1-1/2 cups biscotti crumbs (about 8 biscotti)
1/3 cup butter, melted
FILLING:
2 packages (8 ounces each) cream cheese, softened
2 cartons (8 ounces each) Mascarpone cheese
3/4 cup sugar
1/4 cup lemon juice
3 tablespoons all-purpose flour
1 tablespoon grated lemon zest
2 teaspoons vanilla extract
4 large eggs, lightly beaten
TOPPING:
3/4 cup coarsely chopped dried apricots
1/2 cup boiling water
3/4 cup cold water
1/4 cup sugar
1/4 cup orange marmalade
2 ounces white baking chocolate

Steps:

  • In a small bowl, combine biscotti crumbs and butter. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan. , Place on a baking sheet. Bake at 350° for 8-10 minutes or until lightly browned., In a large bowl, beat cheeses and sugar until smooth. Beat in the lemon juice, flour, lemon zest and vanilla. Add eggs; beat on low speed just until combined. Pour into crust. , Return pan to baking sheet. Bake at 350° for 45-55 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Cool for 30 minutes. , Meanwhile, soak apricots in boiling water for 10 minutes. Drain and discard liquid. In a small saucepan, bring the apricots, cold water and sugar to a boil. Reduce heat; simmer, uncovered, for 12-14 minutes or until water is absorbed. Remove from the heat; stir in marmalade. Cool to room temperature. , Carefully spread topping over cheesecake; cool 30 minutes longer. Refrigerate overnight., In a microwave, melt white chocolate; stir until smooth. Drizzle over cheesecake. Let stand for 15 minutes. Refrigerate leftovers.

70 vanilla wafers, finely ground in a food processor (8 1/2 oz)
5/8 cup unsalted butter, melted and cooled
20 ounces cream cheese, softened (2 1/2 eight-ounce packages)
8 ounces mascarpone cheese, at room temperature (about 1 cup)
3/4 cup sugar
3 large eggs
1 teaspoon vanilla
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1 cup sour cream
1/4 cup sugar
1 teaspoon vanilla
1 teaspoon fresh lemon juice
1/8 teaspoon salt

Steps:

  • Make crust:
  • Put oven rack in middle position and preheat oven to 350°F Butter bottom and side of a 9-inch springform pan.
  • Stir together cookie crumbs and butter in a bowl. Reserve 1/4 cup crumb mixture for sprinkling over cheesecake, then pat remainder onto bottom and 1 1/2 inches up side of springform pan.
  • Put pan in a shallow baking pan and bake until golden, about 10 minutes.
  • Cool completely on a rack, about 25 minutes. Leave oven on.
  • Make filling while crust bakes:
  • Beat cream cheese, mascarpone, and sugar in a large bowl with an electric mixer at medium high speed until fluffy, 3 to 5 minutes.
  • Add eggs 1 at a time, beating well after each addition.
  • Add vanilla, lemon juice, and salt and mix at low speed until combined.
  • Pour into cooled crust and bake until cake is set and puffed around edge but still trembles slightly when pan is shaken gently, 25 to 30 minutes.
  • Cool slightly in springform pan on rack, about 20 minutes.
  • (Cheesecake will continue to set as it cools.) Leave oven on.
  • Make topping:
  • Stir together sour cream, sugar, vanilla, lemon juice, and salt in a small bowl and spoon over cheesecake, spreading gently and evenly, leaving a 1/4-inch border around edge.
  • Bake cheesecake until topping is set, about 10 minutes.
  • Run a thin knife around edge to help prevent cracking.
  • Sprinkle top with reserved crumbs and cool completely in pan on rack, then chill, loosely covered, at least 8 hours.
  • NOTES:.
  • • Cheesecake can be chilled, loosely covered, up to 3 days.
  • • Cut cake with a long, thin sharp knife dipped in a tall glass of hot water.

  • Crush the digestive biscuits in a food bag with a rolling pin or in the food processor. Melt the butter in a saucepan, take off heat and stir in the brown sugar and biscuit crumbs.
  • Line the base of a 20cm loose bottomed cake tin with baking parchment. Press the biscuit into the bottom of the tin and chill in the fridge while making the topping.
  • Beat together the mascarpone, caster sugar, lemon zest and juice, until smooth and creamy. Spread over the base and chill for a couple of hours.

