2 lemons
Kosher salt and freshly ground pepper
1/2 medium red onion, thinly sliced
1 medium carrot, shredded
1/4 cup vegetable oil
2 cups long-grain white rice
2 tablespoons rice wine vinegar
2 teaspoons packed light brown sugar
1 Kirby cucumber, seeded and diced
1/2 cup chopped salted roasted peanuts
1/2 cup fresh cilantro, roughly chopped
1/2 cup fresh mint, roughly chopped
1/2 cup fresh basil, roughly chopped
1 bunch watercress, tough stems removed, leaves torn

Steps:

  • Remove 2 wide strips zest from 1 lemon with a vegetable peeler. Combine 1 strip zest with the vegetable oil in a small saucepan over medium heat and cook until the edges of the zest turn slightly golden, about 5 minutes. Let the lemon oil cool.
  • Meanwhile, cook the rice as the label directs, adding the remaining strip lemon zest to the water. Transfer the rice to a large bowl, discarding the zest, and fluff with a fork. Let cool to room temperature.
  • Meanwhile, make the dressing: Juice both lemons into a medium bowl. Add the vinegar, brown sugar, 1 1/4 teaspoons salt and 1/2 teaspoon pepper and whisk until the sugar dissolves. Discard the zest from the lemon oil, then whisk the oil into the dressing. Add the onion slices and let marinate 15 minutes.
  • Add the carrot, cucumber, peanuts, cilantro, mint, basil and watercress to the bowl with the rice. Add the dressing mixture and gently toss. 6 skinless chicken breasts
2 tbsp olive oil
1⁄2 tbsp balsamic vinegar
140g bag rocket
25g parmesan
lemon wedges
2 garlic cloves
3 rosemary sprigs, leaves finely chopped
6 sage leaves, finely shredded
zest 1 lemon and juice of ½
3 tbsp olive oil

Steps:

  • Place each chicken breast between 2 sheets of cling film or baking parchment. Use a meat mallet or rolling pin to bash each piece of chicken - flatten out to an even layer about 0.5cm thick. Transfer to a dish.
  • To make the marinade, crush the garlic with a good pinch of salt using a pestle and mortar. Add the rosemary and sage, and give everything a good pounding. Stir through the lemon zest and juice, olive oil and some ground black pepper. Pour the marinade over the chicken, ensuring that it's well coated. Cover and chill for at least 2 hrs.
  • Heat the barbecue. Once the flames have died down, spread the coals out to an even layer. Cook the chicken for 1-2 mins each side. Transfer to a board and leave to rest for a few mins.
  • Meanwhile, pour the oil and balsamic vinegar into a large bowl. Add the rocket and some seasoning. Toss together, then shave over the Parmesan. Serve the salad with the chicken, with lemon wedges to squeeze over.

2 tablespoons olive oil
juice of 1 lemon ((1/4 cup fresh squeezed lemon juice))
2 tablespoons water
2 tablespoons red wine vinegar
2 tablespoons fresh chopped parsley

1 teaspoon dried oregano
1 teaspoon salt
cracked pepper (, to taste)
1 pound (500 g) skinless, boneless chicken thigh fillets (or chicken breasts)
4 cups Romaine ((or Cos) lettuce leaves, washed and dried)
1 large cucumber (diced)
2 Roma tomatoes (diced)
1 red onion (sliced)

Steps:

  • Whisk together all of the marinade/dressing ingredients in a large jug. Pour out half of the marinade into a large, shallow dish. Refrigerate the remaining marinade to use as the dressing later.
  • Add the chicken to the marinade in the bowl; marinade chicken for 15-30 minutes (or up to two hours in the refrigerator if time allows). While waiting for the chicken, prepare all of the salad ingredients and mix in a large salad bowl.
  • Once chicken is ready, heat 1 tablespoon of oil in a grill pan or a grill plate over medium-high heat. Grill chicken on both sides until browned and completely cooked through.

