Sautéed Mustard Greens with Garlic and Lemon image

This dish is a fast take on the usual long-simmered greens.

Provided by Lisa Cericola

Time 20m

Yield Serves 8

Number Of Ingredients 7

2 tablespoons olive oil
4 garlic cloves, thinly sliced
3 pounds mustard greens, washed, trimmed, and chopped (about 24 cups)
2 tablespoons fresh lemon juice (from 1 lemon)
¼ to ½ teaspoon crushed red pepper
¾ teaspoon kosher salt
¾ teaspoon black pepper

Steps:

  • Heat oil in a Dutch oven over medium. Add garlic; cook, stirring often, until garlic is golden brown and crispy, about 1 minute. Stir in greens, in batches; cook until wilted, 1 to 2 minutes, before adding more greens. Cover and cook, stirring occasionally, until tender-crisp, 10 to 12 minutes. Stir in lemon juice and ¼ teaspoon crushed red pepper. Sprinkle with salt and pepper. Stir in an additional ¼ teaspoon crushed red pepper, if desired.

SAUTEED COLLARD GREENS

Sauteed Collard Greens image

This recipe can be prepared in 45 minutes or less. Some people favor sauteed collard greens boiled until they are meltingly tender, while others prefer them to retain some bite.

Yield Serves 4

Number Of Ingredients 5

2 1/2 pounds collard greens
2 garlic cloves
1 tablespoon unsalted butter
1 tablespoon olive oil
1 teaspoon fresh lemon juice, or to taste

Steps:

  • Remove and discard stems and center ribs of collard greens. Cut leaves into 1-inch pieces. In a kettle of boiling water cook collards 15 minutes and drain in a colander, pressing out excess liquid with back of a wooden spoon.
  • Mince garlic. In a 12-inch heavy skillet heat butter and oil over moderately high heat until foam subsides and stir in garlic, collards, and salt and pepper to taste. Sauté collard mixture, stirring, until heated through, about 5 minutes.
  • Drizzle collards with lemon juice and toss well.

SAUTéED GREENS WITH GARLIC AND LEMON

Sautéed Greens with Garlic and Lemon image

Provided by barrett prendergast

Number Of Ingredients 5

2 lbs or 2 bunches of your favorite greens (spinach, kale, swiss chard, etc. For this version I used 1 bunch of baby spinach and one bunch of kale, stems removed.)
Sea salt
2 cloves garlic, peeled and thinly sliced
1/4 C olive oil
1/2 lemon

Steps:

  • Soak and rinse the greens in several changes of cold water. Place the greens in a wide pan with no more water than what clings to them from their soak. Turn the heat onto medium low, sprinkle a generous pinch of sea salt, and cover. Cook until tender, about 6-8 minutes. Remove the greens from the pan and place in a bowl.
  • Place the olive oil and garlic in the pan and turn the heat to medium-high. Cook until the garlic is golden. Remove the garlic and set aside. Add the greens back into the pan with the oil. Turn to coat and cook for a minute or two. Taste and season with more salt if necessary. Remove the pan from the heat. Add the garlic back into greens. Finish with the juice from half a lemon.

LEMON GARLIC SAUTEED KALE

Lemon Garlic Sauteed Kale image

This easy, healthy recipe for sautéed kale is delicious. As the kale cooks in the pan, it wilts, turns bight green, and becomes tender. Kale may sound like a boring side, but this is one of our favorite side dishes to make.

Provided by Adam and Joanne Gallagher

Categories     Side Dish

Time 20m

Yield Makes 4 servings

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
3 cloves garlic, peeled and sliced
Pinch red pepper flakes
1 large bunch kale (7 to 8 cups chopped leaves)
1/2 cup stock, white wine or water, plus more as needed
1/4 teaspoon fine sea salt or more to taste
Half of a lemon

Steps:

  • Rinse the kale, and then pull the leaves from the stems. Discard the stems or save to add to homemade stock another day. Coarsely chop kale leaves into randomly shaped pieces, about 2 inches large.
  • Heat the olive oil in a wide skillet over medium-high heat. When the oil shimmers, add the garlic and red pepper flakes. Cook, stirring often, until the garlic is soft, but before it browns.
  • Add the chopped kale leaves, stock, and 1/4 teaspoon of salt. Cook, tossing the kale around the pan occasionally, until the kale turns bright green, is soft and is wilted, about 7 to 8 minutes. If before the kale is tender, the liquid evaporates, add a little bit more to the pan.
  • Taste and adjust with additional salt, and then finish by stirring in the juice from half a lemon.

LEMON-GARLIC GREENS SAUTE

Lemon-Garlic Greens Saute image

This recipe is so simple I almost decided not to post it, but it's definitely my go-to side dish when I want fast, delicious greens. I like to use collard greens and kale in this, but you could also use just one or the other or mustard greens & chard as well (I wouldn't recommend spinach for this because it will cook down too much). I also like this with red wine vinegar and liquid smoke in place of the lemon juice. Be careful not to add freshly washed (still wet) greens to hot oil -- you'll get fireworks.

Provided by Eat Your Vegetables

Categories     Collard Greens

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

1 bunch collard greens (about 5 c chopped)
1 bunch kale (about 5 c chopped)
1/3 cup lemon juice
1 tablespoon garlic, minced
3 tablespoons olive oil

Steps:

  • Roughly chop the greens and wash them thoroughly.
  • To a large saucepan or Dutch oven add the olive oil, garlic and as much of the greens as will fit (you may need to let the first batch cook down a little to fit the rest of the greens in the pan).
  • Once all of the greens are in the pan, cook uncovered for 15 minutes or until greens are tender, tossing frequently.
  • Once the greens are softened and slightly browned, add the lemon juice and saute an additional 2 minutes.
  • Serve warm.

  • Trim off the stem edge of the beans. I did not trim both the ends, I left thin string side. It’s edible to eat and leaving it on the beans makes it look beautiful. With tender and crispy beans, the string ends wont really bother you. But if you are not a fan, go ahead and trim both ends.
  • Bring about 5 qt water to boil. When water starts boiling, add kosher salt (to taste) into boiling water.
  • Add all the green beans into the boiling water. Blanch it for about 3 to 5 minutes. We do not want to over cook beans. It needs to be just cooked/blanched but still have that crunch.Note : I like crunchy beans so always cook to the point it has that crunch but cooked (not fully cooked). Cook longer if you prefer fully cooked beans. Start with cooking for 7 to 9 minutes. Check if it's cooked. Cook longer if needed.
