This recipe includes an easy salt-and-pepper crust. If you choose to use a frozen crust make sure it does not include sugar. You can also substitute button or crimini mushrooms for the chanterelles.

1 cup flour, plus more
flour, for rolling out dough
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
7 tablespoons butter, chilled and cut into small pieces
3 tablespoons butter
3 leeks, white and very light green parts halved, cleaned, and thinly sliced
1/2 teaspoon salt
1 lb chanterelle mushroom (cut into about 1-inch pieces)
2 teaspoons fresh thyme leaves
3 tablespoons heavy whipping cream
1/4 teaspoon fresh ground black pepper
1 cup grated gruyere cheese

Steps:

  • Make crust: In a medium bowl, mix flour, salt, and pepper. Rub butter into flour until most of it looks like cornmeal but some larger, pea-size pieces remain. Drizzle in 3 tablespoons ice-cold water while stirring quickly with a fork. Or, pulse flour, salt, pepper, and butter in a food processor until a coarse, cornmeal-textured mixture forms, then drizzle in ice water until dough comes together. Turn dough onto a large piece of plastic wrap and use wrap to press dough into a 1-in.-thick disk. Wrap in plastic wrap and refrigerate at least 30 minutes and up to 2 days.
  • Preheat oven to 375. Lightly flour a work surface. Unwrap dough; with a rolling pin gently roll it, turning dough 90 degrees between each roll, into a 12 inch circle.
  • Place rolled-out dough in a 9 1/2 inches tart pan. Trim edges flush with pan edges. Cover dough with a large piece of aluminum foil and weigh down with pie weights, dried beans, or uncooked rice.
  • Bake crust 20 minutes. Lift foil and weights off crust and bake until beginning to turn golden, about 10 minutes. Let crust cool to room temperature.
  • Meanwhile, make filling: Melt butter in a large frying pan over medium-high heat. Add leeks and salt and cook, stirring, until leeks are soft, about 3 minutes. Turn heat to high and add mushrooms. Cook, stirring constantly, until mushrooms have given off their liquid 5 to 10 minutes. Stir in thyme, cream, and pepper, then turn off heat and let cool to room temperature.
  • Spread half of the grated cheese over tart crust. Spread leek-mushroom mixture on top and sprinkle with remaining cheese. Bake until cheese is melted and golden, about 25 minutes. Let sit 10 minutes before cutting. Serve warm or at room temperature.

CRUST:
1 1/4 cups flour
1/2 teaspoon salt
1/2 cup butter
2 tablespoons ice water - (to 4 tbspns)
FILLING:
3 leeks - (to 4)
3 tablespoons butter
Salt to taste
6 ounces fresh morel mushrooms or other aromatic wild mushrooms
such as chanterelle or porcini
1/2 pound Gruyere, dry Jack or Parmesan cheese grated
1 bunch asparagus - (abt 16 spears)
30 small cherry tomatoes halved
20 large cherry tomatoes halved
Vegetable or olive oil cooking spray

Steps:

  • Crust: Combine flour and salt in bowl. Cut butter into flour with 2 knives or in food processor until butter is size of peas. Drizzle in water and mix just until dough comes together. Wrap in plastic wrap and chill 1 hour. Roll out dough into 13-inch circle on lightly floured surface. Place in 12-inch tart pan. Fold any excess dough back into pan and press against sides. Place piece of foil or parchment paper on top of crust and fill with pie weights, rice or beans. Bake at 375 degrees until edges barely begin to brown, about 20 minutes. Remove weights and foil or parchment paper. Filling: Note: If you can't find fresh morels, soak dried ones in hot water until they regain their shape. Cut all but 1 inch of green tops off leeks. Split down middle and rinse very well. Cut into 1/8-inch-thick slices. There should be about 4 1/2 to 5 cups sliced leeks. Melt 2 tablespoons butter in skillet over medium heat. Add leeks and season with salt to taste. Saute, stirring frequently, until soft and translucent, 8 to 10 minutes. Remove from skillet and set aside to cool. Quickly rinse mushrooms in cold running water. If using morels, halve lengthwise. If using chanterelles or porcini, cut into 1/8-inch-thick slices. Saute mushrooms in remaining 1 tablespoon butter over high heat until most of liquid evaporates, about 3 minutes. Remove from skillet and set aside to cool. Spread leeks in bottom of tart shell. Spread mushrooms over leeks. Cover with grated cheese. Place on baking sheet or piece of foil. Bake at 400 degrees until cheese begins to melt, 10 to 15 minutes. Remove from oven. Trim each asparagus spear to 5 1/2 inches. Place asparagus spears on top of cheese like spokes of wheel. Place cherry tomatoes in decorative fashion, cut-side up, on cheese. Lightly spray with cooking spray. Season to taste with salt. Bake at 400 degrees until cheese is bubbly and asparagus is tender, about 15 minutes. This recipe yields 10 servings. 1 3/4-ounce package dried chanterelle mushrooms
4 tablespoons (1/2 stick) butter
1/2 cup minced leek (white and pale green parts only)
1 large shallot, chopped
6 ounces portobello mushrooms, stems and gills removed, caps finely chopped
1/2 cup dry white wine
6 tablespoons fresh soft goat cheese (such as Montrachet)
3 tablespoons minced fresh parsley
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed

Steps:

  • Place dried chanterelles in small bowl. Pour enough hot water over to cover chanterelles; let stand until softened, about 30 minutes. Drain. Finely chop.
  • Melt 2 tablespoons butter in large nonstick skillet over medium-high heat. Add leek and shallot; sauté 2 minutes. Add 2 tablespoons butter, then portobellos and chanterelles; sauté until tender, about 5 minutes. Add wine; simmer until liquid is reduced by half, about 2 minutes. Add 2 tablespoons goat cheese; stir until slightly thickened, about 1 minute. Season with salt and pepper. Stir in 2 tablespoons parsley. Remove from heat.
  • Position rack in center of oven; preheat to 375°F. Line baking sheet with parchment paper. Roll out puff pastry sheet on floured surface to 12x12-inch square. Using 4-inch-diameter biscuit cutter or bowl as guide, cut out 4 pastry rounds. Using small cookie cutters, such as those with leaf shape, cut out decorative designs from remaining pastry, if desired. Place rounds on baking sheet, spacing apart. Spread 1 tablespoon goat cheese atop each. Spread mushroom mixture evenly atop each to within 1/2 inch of edge, dividing equally. Turn pastry edges upward slightly to hold topping in place. Place decorative pastry cutouts on baking sheet around galettes.
  • Bake until pastry is puffed and golden, about 15 minutes for decorative cutouts and 30 minutes for galettes.
  • Sprinkle galettes with 1 tablespoon parsley. Top with cutouts, if desired.

3 leeks , thinly sliced
375g pack ready-rolled puff pastry
150g pack soft cheese with garlic and herbs
4 rashers streaky bacon , snipped
100g grated emmental

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a frying pan, then gently fry the leeks until soft, about 5 mins. Cool. Unroll the pastry onto a baking sheet. Spread the soft cheese over the pastry to within 3cm of the edges. Scatter over the leeks, bacon and grated emmental.
  • Flip the edges of the pastry over the filling. Bake for 20 mins until golden.
