Once you master the risotto technique, you can make flavorful versions throughout the year. This summery version is based on red, ripe tomatoes from the garden, but if you want to up the tomato quotient, surround the finished dish with slices of multicolored heirloom varieties. Best as a first course or vegetarian main course, it could also pair with a main course - grilled fish, for instance.

Extra-virgin olive oil
1 large onion, diced (about 1 1/2 cups)
Salt and pepper
1 1/2 cups arborio or carnaroli rice
Pinch of red-pepper flakes
2 garlic cloves
1/2 cup white wine
2 cups diced ripe red tomatoes
3 cups boiling water or vegetable broth
1/2 cup grated pecorino or Parmesan, plus more for serving
4 medium tomatoes, in different colors, sliced
Chopped parsley, for garnish
Snipped basil, for garnish

Steps:

  • Put 3 tablespoons olive oil in a heavy-bottomed saucepan over medium-high heat, then add the onion, and season generously with salt. Add pepper to taste, and cook until softened, about 5 minutes.
  • Add the rice and cook the onions, stirring, until the onions are barely brown, about 2 minutes. Add red-pepper flakes, garlic, white wine and diced tomatoes, and cook until most of the liquid has evaporated, about 5 minutes more.
  • Add 2 cups boiling water and adjust the heat to a brisk simmer. Cook for 5 to 6 minutes, stirring well with a wooden spoon every minute or so.
  • When the liquid is absorbed, add remaining 1 cup water and continue to cook for another 5 minutes, until the rice is cooked, but the grains are still firm. Taste and adjust the seasoning, adding another splash of water if necessary to loosen the mixture. Turn off the heat, stir in the pecorino and 2 more tablespoons olive oil.
  • Transfer to a low, wide serving bowl. Surround the rice with tomato slices and season them with salt and pepper. Sprinkle with parsley and basil. Pass more grated cheese at the table.

Creamy Tomato Risotto with Crispy Garlic Crumbs image

A deliciously moreish Creamy Tomato Risotto topped with crispy garlic breadcrumbs - made with mainly store cupboard ingredients.

14 oz (400g) tin of chopped tomatoes
1 cup (240ml) vegetable stock
2 tbsp tomato puree/paste
1 tbsp olive oil
1 small onion (peeled and finely chopped)
1 clove garlic (peeled and minced)
3/4 cup (150g) Arborio rice
1/3 cup (80ml) white wine (optional, replace with stock if you'd prefer)
3 tbsp double (heavy) cream
4 tbsp grated parmesan cheese ((or vegetarian Italian-style hard cheese if you want it vegetarian))
1 tbsp fresh lemon juice
Good pinch of salt and black pepper
1 tbsp butter
1/4 tsp Maldon salt (or just a good pinch of normal salt)
2 cloves garlic (peeled and minced)
4 tbsp (30g/1 oz) panko breadcrumbs
1 tsp chopped parsley
Zest of half a lemon
3 tbsp (20g) parmesan ((or vegetarian Italian-style hard cheese if you want it vegetarian))

Steps:

  • First make your tomato based stock. Place the tin of chopped tomatoes into a large jug. Add in the vegetable stock and tomato puree and stir. Heat this stock in a small pan or in the microwave until almost boiling, then turn off the heat.
  • Heat oil in a large pan, add the onion and cook for about 5 minutes until the onion starts to go translucent, add in the garlic, stir and cook for a further minute.
  • Add in the rice and stir until the oil has coated the rice. Add in the wine and stir.
  • Wait for the wine to almost fully absorb (stirring regularly) and then add the tomato stock a ladle at a time, ensuring each ladle has almost fully absorbed before adding the next. Ensure you stir regularly.
  • After about 15-20 minutes you should have used up all of the stock. Have a taste of the rice. It should be softer, but still have a bit of a bite to it (it will soften up further when you add the cream). If the rice is still too hard, you can add in a ladle or so of water. Turn the heat down to very low.
  • Next make your crispy garlic crumbs. Heat the butter in a small frying pan until it starts to foam slightly.
  • Add the salt and the garlic and stir for about 30 seconds.
  • Add in the breadcrumbs and stir to ensure the butter covers all of he breadcrumbs. Allow to cook until the breadcrumbs start to brown a little, stirring often. Keep a close eye on them as they burn very easily. When ready, turn off the heat and add in the parsley, lemon zest and parmesan.
  • Now go back to your risotto. Add in the cream, parmesan, lemon juice and salt & pepper. Give everything a good stir, whilst on the heat, and then serve topped with the crispy breadcrumbs.