1/4 to 1/3 pound fresh green beans, trimmed and cut into 2-inch pieces
2 lemons, zested
1 teaspoon fennel seed
5 to 6 sprigs fresh thyme, leaves stripped and finely chopped
3 to 4 sprigs fresh rosemary, leaves stripped and finely chopped
A handful flat-leaf parsley, finely chopped
1/2 to 2/3 cup extra-virgin olive oil, divided
Black pepper
4 boneless skinless chicken breasts
4 boneless, skinless chicken thighs
1 pound asparagus spears
8 slices prosciutto
1 cup basil leaves, about 20 leaves
1/2 cup fresh mint leaves, 5 to 6 stems stripped of their leaves
A handful pine nuts, 3 to 4 tablespoons, lightly toasted and cooled
1/2 cup grated Parmigiano-Reggiano
1 (15-ounce) can cannellini beans, rinsed
1 (15-ounce) can garbanzo beans, rinsed

Steps:

  • Heat grill or grill pan to medium-high.
  • Fill a small skillet with about 1-inch water and bring to a boil.
  • Grate the garlic onto acutting board and add a couple teaspoons salt, mash into paste with the flat of your knife.
  • Add salt to boiling water and cook green beans 1 minute then drain and cool under cold running water then reserve.
  • Reserve 1/5 of the pasted garlic, about 1 clove and add the rest to a shallow dish. To the garlic, add the lemon zest, fennel seed, chopped thyme, rosemary, parsley and about 1/4 to 1/3 cup extra-virgin olive oil and some black pepper. Stir with a fork to combine then add chicken pieces and coat evenly. Grill chicken 12 to 15 minutes until juices run clear.
  • Bring a medium saucepan of water to a boil.
  • Trim asparagus of tough ends. Add salt and the asparagus to the water and blanch for 2 minutes. Remove from the water and place into an ice water bath to cool. Once cooled, pat dry with paper towels, drizzle with a touch of extra-virgin olive oil and season with salt and pepper. Divide the asparagus into 4 piles and roll 2 layered slices of prosciutto around each pile to form bundles. Grill 7 to 8 minutes until prosciutto is crisp and spears are tender.
  • Place basil and mint leaves in a food processor with the nuts. Add some salt and pepper and turn processor on. Stream in about 1/4 to 1/3 cup extra-virgin olive oil to form a thick pasty sauce. Transfer the sauce to a bowl. Stir in the reserved garlic paste and the grated cheese. Add the cooled green beans and the canned beans to the bowl and stir to combine. Adjust seasoning.
  • Remove chicken from the grill and squeeze the juice of 1 of the zested lemons down over the meat while still hot.
  • Serve 1 piece each chicken breast and thigh with an asparagus bundle and some bean salad alongside.

6 anchovy fillets
1 small garlic clove
Kosher salt
freshly ground black pepper
Finely grated zest of 1 lemon
2 1/2 tablespoons fresh lemon juice
7 to 8 tablespoons extra virgin olive oil, to taste
2 eggs, beaten
1 1/2 cups panko or other unseasoned bread crumbs
1/2 cup flour
1/8 teaspoon cayenne
1/8 teaspoon freshly grated nutmeg
1 1/4 pounds chicken cutlets, pounded to 1/8-inch thick
Safflower, peanut or vegetable oil, for frying
2 quarts mixed baby greens
2 cups soft herb leaves, like a combination of mint, tarragon, basil, parsley, cilantro, chervil, chives (try to use at least 3 kinds)
1 scallion, thinly sliced, including greens

Steps:

