LEMON BROWNIES
I have never been a huge fan of lemon....until now. These are always a favorite at the never ending potluck going on in the emergency room I work in. I have been wanting to post these for the last year. I hope you enjoy them too.

Steps:
- Preheat oven to 350°F and prepare a 9x9-inch pan by lining it with parchment paper (or lightly grease and flour). (You could use a 9x13-inch pan for more servings, but the bars will be thinner.)
- In a large bowl, combine the melted butter and brown sugar. Stir well.
- Add the eggs one at a time, stirring well after each addition.
- Stir in the lemon juice and lemon zest.
- In a separate, medium-sized bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Gradually stir the flour mixture into the butter and egg mixture until completely combined.
- Spread the batter evenly into the prepared pan. Bake 35-45 minutes, or until the edges are turning golden brown. (If you are using a 9x13-inch pan, bake for 25-30 minutes.)
- Allow brownies to cool before glazing.

Steps:
- Preheat the oven to 350 degrees Fahrenheit. Line a 9x13 baking pan with parchment paper, leaving an overhang, so you can pull the brownie out of the pan when done.
- In a large bowl, whisk the flour, baking powder and salt until combined. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, or a handheld mixer, beat together the butter, sugar, lemon zest and lemon juice on high speed until light and fluffy.
- With the speed on low, add the eggs one at a time and mix until just combined.
- Gradually stir in the dry ingredients until combined.
- Pour the batter into the prepared pan, and smooth out the surface with a spatula.
- Bake for 25 to 28 minutes or until a toothpick inserted in the center comes out clean with just a few moist crumbs. Make sure not to over bake to keep the brownies fudgy and tender.
- Remove from the oven and cool on the counter.
- To make the glaze, whisk together the confectioners' sugar, lemon juice and zest in a mixing bowl. Add additional confectioners' sugar or lemon juice as needed until you reach a nice glaze consistency.
- Pour the glaze over the brownies and spread evenly. Allow it to set for 6 hours or overnight. When ready, pull the brownie out of the baking pan and cut into serving pieces. Enjoy!

LEMON BARS RECIPE
These are not the flimsy, thin lemon bars you see all over the internet! My recipe makes the best lemon bars ever - thick shortbread crust with that creamy tart lemon filling! If you've been disappointed with other recipes you have to give my recipe a try - I know you will love it.

Steps:
- Preheat oven to 350°F. Line a 9x9 or an 8x8 pan with foil and spray with nonstick cooking spray.
- Make the crust by creaming the butter with a hand or a stand mixer (fitted with the paddle attachment) until smooth. Add powdered sugar, flour, and salt and mix slowly until the mixture is crumbly but sticks together when you press it between your fingers. Press the crust into the bottom of the prepared pan. Bake for about 13 minutes, or until it just starts to get a light golden brown around the edges.
- While the crust is baking, whisk the eggs until beaten. Whisk in the sugar, lemon zest, salt, and lemon juice. Pour over hot crust, then continue to bake for 15-18 minutes, or until the mixture is no longer liquid in the center and it's lightly golden brown on top.
- Cool completely before removing from pan. Remove foil, then dust with powdered sugar. Slice and serve, dusting with more powdered sugar as desired.

- Preheat the oven to 350F. Lightly spray or butter your 8x8 9r 9x9 baking pan. I like to line it with parchment paper so I can remove the brownies easily for glazing and slicing, but that's optional.
- Mix in the lemon juice and zest. Note: the batter may look curdled at this point, but no worries, that's normal and it will resolve itself when you blend in the flour.

- Preheat oven to 350 degrees F. Line an 8x8 or 9x9" baking pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil liberally with cooking spray and set aside.
- In a large bowl, stir together the butter and sugar until combined. Gradually add in the eggs and stir until just barely combined - do not over mix, as this will lead to tougher brownies. Lastly, stir in the lemon juice, lemon zest, salt and flour until a soft batter forms.
- Spread the batter into the prepared pan and smooth out the top. Bake for approx. 22-25 minutes, no more than that, or until the top is set and lightly golden brown. Cool completely.
- Once cool, make your glaze. In a small bowl, whisk together the powdered sugar and lemon juice until a spreadable, pourable glaze is achieved. Pour over the bars and smooth out. Top with lemon zest. Let the glaze set, then cut into squares and serve.

- Pour lemon juice and zest into 1 cup of powdered sugar. Stir until all of the ingredients are well incorporated. It’s going to look like there isn’t enough liquid at first, but if you keep stirring, you will find that it will turn into a thick glaze. Keep adding in more powdered sugar until it reaches the consistency of molasses or cold syrup.
