Number Of Ingredients 10

4 pounds coarsely ground beef
1 large onion, chopped
2 cloves garlic, chopped
1 teaspoon oregano
1 teaspoon ground cumin
6 teaspoons red chile powder (or more for heat)
2 16-ounce cans tomatoes
2 cups hot water
Salt to taste
Grated cheddar cheese and sliced green onions for garnish

Steps:

  • Combine the beef, onion and garlic in a skillet and sear until the meat is lightly browned. Transfer this mixture to a large pot, add the remaining ingredients, and bring to a boil. Reduce the heat and simmer for an hour. When done, transfer the chili to a bowl and place it in the refrigerator. When the fat has congealed on top, remove it with a spoon. Reheat the chili and serve it as LBJ liked it--without beans and accompanied with a glass of milk and saltine crackers. Garnish with grated cheddar cheese and sliced green onions

My Dad loves to experiment in the kitchen. He learned to cook by spending hours in his mom's kitchen (Grandma Johnson) watching her. Dad is a believer that beans DO NOT belong in chili. This recipe is his own concoction.

1 1/4 lb lean ground beef (93/100 or 90/100)
1 large yellow onion, finely chopped
1 green bell pepper, finely chopped
2 clove garlic, minced
1 can(s) (14.5 oz) hunt's petite diced tomatoes
3 c water
1/4 tsp celery seed
1/4 tsp ground cayenne pepper (more if you want it spicier)
1 tsp cumin seed, crushed
1 small bay leaf
2 Tbsp chili powder
1/8 tsp dried basil, crushed
1 1/2 tsp salt
tabasco sauce, if desired

Steps:

  • 1. Brown meat in Dutch oven over medium high heat. Drain and put meat back into pot. Add remaining ingredients.
  • 2. Bring to a boil and reduce to a simmer, uncovered, until the sauce is as thick as desired, or about 3 hours. Add water as needed or desired.
  • 3. Add a few shakes of Tabasco sauce to taste, if any (be careful!).
  • 4. Serve with crackers, shredded cheese, chopped onions, etc. (whatever suits your fancy).

1 teaspoon dried oregano
1 teaspoon ground cumin
2 tablespoons chili powder, or to taste
1 1/2 cups canned tomatoes, cut up
2 to 6 dashes hot sauce, or to taste
Salt to taste

Steps:

  • Cook the meat, onion and garlic in a Dutch oven over medium heat, stirring, until lightly browned. Stir in the oregano, cumin, chile powder, tomatoes, hot sauce, salt and 2 cups hot water. Bring to a boil, lower heat and simmer, covered, for about 1 hour, skimming off the fat as it cooks.

3 cups onions, chopped
2 garlic cloves -- finely minced
2 tablespoons vegetable oil -- or bacon drippings
4 pounds beef -- coarsely ground or chopped
1 teaspoon oregano
2 teaspoons cumin seeds -- roasted in a small
skillet and ground
2 tablespoons chili powder -- or more to taste
1 3/4 pound canned tomatoes, crushed
salt, to taste
2 cups beef stock
1/3 cup masa harina

Steps:

  • In a large saucepan saute onion and garlic in oil until tender and translucent, about 10 minutes. Add the meat, breaking up clumps with a wooden spoon. Saute, stirring often, until browned, about 10 minutes, Sprinkle in the oregano, crushed cumin and chili powder. Stir to blend. Add the tomatoes, salt, hot beef stock (or boiling water), and stir in the masa harina. Bring to a boil, cover and let simmer, stirring frequently, about 1 hour. Check the meat for tenderness and taste for seasonings. Pinto or kidney beans cooked with a bit of ham make a fine accompaniment. Ladle chili over beans and serve.

1/2 lb bacon, fried and crumbled, see note
1 cup flour
4 (10 1/2 ounce) cans beef consomme
6 large onions, minced
8 ounces chili powder
2 teaspoons cumin powder
1 tablespoon oregano
2 tablespoons salt
6 lbs sharp cheddar cheese, cut in chunks
taco chips or tortilla chips

Steps:

  • Note reserve Bacon drippings.
  • Combine beef and bacon and brown.
  • Blend the flour in one fourth of the bacon drippings, stirring until smooth. Slowly add the consumme, stirring until thickened. Add thickened mixture to beef and blend well.
  • Add onions, chili powder, cumin, oregano, and salt. Stir well.
  • Simmer covered, 1 1/2 hours or until dip consistency. Add cheese until well blended. Refrigerate for several house before serving.
  • Serve with taco or tortilla chips.