1 1/2 cups amaretti cookies
12 mini or 5 large biscotti cookies
6 tablespoons butter, melted
8 ounces cream cheese, at room temperature
1 pound mascarpone cheese, at room temperature
3/4 cup sugar
3 eggs
Pinch salt
1 teaspoon almond extract
1 orange, zested

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch springform pan or 2 (12-count) mini cheesecake pans with nonstick cooking spray. Wrap the outside of the pan with aluminum foil.
  • Add the cookies in a large resealable bag. Cover the bag with a kitchen towel and crush with a rolling pin until the cookies are coarsely ground. In a medium bowl, mix together the cookie crumbs with the melted butter. Press the mixture into the bottom and 1-inch up the sides of the prepared springform pan or mini cheesecake pans. Put on a sheet pan and bake for 5 minutes. Remove from the oven and let cool before adding the cheesecake filling.
  • Reduce the oven temperature to 325 degrees F.
  • In bowl of a food processor combine the cheeses with the sugar until mix until completely blended. Add the eggs, 1 at time, incorporating completely after each addition. Add a pinch of salt, the almond extract, and orange zest and blend for 10 seconds. Pour the filling into the prepared pan with crust. Put the springform pan into a roasting pan and pour in enough hot water to come 3/4 of the way up the sides the springform pan. If using a springform pan bake for 1 hour, if using mini cheesecake pans bake until completely set, about 25 to 30 minutes. Carefully remove the roasting pan from the oven and transfer the springform pan from the water bath to the counter and let cool completely before removing the cake from the pan. Slice and serve.

3 tablespoons sugar

2 teaspoons fresh lemon juice

Steps:

  • For the crust: Preheat oven to 350 degrees F.
  • Tightly wrap the outside of a 9-inch diameter springform pan with 2 3/4-inch-high sides with 3 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, and sugar in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Bake the crust until it is set and beginning to brown, about 12 minutes. Cool. Decrease the oven temperature to 325 degrees F.
  • For the filling: Using an electric mixer, beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula. Beat in the lemon juice and vanilla. Add the eggs, 1 at a time, beating just until blended after each addition.
  • Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour 5 minutes (the cake will become firm when it is cold). Transfer the cake to a rack; cool for 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days.
  • For the topping: Combine the chocolate-hazelnut spread and cream in a small bowl. Heat in the microwave until warm, stirring every 20 seconds to blend, about 1 minute.

1/4 cup white wine (or apple juice to sub)

3 ounces white chocolate

Steps:

  • CRUST:.
  • Line base of 9 1/2 inch springform pan with parchment papaer.
  • Brush 1 tbsp of the melted butter over parchment and up sides of pan.
  • Stir together biscotti crumbs and remaining butter in a bowl.
  • Pat mixture lightly into bottom and up sides of prepared pan.
  • Chill crust in the refrigerator while you prepare the filling.
  • FILLING:.
  • Preheat oven to 350 degrees.
  • In a large mixing bowl beat cream cheese until softened, add sugar and beat for about 5 minutes until light and fluffy.
  • Add eggs one at a time, beating very well after each addition.
  • Beat in mascarpone until smooth.
  • Now beat in flour, vanilla, lemon zest and lemon juice and mix until smooth.
  • Spoon the filling into chilled base and smooth the top.
  • Place cake on a baking sheet and bake in center of the oven for 1 1/4 hours or until firm on the sides and a little softer in the center.
  • The cake rises like a souffle but falls back as it cools.
  • Leave oven door ajar and turn off heat, let cake sit for about 1 hour to help prevent cracking.
  • TOPPING:.
  • While cake is cooling in oven, place apricots, sugar, wine (or juice) and water in a pot.
  • Let soak for 30 minutes.
  • Bring mixture to a boil. Cover and reduce heat to med-low and simmer for 30 minutes or until apricots are very soft.
  • Sit in marmalade and let cool.
  • Spread apricot mixture over cooled cheesecake.
  • Melt white chocolate in a heavy pot over low heat, stirring until just liquid.

1/4 cup cornstarch

Steps:

  • Preheat oven to 350 degrees. Whisk flours, cornstarch, and salt in a medium bowl.
  • Put butter, sugars, lemon zest, and 1 tablespoon lemon juice into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until fluffy, about 3 minutes. 7 cups water, extra

Steps:

  • Remove and reserve seeds from unpeeled quartered orange and lemon.
  • Put seeds and 2 tablespoons of water in small bowl. Cover and set aside.
  • Blend or process chopped orange, lemons and apricots, in batches, until finely chopped.
  • Combine fruit mixture with the extra water in large saucepan; bring to a boil.
  • Reduce heat and simmer, covered, 45 minutes.
  • Transfer mixture to large heatproof bowl; cover.
  • Stand fruit mixture and seed mixture, separately, overnight.