2 tablespoons olive oil
6 to 8 cups White Chicken Stock, recipe follows
1 onion, peeled and diced
3 roasted tomato halves, recipe follows, chopped
1 1/2 cups Arborio rice or other short-grain rice
4 roasted garlic cloves, recipe follows, peeled and chopped
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
1/4 cup freshly grated Parmigiano-Reggiano
4 pounds uncooked chicken bones or 4 pounds chicken legs, wings, and backs
1 onion, peeled and quartered
1 carrot, peeled and coarsely chopped
2 stalks celery, coarsely chopped
2 leeks, white parts only, trimmed and chopped
1 bay leaf
Peppercorns
3 to 4 sprigs fresh flat-leaf parsley
3 to 4 sprigs fresh thyme
20 ripe tomatoes, stems and cores removed
2 large heads garlic, divided into unpeeled cloves
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 sprigs fresh thyme

Steps:

  • Heat oil in a medium saucepan over medium heat until it slides easily across pan bottom. Add onion and cook, stirring occasionally, until soft, about 15 minutes. Add rice, salt, and pepper and cook, stirring, until rice is heated through and slightly translucent, about 1 minute.
  • Add enough stock to almost cover rice, about 2 cups. Simmer, stirring frequently, until rice has absorbed stock, 5 to 10 minutes. Stir in tomatoes, garlic, and another cup of stock. Cook, stirring, until rice looks dry, then add another cup of stock. Continue gradually adding stock, cooking, and stirring, until rice is tender and creamy, about 25 minutes. Stir in butter and cheese, season with salt and pepper, and serve.
  • Rinse chicken bones or chicken parts well. Remove the fat and skin if any, and place into a pot with just enough hot water to cover. Bring to a boil over medium-high heat and let boil for about 2 minutes. Drain the chicken and discard the water (this will not remove flavor, just the blood and much of the coagulated proteins that cause scum). Return the chicken to the pot, cover with fresh water and bring to a simmer over medium-high heat. Reduce the heat to medium and gently simmer stock for about 1 hour, skimming whenever fat or scum accumulates on the surface. Add more hot water, if necessary, to keep the level consistent.
  • After 1 hour simmering, add onion, carrot, celery, leeks, bay leaf, and peppercorns. Simmer for 15 minutes. Add parsley and thyme and simmer for an additional 15 minutes. Take pot off heat and strain stock. Cool, and refrigerate for up to 5 days or freeze for up to 4 months.
  • Yield: approximately 12 cups stock
  • Preheat oven to 350 degrees F. Cut tomatoes in half cross-wise (through the equator), then place tomatoes, garlic cloves, and olive oil in a large bowl. Season with salt and pepper and mix gently. Line 2 large, rimmed baking sheets with parchment paper or aluminum foil. Place tomato halves on baking sheets, cut side down, and pour any olive oil left in bowl over them. Divide garlic and thyme evenly between baking sheets. Bake until tomato skins loosen, about 20 minutes.
  • Remove and discard tomato skins. Pour any juices that have accumulated into a bowl and reserve. Return tomatoes to oven and reduce temperature to 275 degrees. Continue roasting, periodically pouring off and reserving juices, until tomatoes are slightly shrunken and appear cooked and concentrated but not yet dry, 3 or 4 hours more.
  • Remove tomatoes from oven and allow them to cool on baking sheets. Discard thyme. Transfer tomatoes and garlic to separate containers. Store tomatoes, garlic cloves, and reserved tomato juices in refrigerator for up to 1 week, or in the freezer for up to 6 months.
  • Yield: 40 roasted tomato halves, approximately 20 roasted garlic cloves, and 1 to 3 cups roasted tomato juice

2 tablespoons butter
1/3 cup chopped onion
2 teaspoons minced garlic
4 cups chicken broth, heated to simmer
1 cup arborio rice
1/4 cup grated parmesan cheese
2 medium ripe tomatoes, peeled, seeded and diced (I have also used home canned tomatoes but fresh are better)
6 medium basil leaves
salt and pepper

Steps:

  • In a 2-qt saucepan over medium heat, melt 1 tbsp butter. Add onions and cook until soft - about 4 to 5 minutes. Add garlic and cook 2 minutes. Add rice and stir to coat for 1 minute. Stirring constantly, add 1/2 cup of simmering chicken broth. As rice absorbs the liquid, continue to add broth, 1/4 cup at a time, until you've added 3 cups, about 15 minutes. Reduce heat to low and cook rice for an additional 20 to 30 minutes until tender, stirring occasionally. If rice starts to dry out, stir in more broth.
  • When rice is done, remove pan from heat. Let stand for 5 minutes. Stir in remaining butter and cheese. Fold in all but 3 tablespoons tomatoes. Season with sat and pepper to taste. Divide risotto evenly among 6 bowls. Garnish each bowl with remaining tomatoes and basil.

1 onion , very finely chopped
1 large garlic clove , crushed
175g risotto rice
400g can cherry tomatoes
600ml hot vegetable stock
30g parmesan or vegetarian alternative, grated
30g mascarpone
½ small bunch of basil , chopped

Steps:

  • Heat the oil in a large, heavy-based saucepan. Add the onion along with a pinch of salt, and fry for 10 mins or until beginning to soften and turn translucent, then add the garlic and fry for 1 min. Stir in the rice and cook for 2 mins.
  • Tip in the tomatoes and bring to a simmer. Add half the stock, cooking and stirring until absorbed. Add the remaining stock, a ladleful at a time, and cook until the rice is al dente, stirring constantly for around 20 mins.
  • Stir through the parmesan, mascarpone and basil, and season to taste. Spoon into bowls to serve.

