EASY LEMON CURRANT COOKIES

Steps:
- Preheat oven to 350 degrees. Line baking sheets with parchment paper; set aside. In the bowl of an electric mixer fitted with a paddle attachment, or using a hand mixer, beat the butter and sugar until combined. Add egg and beat to combine. Beat in sour cream.
- In a medium bowl, whisk the flour, baking powder, and salt. Add the currants and lemon zest, and stir to combine. Add to butter mixture, beating to combine.
- Drop dough by level teaspoons onto cookie sheets. Leave 1 1/2 inches between cookies. Bake until puffed, and golden around edges, about 15 minutes. Cool 5 minutes and remove to rack to cool completely.
MARTHA STEWART'S LEMON-CURRANT COOKIES
When a Black Corinth grape is dried, it becomes a 'currant'! These cookies are from Martha Stewart's Everyday Food website. They have such great flavor. Her recipe says to bake for 20 minutes but I found that mine browned around the edges in 10 minutes. I posted her recipe as written but just wanted to let you know to start checking at 10 minutes.

- Preheat oven to 350 degrees F. Generously butter two baking sheets, or line them with parchment paper.
- Combine the butter and sugar in a mixing bowl; beat until light and fluffy. Beat in sour cream and egg.

- Stir in currants and lemon zest.

- Cream butter and sugar.
- Add egg and mix well.
- Add grated lemon rind and dry ingredients.
- Add currants.
- Roll teaspoonfuls of mixture into balls and place on lightly greased baking tray.
- Press balls lightly with fork.
- (dip fork in flour and shake off excess).
- Bake 180'-190'C (Gas mark 4) for about 15-20 minutes- or until they are just slightly golden in colour- not browned.

CURRANT TEA CAKES
Came across these while looking for a tea biscuit recipe in all of my cookbooks. Not exactly what I was looking for, but very good and easy.

- Cream butter, lemon peel and lemon juice until light.
- Add sugar and cream until light and fluffy.
- Add eggs and blend well.
- In another bowl, mix flour and salt; gradually add to creamed mixture, beating well until blended.
- Stir in currants.
- Drop by teaspoonsful onto greased and floured baking sheet.
- Bake at 350* for 10 minutes or until set.
- Remove to a wire rack to cool.

- Heat the oven to 180C/160 fan/gas 4. Place the butter and sugar in a bowl and beat together with a wooden spoon until well combined. Add the egg yolk, lemon zest and nutmeg and beat again.
- Add the flour, salt and currants and mix everything together to make a firm dough, using your hands if necessary. Form into a puck-shape, wrap and chill in the fridge for 30 mins.
- Line two large baking sheets with baking parchment and lightly dust your work surface with flour. Cut the dough in half and roll out to a ½ cm thickness. Cut out biscuits using a 6cm fluted cutter, lift onto one of the baking sheets with a palette knife, leaving a little space in between. Repeat with the remaining pastry to make a second tray of biscuits, re-rolling the off-cuts. Chill for 30 mins.
- Bake for 7 mins, then remove from the oven, brush with egg white, sprinkle with extra sugar and return to the oven for 7-8 mins or until lightly golden brown. Leave to cool on the trays for 5 mins then carefully transfer to a wire rack to cool completely.

MARY BERRY'S EASTER BISCUITS
These buttery lemon biscuits are easy to make and take very little time.

- Preheat the oven 200C/180C Fan/Gas 6. Line three baking trays with baking paper.
- Put the butter and sugar in a bowl and beat until well combined and fluffy. Add the egg yolk and lemon zest. Sift in the flour and mix well. Stir in the currants and enough milk to make a fairly soft dough.
- Knead the dough on a floured work surface and, using a rolling pin, roll out the dough until 5mm/¼in thick. Using a 6cm/2½in fluted cutter, cut out 24 rounds. Transfer to the baking trays using a palette knife and bake for 8 minutes.
- Lightly beat the egg white using a fork.
- Remove the biscuits from the oven and brush the tops with the beaten egg white. Sprinkle over caster sugar and return to the oven for 5 minutes, or until pale golden brown and cooked though. Leave to cool on the trays for a few minutes, then carefully lift onto a wire rack to cool completely.
BUTTERMILK TEA BISCUITS
Another oldie but goodie. Nice and light. I am sure everyone knows that in lieu of buttermilk, you can use "sour milk" (1 Tbsp of vinegar or lemon juice in a 1-cup measure and fill with milk). This recipe makes about 15 to 18 good-sized bisuits. If you are serving these with a soup or stew, they are really nice with a bit of cayenne pepper added with the dry ingredients. Gives them a bit of a bite. I hope you enjoy them.

- Preheat oven to 450°F.
- Mix together flour, baking powder, baking soda and salt.
- Cut in the margarine with two knives, or a pastry blender, until the mixture resembles coarse oatmeal.
- Make a well in the centre and add buttermilk/sour milk slowly.
- When all the liquid has been added, stir rather vigorously until it comes freely from the side of the bowl. (Note that the dough should be soft but not too sticky.).
- Turn the dough out onto a lightly floured surface and knead lightly for just a few minutes (about 10 times).
- Roll or pat out to desired thickness (about 1/2"). Cut dough with a floured cutter (or glass) and place on UNGREASED baking sheet.
- Bake for 12 - 15 minutes or until nicely browned.

- Blend flour, sugar, vanilla seeds, rind and 1 tsp sea salt in a food processor to combine, add butter, currants and candied lemon and process until a sandy texture. Add yolks, process to just combine, tip out onto a work surface and bring dough together with the heel of your hand. Form into a disc, roll out to 1cm thick on a piece of floured baking paper and refrigerate to rest (30 minutes).
- Preheat oven to 180C. Cut out rounds with a 6cm cutter, place on a baking tray lined with baking paper and bake, turning tray occasionally, until golden around the edges (10-12 minutes). Set aside to cool on trays for 5 minutes.
- For vanilla glaze, stir sugar, vanilla seeds and 50ml water in a saucepan over medium-high heat to dissolve sugar, then bring to the boil and cook until a light syrup forms (1-2 minutes). Remove from heat, add icing sugar, butter and 1-2 tbsp hot water to achieve a smooth glazing consistency.
- Dip one side of warm shortbread biscuits into vanilla glaze, allowing excess to drip off, place on a tray lined with baking paper and stand until set (10-15 minutes). Store in an airtight container.
