CHICKEN CHERRY BAGUETTE BURGERS - SEMI-HOMEMAKER RECIPE
Steps:
- Preheat oven to 350 degrees F.
- Bake bread according to package directions, then cool. Cut loaf horizontally.
- Combine ground chicken, cherries, cherry peppers, rosemary, and salt and pepper in large bowl. Stir well to combine. Shape into 4 patties. Mist a large nonstick fry pan with cooking spray. Place over medium heat until hot. Cook burgers for about 5 minutes per side, or until cooked through.
- Stir preserves into mayonnaise in small bowl. Spread on cut sides of bread. Cut the loaf into 4 equal sections. Top the bottom bun with burger then tomato slices and 2 pieces lettuce. Place top bun on lettuce.
BIG BLUE BUFFALO JALA' POPPERS
Steps:
- Preheat the oven to 350 degrees F. Spray a large baking sheet with nonstick spray and set it aside.
- In a small bowl, combine cheese wedges with 1 tablespoon of hot sauce and mix well. Add blue cheese, stir, and set aside.
- Halve the peppers lengthwise, and remove the seeds, stems, etc. Wash the halves and dry them very well. Evenly spoon and spread the cheese mixture into the pepper halves and set aside.
- Put the cereal and spices in a blender or food processor. Grind to a breadcrumb-like consistency. Transfer the crumbs to a plate and set aside.
- Pour egg substitute into a shallow bowl. Add remaining 1 tablespoon of hot sauce and mix well. One at a time, gently cover the pepper halves with egg mixture, shake to remove excess, and then coat entirely with crumb mixture. Repeat with the remaining pepper halves, evenly placing them on the baking sheet.
- Bake in the oven until the coating is crispy and the pepper halves have softened, 25 to 30 minutes. Enjoy!

Steps:
- Set the ice cream out on counter for about 30 to 45 minutes to soften, but not melt.
- Crush the cookies in a food processor along with the butter.
- Spray a 9 by 5-inch loaf pan with cooking spray and line it with waxed paper so that the paper covers sides and is taller than pan. The paper should fall over the sides of pan. Press the crushed cookies into the bottom of the pan to make a thick layer. Do not allow the cookies to go up the sides.
- Layer the ice cream in the order you prefer. (I usually do coffee, chocolate, and then the vanilla.) Smooth out each layer before pouring in the next flavor of ice cream to make a level surface for the next layer. Fill the pan with the last layer so that the ice cream is level with the sides of the pan.
- Cover with plastic wrap and place in the freezer until the ice cream is firm and solid, at least 5 to 6 hours. (I usually start this in the morning to serve as a dessert after dinner.)
- Once the ice cream is firm and solid remove the plastic wrap. Dip pan into warm water to make it easy to remove, but do not let water get inside the pan. Invert onto a decorative plate, using the waxed paper to ease the cake out of the pan. Remove the waxed paper and serve.

A great combination of jalapeno poppers and buffalo wings! I love experimenting, and this one was a keeper!

Steps:
- *Before starting, if your hands are sensitive to the heat of the peppers, please wear gloves. And always remember not to touch your eyes, face, nose, etc. as the juice can be very hot.
- Carefully cut jalapenos in half lengthwise leaving the stems on.
- With your finger or small spoon, scrape out seeds and membrane.
- In smal bowl, combine remaining ingredients except crumbled blue cheese.
- Spoon (or pipe) chicken mixture into pepper halves.
- Place on a greased cookie sheet and bake in 325 oven for 20 minutes for hot flavor, 30 minutes for medium, and 40 minutes for mild.
- During last 5 minutes of baking time, sprinkle each with blue cheese, or sprinkle over each when serving.

STUPIDLY SIMPLE TOMATO SOUP (SEMI-HOMEMADE)
This isn't a Sandra Lee recipe, but it's along the same lines. I was looking to increase my (bought) soup and add some protein. It turned out good, the kids liked it and it was so easy - I just threw it all in and simmered it. If you want more flavor, follow the 2nd set of directions. Use Pacific Foods Low Sodium Tomato Soup to reduce the sodium content. I haven't measured the servings yet, but it's at least 6 cups, more with the tomatoes.

- Stupidly Simple: Throw everything together (except half and half) in a pot and simmer for 5-10 minutes.
- Puree in a food blender, stir in half and half and serve, sprinkling individual servings with Parmesan cheese.
- More Involved: In a soup pot, saute the leek, tofu and tomatoes in a little bit of oil or butter until the leek is soft. Add remaining ingredients and continue as above.

BUFFALO POPPERS - FROM SEMI-HOMEMADE W/ SANDRA LEE
These looked so yummy on her show. I love they used honey instead of butter for a more healthful version of a classic. Note --- These are SUPER hot! I love spicy food and they were a bit spicy for me. Cut down the hot sauce/add extra honey if you're looking for a more "mild" flavor. :)

- Preheat oven to 350 degrees F.
- Slice the chicken tenders into cubes. Place the coating mix into a large bowl and add cubed chicken. Toss so that all of the chicken is evenly coated. Place the coated chicken onto a sheet pan and bake in the oven for about 20 minutes.
- Three minutes before the chicken comes out of the oven, combine hot sauce and honey in a large bowl. Microwave on high for 2 minutes.
- Add the chicken to the hot sauce and mix to ensure all the chicken is evenly coated with the sauce. Place on a platter with a small bowl of ranch and/or blue cheese dressing.