  • Mince anchovies and garlic and mix with a large pinch of salt until you get a rough paste. Put it in bowl and whisk in the lemon zest, juice and another pinch of salt and some pepper. Slowly drizzle in the olive oil.
  • Place eggs in one shallow dish, bread crumbs in another, and flour mixed with cayenne and nutmeg in a third. Season chicken cutlets generously with salt and pepper.
  • Heat 1/8 inch oil in a large skillet. While oil heats, dip cutlets one by one into flour (shake off any excess), then into eggs (ditto) and finally into the bread crumbs, taking care not to handle chicken more than necessary (hold meat by ends).
  • When oil sizzles when a pinch of bread crumbs is thrown in, add a chicken cutlet (or two if your skillet is large, leave plenty of room around them). Swirl pan so oil cascades over top of cutlet in waves. When bottom is golden brown, about 3 minutes, flip and brown the other side, swirling pan (swirling helps create air pockets, giving you lighter schnitzel). Transfer to a paper-towel-lined baking platter or baking tray and sprinkle with more salt. Repeat with remaining chicken.
  • Toss salad greens and herbs with just enough anchovy-lemon dressing to lightly coat them. Divide salad on serving plates and top with schnitzel. Drizzle with more dressing and garnish with scallions.

1 1/2 lbs boneless, skinless chicken breasts (4-5 small-ish breasts) or boneless, skinless chicken thighs (6-8 pieces- see notes.)
2 tablespoons fresh oregano, rosemary, thyme, or sage, finely chopped (or use a combo)
zest from one medium lemon (2 tablespoons) and save the lemon for grilling/ juicing.
1 tablespoon granulated garlic, or 4 garlic cloves, finely minced
1 1/4 teaspoons kosher salt
1/2 teaspoon cracked pepper
1/4 teaspoon chili flakes- optional (Aleppo or Urfa Biber are good here)
1/4 cup olive oil

Steps:

  • thickest part of the chicken breast into uniform thickness aiming for 3/4 inch thick and if very large, cut into uniform sizes roughly 5-6 ounces each.
  • Mix marinade ingredients together in a small bowl. Set aside 2 tablespoons (for garnish). Place chicken and marinade in a bowl, baking dish or large zip lock bag and massage to coat all sides well. Marinate for 30 minutes, a few hours, overnight or even a few days.
  • Grill: Preheat grill to medium-high. (See notes for chicken thighs.) Lift chicken breasts out of the bowl, letting most of the oil drip off -before carefully placing it on the grill. Cut the zested lemons in half, placing open sides down on the grill too. Feel free to add any veggies to the grill- here we added halved tomatoes. Close the grill lid and cook for 5-6 minutes (or until deep golden grill marks appear) before flipping. Cook the other side, 5-7 minutes, and lower heat or move to a cooler spot until the thickest part of the breast registers at 160F and meat is no longer pink, and the meat looks opaque. Let it rest 5-10 minutes before serving.
  • Place the grilled chicken on a serving platter, squeeze generously with the grilled lemon, and tuck in fresh herbs for garnish. Spoon the reserved 2 tablespoons marinade over the chicken, and serve! (NOTE: DO not use the "used marinade" that the raw chicken was in for this!).

3 to 4 boneless, skinless chicken breasts
Salt, to taste
Freshly ground black pepper, to taste
1/2 to 3/4 cup mayonnaise
1 teaspoon chopped fresh parsley
2 teaspoons chopped fresh chives
1 teaspoon chopped fresh dill
1 1/2 teaspoons chopped fresh oregano
3 teaspoons fresh lemon juice

Steps:

  • Gather the ingredients.
  • Line a baking pan with nonstick foil or spray foil with nonstick cooking spray. Preheat the oven to 400 F/200 C/Gas 6.
  • Arrange the chicken breasts on the baking pan and sprinkle with salt and freshly ground black pepper. Bake for about 15 minutes.
  • Turn and continue baking for 15 to 20 minutes longer, or until chicken is thoroughly cooked but not overcooked. The minimum safe temperature for chicken is 165 F/73.9 C.
  • Remove the chicken from the oven and let it cool. When the chicken is cool enough to handle, dice or chop it into small pieces.
  • Combine 1/2 cup of mayonnaise with the herbs and lemon juice. Mix the mayonnaise mixture with the chopped chicken and add more mayonnaise, as needed, to taste. Stir in salt and pepper, to taste.
  • Serve the chicken salad in sandwiches or on lettuce or mixed greens with avocado slices or sliced fresh tomatoes. Add chips or french fries for a satisfying lunch or easy light supper. Enjoy! .

