and salt; cook 4 to 6 minutes, stirring occasionally, until crisp-tender. Remove with slotted spoon; reserve.
  • Heat same skillet over medium heat; add garlic and pasta. Cook 2 to 3 minutes, stirring frequently, until garlic is fragrant and pasta is lightly toasted. Add broth; cover and simmer 10 to 11 minutes or until liquid is nearly absorbed.
  • Stir in shrimp, butter and zucchini; cover and cook 3 to 4 minutes or until shrimp are pink and pasta is tender.
  • Stir in cheese, lemon, and thyme; garnish with parsley.

CREAMY GARLIC PARMESAN ORZO

Creamy Garlic Parmesan Orzo image

This Creamy Garlic Parmesan Orzo can be on your table in 15 minutes! While it's perfect as a side dish, I prefer this as a meal on its own because it's cheesy, creamy and really hits the spot.

Provided by Joanna Cismaru

Categories     Main Course     Side Dish

Time 15m

Number Of Ingredients 11

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

MUSHROOM AND PARMESAN ORZO

Mushroom and Parmesan Orzo image

This side dish is easy to make and really tasty,, everyone loves it! Try to use a good-quality Parmesan or romano cheese for this, the common store-bought brand that you buy off the shelves will not do this recipe any justice. The pasta will thicken up upon sitting so it is best served right away, or shortly after cooking. I have even added in toasted sliced almonds to the pilaf after cooking. If you want a creamier textured dish then add in another 1/2 cup broth. It is important to lightly brown the orzo with the onions and garlic in butter before adding in the broth this really improves the flavor. You will love this!

Provided by Kittencalrecipezazz

Categories     Cheese

Time 35m

Yield 6 serving(s)

Number Of Ingredients 9

2 cups orzo pasta (tiny rice shaped pasta)
1/3 cup butter (can use more butter)
1 large onion, chopped
1 tablespoon chopped fresh garlic (or to taste)
5 cups chicken broth (can use turkey broth or to make this vegetarian, use vegetable broth)
2 cups canned sliced mushrooms, drained (I just use one or two whole cans of drained sliced mushrooms)
2 teaspoons lemon juice
salt and pepper
1 cup fresh grated parmesan cheese (can use more if desired)

Steps:

  • In a saucepan, melt butter and saute the onion and garlic for about 2 minutes.
  • Add in the orzo to the onion/garlic mixture, and saute the orzo until golden brown (about 6-7 minutes, could take more or less time to brown).
  • Slowly add in the broth, lemon juice and mushrooms; stir to combine.
  • Simmer covered on low heat for about 15-20 minutes, or until pasta is JUST firm-tender and most of the liquid is absorbed (do not overcook the orzo!).
  • Remove from heat and add/mix in the Parmesan cheese, salt and pepper; toss to combine.
  • Transfer to a large bowl and serve immediately.

GARLIC PARMESAN ORZO WITH CARAMELIZED SHALLOTS

Garlic Parmesan Orzo with Caramelized Shallots image

This orzo is savory, garlicky, and just a touch sweet from the shallots and thyme. The parmesan adds creaminess without making it heavy. It's the perfect side dish with simple roasted chicken and vegetables and you can even serve it with a glass of the wine you used to make it.

Provided by Alicia

Categories     Sides

Number Of Ingredients 11

6 shallots (peeled and thinly sliced)
4 cloves garlic (minced)
1 tablespoon olive oil
1 tablespoon unsalted butter
1 cup orzo pasta
1/4 cup dry white wine (Sauvignon Blanc, Pino Grigio, etc.)
2 1/4 cup chicken broth
1 tablespoon thyme (stems removed)
1 teaspoon sea salt
1/4 teaspoon ground black pepper
1/2 cup parmesan (freshly grated)

Steps:

  • Heat the butter and olive oil in a skillet over medium heat.
  • Sauté the shallots until deeply browned, stirring often. This will take about 15 to 20 minutes. Add in the garlic and sauté for 1 minute.
  • Pour in the wine and stir, scraping any bits off the bottom of the pan.
  • Once the wine has been absorbed by the shallots, stir in the orzo and cook for 1 to 2 minutes or until lightly toasted.
  • Pour in the chicken broth, salt, pepper, and thyme.
  • Increase the heat to medium high and bring to a gentle boil. Then, reduce the heat to medium-low and simmer, stirring often, for 10 to 12 minutes.
  • Once most of the liquid is absorbed and the orzo is cooked through, remove the pan from the heat and stir in the parmesan.

  • Begin by heating about 1-2 Tablespoons of olive oil in a large skillet, let it warm up for about a minute. Add the orzo and lightly stir it around the pan so it toasts, this will give the orzo a nutty flavor. When the orzo starts to turn golden in color, add the broth or water starting with just 1/2 cup. Let the orzo absorb the liquid entirely, then add the rest. Give it a stir, bring to a quick boil and turn the heat down to a simmer. Cover and let it cook for 10-15 minutes.
  • Add the butter to a large saucepan over medium heat. Once it’s melted add the chopped onion and garlic. Season with salt and pepper. Let that simmer for about 2-3 minutes until it softens. Add the half and half, cheese and parsley (or basil). Season again with salt and pepper. Taste and adjust.
