Leeks in White Wine image

When you cook leeks in wine, they develop great depth of flavor. This is my favorite way to prepare leeks on their own.

Number Of Ingredients 7

6 medium leeks, about 2 1/2 pounds, white and light green parts only
Salt
2 tablespoons extra-virgin olive oil
1 cup dry white wine, like pinot grigio or sauvignon blanc
Freshly ground pepper to taste
4 large garlic cloves, minced
2 tablespoons chopped flat-leaf parsley, mint or dill (or a combination)

Steps:

  • Cut the ends and the dark green leaves off the leeks, and then cut them in half lengthwise. Place in a bowl of cold water for 10 minutes, then run them under the faucet to remove any sand that may be lingering in between the layers. Cut into 2-inch pieces.
  • Bring a large pot of water to a boil, salt generously and add the leeks. Parboil for two minutes and drain.
  • Spoon the olive oil into a wide, lidded skillet, and place the leeks in the skillet in an even layer. Pour in the wine, and add salt and freshly ground pepper to taste, and the garlic. Bring to a boil, cover and reduce the heat to low. Simmer for 30 to 45 minutes, until the leeks are very tender but still intact and most of the liquid has evaporated.
  • Remove from the heat, and allow the leeks to cool in the juices left in the pan. Transfer to a serving dish. Taste and adjust seasonings. Sprinkle on the fresh herbs and serve.

Did you know that on March 1, St. David's Day, patriotic Welsh and those of Welsh descent wear a leek on their clothing? (I'm guessing not a REAL one but a pin??) Also, it is tradition that soldiers in the Welsh regiments eat a raw leek on St David's Day. Posted for ZWT II.

3/4 cup butter
6 -8 leeks
1/2 cup white wine
4 teaspoons kosher salt
1 teaspoon minced garlic
1 1/2 cups chicken stock
1/2 cup creme fraiche (make your own from the many recipes here on Zaar)
3 tablespoons fresh parsley, chopped
1 1/2 tablespoons lemon juice
3/4 teaspoon Tabasco sauce (or to taste)

Steps:

  • Clean the leeks using your tried & true method or trim off the root end and about 1/4 inch of the white base. Remove any ragged, coarse outer leaves and discard. Trim each of the darkest portion of the leaves down to the light green, more tender portion, leaving about 2 inches of green. Slice the leeks down the center and rinse under cold running water to remove all dirt and sand, being careful to get in between the leaves. Drain on paper towels and proceed with recipe.
  • Cut leeks in half lengthwise then cut into thin half moon slices. Place in a colander & rinse again. (leeks seem to be sand magnets).
  • Melt butter in a saucepan or large frying pan. Add leeks, wine, salt & garlic. Cook over low heat for 10 minutes.
  • Add chicken stock & continue cooking until leeks are soft, another 10-15 minutes.
  • Remove from heat & stir in the creme fraiche, parsley, lemon juice & Tabasco.

We try to use as much of the leek as possible, so instead of discarding the tougher green part of the leek, we fry it in butter and oil, low-and-slow style, to soften it. There is lots of lovely flavour in there. The sauce is simply white wine, chicken stock, a dash of lemon juice and seasoning. Together with the butter and oil, the ingredients emulsify together to make an unctuous sauce.

2 Large Leeks
3 Cloves of Garlic, finely sliced
1 Tbsp Olive Oil
30g Butter
150ml White Wine
300ml Chicken Stock
2 Tbsp Lemon Juice
Sea Salt Flakes
Freshly Ground Black Pepper

Steps:

  • Discard the tough outer leaves and trim the leeks first. Cut through the leeks to separate the green part from the white bit. Finely slice the green parts of the leeks. For the white bulb bits of the leeks peel away the tough outer layer then slice into 1-inch pieces. Rinse the leeks thoroughly to remove any trapped grit.
  • Melt the butter and olive oil in a large frying pan over medium heat. Once melted add the sliced garlic and allow to gently cook until softened. Add the sliced green leeks to the pan and cook on a low heat for about 15 minutes, or until soft.
  • Toss the white leeks into the pan and coat with the garlicky, leeky butter. Season with salt and pepper.
  • Tip the leeks into a baking tin followed by the lemon juice, white wine, and chicken stock. Place a square of baking paper on top and cover the pan with foil.
  • Bake in the oven at 180C for about 35-40 minutes, or until the leeks are fork-tender.

