1/4 cup butter
1/3 cup flour
1/2 teaspoon salt
1 cup chicken broth
1 cup milk
2 cups cooked diced turkey
1/3 cup chopped onion
1 (3 ounce) can sliced mushrooms, drained
1/4 cup diced pimento
3/4 cup shredded monterey jack cheese

Steps:

  • In saucepan, melt butter.
  • Cook onion until tender.
  • Blend in Flour and salt.
  • Add chicken broth and milk all at once.
  • Cook, stirring constantly until think and bubbly.
  • Add Turkey, mushrooms and pimento.
  • Heat through.
  • Add cheese, heat and stir until melted.
  • Serve over biscuits or toast.

This is an excellent recipe for using up some of that leftover turkey. I am not sure if you can actually call this an A La King; however, that was the name that struck me, as I was assembling it. It is fairly easy to make, and only takes about 30 minutes from kitchen to table. FYI: This makes a brilliant filling for a turkey...

PLAN/PURCHASE
1 Tbsp sweet butter, unsalted
1 Tbsp olive oil, extra virgin
8 oz white or brown button mushrooms, sliced
1 stalk(s) celery, chopped
1/2 c yellow onion, chopped
1 c chicken or turkey stock, not broth, or an equal amount of leftover turkey gravy
3 Tbsp flour, all-purpose variety
1 c coconut milk, or regular milk
2 1/2 c leftover turkey (white or dark), cubed
1 c peas, frozen variety
1 large carrot, peeled and diced
salt, kosher variety, to taste
white pepper, freshly ground, to taste
ADDITIONAL ITEMS
long-grain white rice, for serving
OPTIONAL SPICES
cayenne pepper
fresh tarragon leaves
black pepper, freshly ground
flat-leaf parsley, freshly chopped
thyme, freshly chopped

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. Add the butter and olive oil to a large skillet, over medium heat.
  • 4. When the butter melts, give the pan a swirl, and add the mushrooms, celery, and yellow onion.
  • 5. Cook the veggies, stirring often, until they have softened, about 6 - 8 minutes.
  • 6. Chef's Tip: You might want to add a pinch of salt to the ingredients, to get the cooking process started.
  • 7. In a small bowl, whisk the flour and chicken stock together.
  • 8. Chef's Tip: If you have any leftover turkey gravy this is the perfect dish for it. Just substitute the gravy for the chicken or turkey stock, and reduce the amount of flour to one tablespoon. So yummy.
  • 9. Add the liquid to the veggies and stir to combine.
  • 10. Add the milk.
  • 11. Allow the ingredients to simmer until thickened, about 3 - 4 minutes.
  • 12. Chef's Tip: Do not allow the pan to come up to a boil... Just a nice simmer.
  • 13. Add the turkey, peas and carrots.
  • 14. Simmer until the carrots begin to soften, about 5 - 7 minutes.
  • 15. Chef's Note: As the pan is simmering, add a bit of salt and white pepper, to taste. And possibly some of the other spices that I suggested. Make it as spicy, or bland as you wish... After all... You are the chef :-)
  • 16. PLATE/PRESENT
  • 17. Serve over a pile of steaming long-grain white rice. Enjoy.
  • 18. Keep the faith, and keep cooking.

Turkey a la King is an easy one-pot meal that comes together in under 20 minutes. It's a deliciously creamy Leftover Turkey recipe that you'll want to make all year long.

1/2 cup butter (salted or unsalted)
1/4 cup red pepper (green or other colors work too)
1/4 cup green onions (may substitute other variety)
1 cup mushrooms (I use portobella but any variety will work)
3 tbsp flour
2 cups chicken broth (14.5 oz can works)
1/2 cup cream (half-n-half or milk will work)
1/2 tsp salt
1/4 tsp pepper
2½ cups turkey (cooked, shredded or diced)

Steps:

  • In the bottom of a large skillet, melt the butter. Add the red pepper, onion, and mushrooms. Saute until al dente or 5 minutes on medium-high.
  • Stir in flour. Continue stirring until smooth. Add the chicken stock.
  • Slowly drizzle in the cream, and stir using a spatula until the mixture starts to thicken.
  • Add the cooked turkey. Stir to combine. Add salt and pepper to taste.
  • Serve immediately.

Turkey à la King image

This is nursery food absolutely, soft and creamy, salty-sweet. It sits happily atop toast or biscuits, rice or waffles or noodles; in some households, it is wrapped within crepes: leftover turkey in gravy, essentially, with mushrooms and peas for heft. And as such it is comforting to eat, in much the same way that burrowing into a nest on the couch to watch football or a three-hankie movie is comforting. But it is also threadbare elegant with its whisper of sherry, vaguely French. You could of course make it with chicken instead of turkey, add diced ham or minced clams, shucked oysters or a handful of slivered pimiento. It's a very forgiving recipe. Make of it what you will.

6 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 3/4 cups turkey or chicken stock, low-sodium if store-bought
2 cups sliced mushrooms, ideally wild, approximately 4-6 ounces
1 1/2 cups chopped cooked turkey
1/2 cup heavy cream
1 cup frozen peas
2 tablespoons dry sherry
Kosher salt and freshly ground black pepper to taste
Finely chopped parsley, for garnish

Steps:

  • Make a roux. In a small saucepan set over medium heat, melt 4 tablespoons of the butter. When it begins to foam, sprinkle the flour over it, and whisk to combine, then continue whisking until it begins to turn the color of straw, approximately 7-10 minutes.
  • Slowly add 1 cup of the turkey stock to this mixture, and stir to combine. Add more stock to thin the sauce. Keep warm.
  • Set a large sauté pan over medium-high heat, and add to it the remaining 2 tablespoons of butter. When it begins to foam, add the mushrooms, and cook, until the mushrooms have released their moisture and begun to get glossy and soft, approximately 7-10 minutes. Add the turkey, then the warm sauce and cream, and stir to combine. Add the peas, then cook, stirring occasionally, until the mixture is hot and has thickened slightly, approximately 7-10 minutes.
  • Stir in the sherry, adjust seasonings and serve over biscuits or toast, rice or buttered noodles, garnished with the parsley.

  • Add thawed peas and chopped turkey meat, stir and season with salt and white pepper. Simmer an additional 2-3 minutes or until turkey meat is warmed.
