Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
- Bake in the preheated oven until bubbly, 30 to 35 minutes.

LEFTOVER PORK AND GRAVY STEW
This is a great dish to use leftover pork and gravy, and it's so easy to fix. I use the crockpot, but it can be done on the stove or in the oven. We love this dish, as it has a little different taste to it.

- Freeze it: OK, this isn’t technically using it. But it’s keeping it until you can use it on one of the delicious dishes below. It freezes well in a air tight container.
- Meatballs: Make up a batch of these oven-baked meatballs but skip the gravy step and use your leftover gravy instead. Or make quick sausage meatballs like the ones in this soup to put into your gravy.
- Speaking of Soup: You can always add gravy to any soup. It’s going to give it a bit of body and lots of flavor. Get some broth going in a pot with some leftover meat and veggies.
- Pasta Sauce: Gravy is fantastic as a pasta sauce. I especially love it on egg noodles. Think Stroganoff. One way to do it is to heat up your gravy and then swirl in some sour cream.
- Shepherd’s Pie: This is the thing to do if you have leftover mashed potatoes too. Fry up some ground meat and add your gravy. You want it well moistened but not soupy.
- Fries and Gravy: Where I come from in Central Canada, whenever you order fries they ask if you want gravy. It’s a standard question. “An order of fries please.”
- Poutine: Have you had this? Have you heard of it? It’s insane. It’s a Canadian dish from the province of Quebec. You basically put hot French fries on a plate, top with cheese and then slosh on hot gravy.
- Newfoundland Fries: OK, so we Canadians like our fries and gravy. Clearly. Here’s another Canadian fry and gravy combo, this one coming from Newfoundland.
- Stew: It’s very simple to take your gravy, add leftover meat (or new cooked meat), vegetables and potatoes. If you don’t have enough gravy to justify a stew, you can make a basic sauce first.
- Hot Sandwiches: This is one of the best ways to use leftover gravy. Get out some good sliced bread. Top it with hot cooked meat (leftover roast chicken…mmmm) and then add your hot gravy.

- taco soup: This leftover taco soup with pulled pork, Express Taco Soup from Recipe Tin Eats looks mouth-watering! On the table in minutes.
- burritos or quesadillas: If you just have a little pork or pulled pork and want a burrito, you’ll probably need to stretch it with veggies, rice or beans.
- tamales: It doesn’t take a lot of pork to make tamales, and when you use leftover pork, half the work is done. If your pork isn’t already soft and shreddable, simmer until it breaks down) and proceed with the recipe.
- yucatan pork stew: This Yucatan Pork Stew can be made with the trimmings from your rack of ribs or leftover pork shoulder. Simmer on the stove or use your Instant Pot.
- chimichangas: Chimis are always good and can be made so many ways! Here’s my favorite Steak Chimichanga with a Chili Verde Sauce. Just substitute your pork.

- empanadas, calzones & pasties: Empanadas don’t need a lot of meat. Two cups of the leftover roast will do the trick. My Chipotle Pork Empanadas are marvelous.

- Pork Fried Rice. Stir fry vegetables you have on hand like carrots, broccoli, water chestnuts, cauliflower, mushrooms, or bamboo shoots. Add garlic, onion, and ginger (if you have ginger or you can leave it out) for flavor.
- Sweet and Sour Pork. Stir fry bell peppers, carrots, and pork. Add a small can of pineapple chunks. Make your own sweet and sour sauce or save time and use this one.
- Pork Quesadillas. You can add sliced bell peppers and or black beans to the quesadillas if you want to. These are great with mango salsa.
- Cuban Sandwich. Make this with ham, pork roast, mustard, swiss cheese, and pickles. Cuban rolls, Italian bread or hoagie rolls are all options for the bread.
- Chili. This is best if the pork is in cubes rather than shredded. Add canned crushed or diced tomatoes, and beans. I like black beans the best, but chili beans are good too.
- Barbequed Pork Sandwich. Buns make the best bread for barbequed sandwiches. Fried potatoes and a salad are great accompaniments to barbequed pork sandwiches.
- Pork burritos. Saute different colored bell peppers and onions for one or two minutes then add slivered or shredded pork. serve in tortillas with cheese and lettuce.
- Stuffed Sweet Potatoes. This is probably the easiest meal on the list. Bake the sweet potatoes, split them down the middle add warm cut up pork roast and a dollop of light sour cream.
- Moo Shu Pork (weeknight version) Stir fry sliced mushrooms, a bag of coleslaw mix, a few green onions and leftover pork roast. Season with soy sauce and toasted sesame oil.
- Barbequed Pork Pizza. Naan bread is my favorite pizza base for this, but you can use a premade pizza crust or even make your own crust if you have the time.