2 shallots, chopped
4 cloves garlic, chopped
6 sprigs fresh thyme
2 sprigs fresh marjoram
1 bay leaf
2 cloves
1 juniper berry
1 bottle dry red wine
1 cup demi glace (thickened concentrated enhanced stock), divided
2-ounces butter
Kosher salt and freshly ground black pepper, to taste
1 (1-pound) New York strip steak, cut in half, fat trimmed
3 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper, to taste
2 (5-ounce) pieces Chilean sea bass
1 Idaho potato, peeled, cut into a rectangle, sliced thin lengthwise on a mandolin, and held in a bowl of room temperature water
4 tablespoons, butter, divided
Kernels from 1 ear white corn
3 shallots, sliced thin
2 cups cremini mushrooms, washed, halved
4 tablespoons sherry vinegar
Kosher salt and freshly ground black pepper, to taste
4 tablespoons butter
3 leeks, halved, washed, and sliced into 1/2-inch pieces
1 shallot, sliced thin
Kosher salt and freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup chicken stock
1/4 cup heavy cream

Steps:

  • For the sauce:
  • Heat the olive oil in a large skillet over medium-low heat. Add the shallots and garlic to the pan and sweat them for 1 minute. Throw in the thyme, marjoram, bay leaf, cloves, and juniper berry and sweat for 1 minute. Add the red wine and let the mixture simmer until the wine is mostly cooked off and the sauce starts to thicken slightly, about 20 to 25 minutes. Stir in 1/2 cup of the demi glace, cook for 1 minute, then taste. If the sauce needs a little more richness, add more demi glace until it tastes evenly rich and smooth. Stir in the butter until it is just melted. Taste the sauce again and season with salt, and pepper, if necessary.
  • For the steak and turf:
  • Preheat the oven to 400 degrees F. Preheat a grill or cast iron pan over high heat.
  • Remove the steak from the refrigerator 30 minutes before cooking so the meat is at room temperature. This helps the meat to cook evenly. Coat the steak in 2 tablespoons olive oil. Season the steak with salt, and pepper. Sear the steak on both sides, about 2 minutes per side, until browned. Transfer the steak to the oven for 10 to 12 minutes. Remove from the oven and let rest before slicing. While the steak is in the oven, season the fish well with salt and pepper. Wrap thin slices of potato around each piece of fish, overlapping slightly. Do this with each slice overlapping the last by 1/4-inch until the fish is wrapped. Heat a nonstick pan over medium heat and add 1 tablespoon olive oil. Season the potato-wrapped fish with salt and pepper and add the fish to the pan with the potato overlap facing down. This will help seal the potatoes on the fish. Cook each side until the potato is crispy and fish is cooked through. Transfer the cooked fish to a paper towel. Keep warm.
  • For the mushrooms:
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add the corn to the pan and cook until lightly browned. Remove the corn from the pan to a bowl. Add another 1 tablespoon of butter and then stir in the shallots. Cook the shallots until softened, about 5 minutes. Remove the shallots to the bowl with the corn. Add in the remaining 2 tablespoons butter and raise the heat to medium-high. Add the mushrooms and cook until they start to brown, but are still firm. Add the sherry vinegar and stir. Simmer until reduced down and almost cooked out. Add the corn and shallots back into the pan. Stir to combine. Season the mushrooms with salt and pepper. Keep warm.
  • For the leeks:
  • In a large, deep saute pan over medium heat, melt the butter. Add the leeks and shallots and sweat the leeks and shallots for 3 minutes, stirring occasionally. Season the mixture with salt and pepper. Add the wine and bring to a simmer and let the wine cook all the way down until it is almost cooked out. Add the stock and repeat the reduction process. Add the cream and reduce the heat to medium-low and let simmer until the leeks and shallots are tender and the sauce begins to thicken. Season the mixture with salt, and pepper again, if needed.
  • To plate:
  • Slice the steak into thin slices. Make a bed of mushrooms on each plate. Top with slices of steak and a piece of fish. Spoon the leeks on the side. Top the steak and fish with the red wine sauce.

