LEFTOVER MASHED POTATO CAKES
I searched the internet for a recipe to use up some left over mashed potatoes. This is what I found and made. It's simple, easy, and a great way to use up left over mashed potatoes. This is one recipe that I always come to when I have leftover mashed potatoes. I once made these and I wasn't serving them right away, so I let them cool down then I froze them. A few weeks later I removed them from the freezer let them defrost and they were just as good. I have even added leftover chicken pieces and leftover meatloaf to this and it was yummy.

CHEESY LEFTOVER MASHED POTATO PANCAKES
Steps:
- Add the leftover mashed potatoes to a large bowl. They shouldn't be cold from the fridge if you can help it - let them stand at room temperature for 30 minutes before adding any other ingredients OR mash them up well again to break up the clumps with a warm potato masher.
- Add the cheese, flour, green onion, bacon or ham, eggs, garlic powder, thyme, and salt and pepper.
- Stir all the ingredients together very well until everything is fully incorporated and the mixture is smooth.
- Form the mixture into 12 patties about 1.5 centimetres thick.
- Heat a large non-stick skillet over medium heat and add a small amount of vegetable oil (around 1-2 teaspoons).
- Fry the patties in batches (don't overcrowd your skillet!) for about 5 minutes per side or until golden brown and completely cooked through.
- Enjoy warm with a dollop of sour cream, some more sliced green onions, and some extra cheese, if desired.

- Potato cakes. When cooled, mashed potato becomes pliable and easy to shape. It can be combined with fish – smoked haddock, trout, kippers and salmon work well.
- Mashed potato pie topping. As well as classic cottage pies and super satisfying shepherd’s pies, you can spread mash on lots of different fabulous fillings.
- Lemon & orange cake. Gluten-free baking requires some clever swaps. In this recipe, mashed potato is teamed in equal parts with gluten-free self-raising flour.
- Potato pancakes. From Irish boxty to Jewish latkes, the potato pancake is a universal treat. In this recipe for dense American-style pancakes, part of the flour is replaced with leftover mash.
- Croquettes. These breadcrumbed fritters are great for a tapas spread. Traditional Spanish ‘croquetas’ usually contain jamón, cheese and white béchamel sauce, but you can also make them with mashed potatoes.
- Gluten-free lemon drizzle cake. This bake doesn’t even require flour – it’s replaced with mash and ground almonds. The result is a moist and dense cake that’ll leave everyone guessing about the surprise ingredient.
- Vegetarian kofta. This North Indian dish is best made with cooled mash. The fried patties are filled with paneer cheese, nuts and lots of spices, and served with a ‘gravy’ of peanuts and tomatoes.
- A thickening agent. In very small quantities, mashed potato can be used to thicken traditional gravies and sauces. Use it cautiously as you would cornflour – and make sure it’s stirred in very thoroughly.
- Gnocchi. These Italian dumplings have a reputation as heavy comfort food, but try making a lighter version at home. This recipe states that for optimum results warm mash should be used, so reheat your leftovers in the microwave, if you like.
- Soup. While mash would work perfectly well in a traditional leek & potato soup, go off-piste with a more adventurous combination. This unconventional chowder recipe takes the classic seafood soup and bulks it out to something altogether meatier.

- Give It Away Now! -- If you hosted the holiday festivities, plan ahead and have resealable plastic bags and food storage containers handy to send guests home with goodies.
- Zip It Good -- Make sure to store all leftover foods in airtight containers; this keeps things fresher longer and gives you more time to finish off the stash.
- Chill Out -- Utilize your freezer -- soups, cooked vegetables, breads, pastries and cookies all freeze very well and can be thawed for later indulging.
- Recreate the Plate -- Serve small portions of leftover turkey, roast beef or ham along with lots of fresh fruits and vegetables for sandwiches, salads, wraps or a light main course.
- Veg Out -- Reduce portions of high calorie favorites by adding fresh or frozen vegetables to creamy soups or leftover mashed potatoes.
- Be Creative -- Combine herbs and roasted root vegetables along with a pinch of low fat cheese to make quesadillas, minis pizzas or omelets.
- Safety First -- Most foods will stay fresh for up to seven days, but if it looks or smells even a little funky, throw it out!

- Preheat the oven to 375°F. Coat a baking sheet with a liberal amount of cooking spray; set aside.
- In a medium mixing bowl, combine all ingredients and mix well with a fork or wooden spoon, being sure to thoroughly break up the mashed potatoes.
- Spray a 1/3-cup measuring cup with cooking spray. Using the cup, scoop up the potato mixture and level it off with your clean hand. Invert the filled cup over the prepared baking sheet to release the potato mixture.
- Continue to scoop, making 8 portions (you may need to re-spray the cup once or twice to help release the potato mixture). Gently press the portions with your palm to form pancakes about ¾-inch thick. Spray the tops of the pancakes lightly with cooking spray. Bake for 20 minutes.