A budget rice dish flavoured with rosemary, basil and sweet cherry tomatoes. An ideal midweek supper

400g can chopped tomato
1l vegetable stock
knob of butter
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 rosemary sprig, finely chopped
250g risotto rice
300g cherry tomato, halved
small pack basil, roughly torn
4 tbsp grated parmesan

Steps:

  • Tip the chopped tomatoes and half the stock into a food processor and pulse until smooth. Pour into a saucepan with the remaining stock, bring to a gentle simmer and keep over a low heat.
  • Meanwhile, place the butter and oil in the base of a large saucepan and heat gently until the butter has melted. Add the onion and gently cook for 6-8 mins until softened. Stir in the garlic and rosemary, then cook for 1 min more. Add the rice and cook, stirring, for 1 min.
  • Start adding the hot stock and tomato mixture about a quarter at a time. Let the risotto cook, stirring often, adding more stock as it is absorbed. After you have added half the stock, add the cherry tomatoes. After 20-25 mins, the rice should be creamy and tender, the cherry tomatoes softened and all of the stock should be used up.
  • Cover and leave for 1 min, then stir in the basil. Serve sprinkled with Parmesan and a good grinding of black pepper.

This is a favorite around our place. Best when you can use fresh sun-ripened tomatoes with lots of flavor and nice red color. Requires lots of hands-on time, but definitely worth it. This comes from a cookbook called "Risotto" which contains all vegetarian recipes.

4 cups vegetable stock
1/4 cup unsalted butter
1 tablespoon extra virgin olive oil
8 shallots, finely chopped
4 garlic cloves, crushed
1 1/2 cups arborio rice
1/3 cup white wine
8 tomatoes, seeded and coarsley chopped
1 1/2 cups parmesan cheese, grated
1/2 cup fresh basil leaf, torn
sea salt
black pepper

Steps:

  • Heat the stock in a saucepan until almost boiling, then reduce heat until barely simmering to keep it hot.
  • Heat the butter and oil in a deep skillet or heavy bottomed saucepan over medium heat.
  • Add the shallots and cook for 1-2 minutes, until soft but not browned.
  • Add the garlic.
  • Add the rice and stir with a wooden spoon until the grains are well coated and glistening, about 1 minute.
  • Pour in the wine and stir until it has been completely absorbed.
  • Add 1 ladle of hot stock and simmer, stirring until it has been absorbed.
  • Repeat.
  • After 10 minutes, add the tomatoes. Continue to add the stock at intervals stirring as before, until the liquid has been absorbed and the tomatoes and rice are tender, but still firm.
  • Reserve the last ladle of stock.
  • Add the reserved stock, parmesan, basil, salt and pepper.
  • Mix well.
  • Remove from heat, cover and let rest for 2 minutes.
  • Sprinkle with additional parmesan when serving.

1 onion, chopped
3 garlic cloves, crushed
300g risotto rice
1 vegetable or chicken stock cube, or use 700ml fresh stock
400g can cherry tomatoes
50g parmesan or vegetarian alternative, grated
small handful of basil, leaves picked
weighing scales

chopping board
sharp knife

large ovenproof pan with a lid
wooden spoon
oven gloves

Steps:

  • Before you get started, take a look at our weighing and measuring skills guide. Heat the oven to 200C/180C fan/gas 6. Melt the butter in a large ovenproof frying pan over a medium heat and fry the onion for 3-4 mins until starting to soften. Add the garlic and cook for another minute, stirring the whole time. Tip in the rice and mix well to coat in the buttery onion mixture.
  • If you're using a stock cube, boil the kettle. Crumble the stock cube into a jug and carefully measure in 700ml hot water from the kettle, stirring to dissolve the cube. If using fresh stock, warm this in a pan over a low heat until steaming.
  • Add the cherry tomatoes and hot stock to the rice, season with salt and pepper and stir to combine.
  • Cover with a tightly fitting lid and bake for 20 mins. Carefully remove from the oven using oven gloves and stir - the rice should be just cooked, with a little bite. The risotto may still look quite runny at this stage.
  • Stir through most of the cheese, replace the lid and leave to stand for 3-4 mins. Sprinkle with the rest of the cheese and the basil to serve.

Making risotto doesn't have to involve hours of stirring over the stove, as this easy tomato recipe proves

250g risotto rice
1 onion , finely chopped
50g butter
250ml vegetable stock
500ml carton passata
500g punnet cherry tomato
100g ball mozzarella , drained and cut into large chunks
grated parmesan (or vegetarian alternative) and shredded basil , to serve

Steps:

  • Tip the rice, onion and half the butter into a large microwave-proof bowl. Cover and cook in the microwave on High for 3 mins. Stir in the stock and passata, then continue to cook, uncovered, for 10 mins. Give it a good stir and mix in the tomatoes and mozzarella. Microwave on High for a further 8 mins until the rice is cooked and the tomatoes have softened.
  • Leave the risotto to relax for a few mins, then stir in the remaining butter, parmesan and basil. Season to taste and serve straight from the bowl.