75 g unsalted butter, chopped, plus
50 g unsalted butter, for the mustard cream
2 tablespoons olive oil
8 medium leeks, thoroughly washed and trimmed
2 cups chicken stock or 2 cups vegetable stock
2 medium golden shallots, finely chopped
1 cup dry white wine
2 cups thickened cream
2 tablespoons Dijon mustard
sea salt
fresh ground black pepper

Steps:

  • Preheat the oven to 200ºC.
  • Spread the chopped butter and oil over the base of a roasting pan large enough to hold the leeks in one layer.
  • Add the leeks and roast for 10 minutes.
  • Remove the leeks from the oven and turn them over in the pan.
  • Roast for a further 10 minutes.
  • Remove the leeks from the oven and add the stock.
  • Roast for another 10 minutes or until the leeks have started to brown slightly and the stock has reduced.
  • Remove the leeks from the oven and keep warm on the serving dish by covering them with aluminium foil.
  • MAKING THE MUSTARD CREAM: Melt the remaining 50g of butter in a small sauté pan over a medium heat.
  • Add the shallots and sauté for 5 minutes or until softened.
  • Increase the heat a little, add the wine and slowly bring to the boil.
  • Simmer until the liquid has reduced by half.
  • Stir in the cream and simmer gently until the sauce begins to thicken.
  • Stir in the mustard.
  • Add half the chives and season to taste with salt and pepper.
  • Drizzle the leeks with the mustard cream and garnish with the remaining chives.
  • Serve.

1 3/4 cups water
6 tablespoons olive oil
2 large garlic cloves, minced
2 1/2 cups thinly sliced leeks (white and pale green parts only from about 2 large)
1/4 cup thinly sliced stemmed drained peperoncini (about 4 whole)
3 tablespoons chopped fresh oregano
2 teaspoons minced lemon peel
1/4 cup dry white wine
2 tablespoons fresh lemon juice
1 pound linguine
Chopped fresh parsley

Steps:

  • Place shrimp shells in medium saucepan. Add 1 3/4 cups water and a generous pinch of salt. Bring to boil over medium-high heat. Cover, reduce heat to medium-low and simmer until reduced to 1 cup liquid, about 15 minutes. Strain into measuring cup, pressing on shells to extract as much liquid as possible.
  • Meanwhile, heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add shrimp and sauté until opaque, about 2 minutes. Using slotted spoon, transfer to medium bowl. Reduce heat to low. Add remaining 3 tablespoons oil to same skillet. Add garlic and sauté until soft, about 1 minute. Stir in leeks, peperoncini, oregano, and lemon peel. Cover and cook until leeks are soft, about 3 minutes. Uncover; add wine, lemon juice, and shrimp-shell liquid. Increase heat to high and boil until reduced by half, about 2 minutes. Remove from heat.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup cooking liquid. Add pasta and shrimp to skillet with sauce and toss to coat. Add enough reserved cooking liquid to moisten if necessary. Season to taste with salt and pepper. Transfer to large bowl. Garnish with parsley.

1/4 cup Homemade Chicken Stock
1 tablespoon extra-virgin olive oil
4 six-ounce salmon fillets

Steps:

  • Melt butter in a medium skillet set over medium-low heat. Add leeks; simmer, stirring occasionally, 5 minutes. Add wine, and simmer until leeks are very tender, about 4 minutes. Add cream and 2 tablespoons chives; return to a simmer. Season with salt and pepper. Reserve half; transfer remaining mixture to jar of blender. Add chicken broth, and puree until leek sauce is smooth.
  • Meanwhile, heat oil in a large saute pan over medium heat. Season fillets with salt and pepper; place in pan skin side down. Cook until skin side is well browned, about 5 minutes. Turn over, and saute just until fish is cooked through, 3 to 6 minutes more; it should still be slightly pink in the center. Transfer to a platter.
  • Serve salmon with leek sauce. Garnish with reserved leek mixture, remaining chives, arugula, and lemon wedges.