Chicken:
Juice of 2 lemons (about 1/3 cup)
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
2 teaspoons chopped garlic
4 boneless, skinless chicken breast halves (about 1 3/4 pounds)
1 tablespoon plus 1 1/2 teaspoons olive oil
Potatoes:
14 ounces small red potatoes, quartered
4 teaspoons olive oil
1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
Salad:
2 slices whole-wheat bread
3 teaspoons chopped garlic
1-2 anchovy fillets, sliced
Juice of 1/2 lemon (about 2 tablespoons)
2 tablespoons extra-virgin olive oil
1/8 teaspoon salt
8 romaine lettuce leaves, cut into bite-size pieces
Freshly ground black pepper

Steps:

  • Chicken:
  • Mix lemon juice, basil, oregano and garlic. Season chicken with salt and pepper. Heat oil over medium heat in a large skillet. Cook chicken 8 minutes; turn and cook 5 minutes more. Add lemon-juice mixture and stir up anything stuck to skillet. Reduce heat and cover; simmer until cooked through, about 6 minutes.
  • Potatoes:
  • Heat oven to 450°F. Toss all ingredients in a roasting pan and cover with foil. Cook 20 minutes. Remove foil; cook 20 minutes more, stirring once.
  • Salad:
  • Toast bread until very crisp, then rub each slice with 1 teaspoon garlic. Beat remaining 1 teaspoon garlic with anchovies, lemon juice, oil and salt with a fork in a salad bowl until well emulsified. Add lettuce; toss to evenly coat leaves. Grind black pepper over salad. Dice garlic toast and add croutons to salad. Toss again to mix well. Serve salad immediately.

Crisp Chicken Schnitzel With Lemony Spring Herb Salad image

New York Times, June 3, 2009 The hallmark of a perfect Wiener schnitzel, opined the epicure Joseph Wechsberg, is a slice of veal with breading "so dry you could sit on it without having a fat stain on your pants." I've clung to this image since I read it in Mr. Wechsberg's classic 1953 book, "Blue Trout and Black Truffles." Why anyone would ever sit on a schnitzel to test it in the first place wasn't clear, but I liked the notion of such a greaseless fried morsel of meat. Years later, an Austrian chef, Mario Lohninger, gave me a schnitzel lesson. (He and I worked on a cookbook together.) I thought I knew what was what. "They say you should be able to sit on a schnitzel without getting grease on your pants, right?" I said with authority. Mr. Lohninger raised an eyebrow. "Maybe they sit on schnitzel in Vienna," he said. "Where I come from we prefer a crisp, light schnitzel with a crust that rises like a soufflé." The secret, he said, is to trap air in the crust when you cook the meat by moving and shaking the pan. After dipping the veal in flour, egg and bread crumbs, he put a cutlet in the skillet, swirling it so the hot oil undulated over the cutlet in waves. This motion creates steam that lifts the crust away from the meat, allowing the bread crumbs to crisp without sticking to the veal in a gummy mass. Indeed, his schnitzel was a golden, gorgeous thing, with a puffy crust that shattered at the touch of a fork, and tender meat within. He served it with cucumber salad and lingonberry jam. Years went by, but when my next schnitzel craving hit, it hit hard. I wanted crumby, crisp, fried meat for dinner, and would not be denied. What I didn't want, however, was factory farm veal. I know there is humanely raised veal available in New York, but not at my local market. I chose cutlets of free-range chicken instead. Because the cutlets were not quite one-eighth-inch thick - the proper thickness for schnitzel, according to Mr. Lohninger - I pounded them a little with a rolling pin. Then, without handling them too much, I gently dipped them in flour, egg and bread crumbs. When they were all nicely coated, I dropped a cutlet in hot oil, swirling the pan as instructed. The meat puffed slightly and browned beautifully. The chicken was soft and savory (thanks to a pinch of cayenne and nutmeg) beneath the ultra-crisp crust. I served it with a bright herb-laden salad. The schnitzel passed Mr. Lohninger's soufflé test easily, and you don't have to sit on any cutlets - unless you're into that.

