Wondering how to make cream of wheat from scratch? This basic cream of wheat recipe makes for a hearty breakfast to start the day with as a tasty alternative to oatmeal or grits.

4 cups water, milk, or cream (I use half and half)
1/2 teaspoon salt
1 cup wheat farina (also known as cream of wheat)
Toppings of choice such as brown sugar, butter, berries, etc.

Steps:

  • Whisk together 4 cups of your choice of water, milk, cream or a mixture with 1/2 teaspoon salt in a large pot over medium-high heat. Bring to a boil.
  • Once boiling, reduce heat to low. Whisk in 1 cup of farina. Whisk until thickened, about 3 minutes, making sure to also scrape the sides. The cereal will continue to thicken as it cools and you can add more liquid to thin it out if needed.
  • Once thickened, remove the pot from the heat, let site for one minute and then ladle into bowls, and serve with desired toppings.

In my early 20's, I lived with some southern belles in Alaska! They were crazy for grittes with butter and cheese, but they couldn't find grittes in Alaska - so they would cook up a batch of Cream of Wheat and add butter and cheese. I loved the result and have passed it on to my husband and sons who also love this savory treat...

1/3 c cream of wheat
1 2/3 c water, boiling
1/2 c cheese, shredded
1 Tbsp butter
salt and pepper to taste

Steps:

  • 1. Using a wire whip, gradually whip cereal into the boiling water. Stir constantly.
  • 2. Reduce the heat and allow to boil until thick. Only takes a few minutes.
  • 3. Add shredded cheese and butter. Any favorite cheese will do, but I prefer sharp cheddar.
  • 4. Serve immediately. Makes two medium size bowls. This recipe multiplies well 3 or 4 times the original.