1 small garlic clove

1 lemon, zest of, finely grated
2 1/2 tablespoons fresh lemon juice
7 -8 tablespoons extra virgin olive oil, to taste
2 eggs, beaten
1 1/2 cups panko breadcrumbs or 1 1/2 cups other unseasoned breadcrumbs
1/2 cup flour
1/8 teaspoon cayenne
1/8 teaspoon freshly grated nutmeg
1 1/4 lbs chicken cutlets, pounded to 1/8-inch thick
safflower oil, peanut oil or vegetable oil, for frying
2 quarts mixed baby greens
2 cups soft herb leaves like a combination mint, tarragon, basil, parsley, cilantro, chervil, chives (try to use at least 3 kinds)
1 scallion, thinly sliced, including greens

Steps:

  • Mince anchovies and garlic and mix with a large pinch of salt until you get a rough paste. Put it in bowl and whisk in the lemon zest, juice and another pinch of salt and some pepper. Slowly drizzle in the olive oil.
  • Place eggs in one shallow dish, bread crumbs in another, and flour mixed with cayenne and nutmeg in a third. Season chicken cutlets generously with salt and pepper.
  • Heat 1/8 inch oil in a large skillet. While oil heats, dip cutlets one by one into flour (shake off any excess), then into eggs (ditto) and finally into the bread crumbs, taking care not to handle chicken more than necessary (hold meat by ends).
  • When oil sizzles when a pinch of bread crumbs is thrown in, add a chicken cutlet (or two if your skillet is large, leave plenty of room around them). Swirl pan so oil cascades over top of cutlet in waves. When bottom is golden brown, about 3 minutes, flip and brown the other side, swirling pan (swirling helps create air pockets, giving you lighter schnitzel). Transfer to a paper-towel-lined baking platter or baking tray and sprinkle with more salt. Repeat with remaining chicken.
  • Toss salad greens and herbs with just enough anchovy-lemon dressing to lightly coat them. Divide salad on serving plates and top with schnitzel. Drizzle with more dressing and garnish with scallions.

2 pkg mix field greens
1 c dried cranberries
1 c baby tomatoes (red & yellow ones)
1 c pepper jack cheese
1 box white mushrooms
2 2 pieces of boneless chicken breast
1 Tbsp garlic powder, salt, pepper, basil, parsley each
3 lemon
1/4 butter
1 cucumbers
1 bottle berry vinaigrette

Steps:

  • 1. In a large Bowl put in the Mix Field Greens, dried Cranberries, Tomatoes, Cucumbers and mix them altogether and put them on the side when that's done.
  • 2. Take one of the Boneless chicken Breast cut of any fat on the chicken. When that's done take a knife poke some holes on the chicken everywhere front and back. Season it with Garlic Powder, Salt, Pepper, Basil, Parsley. Cut the lemon into half and squeeze some juice on the chicken without the lemon seeds. Take a medium size pan with a small drop of oil on to the pan with med heat. When the pan is also heat up. put in the chicken. Cook both sides for 7 to 8 mins and add more lemon juice. Cover the pan to cook the inside with med - low heat for 4 mins
  • 3. while your waiting for the chicken to cook take another pan for the mushrooms. cut a small piece of butter onto the pan and wait until all the butter is melted add the mushrooms with a pinch of salt, pepper, garlic powder. Med heat.
  • 4. While your cooking your chicken and mushrooms shed the pepper jack cheese in a different bowl.
  • 5. Check the chicken. cut a small piece in the middle of the chicken to see if it's done yet. If the chicken is little whiteish take out the chicken. DO NOT CUT THE CHICKEN YET!!! Yet it cool
  • 6. Your mushroom should be done. stir it for a bit when it starts turning blackish shut of the oven and put it on top of the salad. Now you could cut the chicken into slices also put that on the salad Do NOT MIX IT! Add the cheese on top of the chicken and it will melt a little bit but it's still good. And drizzle a bit of the dressing in the salad. And your done.
