This Fried Mozzarella is about as good as they come. Go with quality fresh mozzarella, fresh breads combined with panko, Parmesan and herbs, and serve it with our incredible fresh marinara, and you won't believe how amazing this iconic appetizer is.

16 oz fresh mozzarella, cut into 1/4-inch to 1/2-inch medallions, or 1/4-inch sticks
Vegetable oil, for frying
1 cup all-purpose flour
2 large eggs, slightly beaten
3 pieces country white bread, crusts removed, torn into pieces
1 cup panko bread crumbs
1/4 cup fresh Parmesan cheese, grated
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tsp dried oregano
1/2 tsp Kosher salt
1 pinch freshly ground black pepper ((link to recipe below))
Fresh marinara sauce, for serving

Steps:

  • Pour enough oil into a sturdy skillet so it's about 2 inches deep. Heat to 350°F, using a candy thermometer to accurately gauge temperature, or toss a small piece of bread in the hot oil and when it sizzles and starts to turn brown, it's ready.
  • Make the breadcrumb mixture by placing the white bread, panko, Parmesan cheese, garlic, parsley, oregano, salt and pepper into the bowl of a food processor and pulse until well combined and bread has become coarse crumbs.
  • Set up a dredging station by taking three medium-sized bowls and placing the flour in one, the eggs plus a tablespoon of water in another, and the prepared breadcrumbs in the remaining bowl.
  • Dredge each mozzarella piece first in the flour, then into the egg bath (shaking off excess), and then into the breadcrumbs. Use your fingers to help the bread crumbs adhere to the cheese. For extra crispy fried mozzarella, repeat the egg and breadcrumbs steps once again. Set breaded cheese pieces on a plate as you continue to work.
  • Carefully add the breaded cheese pieces to the hot oil and fry until golden, about 2 to 3 minutes. Do this in batches, don't over crowd the pan! Drain on paper towel-lined plate.
  • Serve immediately with fresh marina.

Need a quick and easy appetizer for unexpected company, football games or just sitting around watching a good movie on a rainy day? Tuck this one away and you'll be all set. I've included my recipe for homemade marinara, but feel free to use your own recipe or your favorite store-bought. Prep time does not include time needed to marinade.

MARINADE
- 3-4 tb. olive oil
- 2 cloves of garlic, minced
- 1/4 tsp. dried basil or italian seasoning
- pinch of salt
- a couple grinds of freshly cracked pepper
REMAINING INGREDIENTS
- 8 mozzarella slices, sliced 1/4" thick
- 1/3 cup flour
- 1 egg, beaten
- 1/2 cup panko bread crumbs
- 1/2 cup italian bread crumbs
- peanut oil for frying (you can use whatever you wish. i just find for frying, peanut oil does the best job for me.)

Steps:

  • Combine first 5 ingredients in small bowl. Place 1/4" Mozzerella slices in small baking dish and cover with marinade. Cover with saran wrap and refrigerate for 2-3 hours.
  • Set up a breading station- Bowl One: flour Bowl Two: whisked egg Bowl Three: Panko mixed with Italian breadcrumbs Heat oil. Test with a small piece of bread to make sure it's hot enough. Dab off excess oil with paper towel. Roll in flour until all sides are completely coated with a light coating of flour. This keeps your breading from sliding off. Then egg, then bread crumbs making sure to coat completely. If not covered completely with bread crumbs, you can lose your melty cheese!
  • Fry 2-3 minutes or until cheese is melty and crumbs are golden brown. Drain on paper towels and lightly salt, if desired. To serve, sprinkle with a little chopped fresh Italian parsley. 1 1/2lb fresh mozzarella, sliced
4 cloves of garlic, sliced thin
1 teaspoon red pepper flakes, crushed
1 teaspoon fresh oregano, chopped
Salt
Black pepper
Extra virgin olive oil

Steps:

  • In a shallow dish, fan mozzarella. Scatter sliced garlic around on mozzarella. Do the same with the red pepper flakes and the oregano. Sprinkle salt to taste and ground pepper over and around to taste. Drizzle olive oil over mozzarella. Let dish rest for one hour at room temperature for best flavor.

Cheesy Bread With Marinara image

Soft, pillowy bread stuffed with melty mozzarella and dipped in a marinara sauce makes for an easy, crowd-pleasing appetizer or side dish. Here, store-bought sauce is doctored up with a few pantry staples, including dried oregano, garlic and red-pepper flakes, but you can use homemade sauce, too. Slice the bread or let everyone tear off pieces, like they would a fresh baguette, for a more spontaneous, cheese-pull moment. To round out the spread with something green, roast broccolini, broccoli or kale on a sheet pan in the oven as the bread cooks, then dip alongside. For a crunchier exterior, unwrap the bread and cook uncovered for the last 5 minutes.

1 Italian loaf or rustic baguette
5 tablespoons olive oil
1/2 pound mozzarella, thinly sliced
Kosher salt and black pepper
3/4 teaspoon dried oregano
2 large garlic cloves, grated or minced
1/2 teaspoon red-pepper flakes
1 3/4 cups marinara sauce
1/2 teaspoon sherry vinegar (optional)
2 tablespoons grated Parmesan

Steps:

  • Heat the oven to 400 degrees. Halve the loaf lengthwise almost all the way through, leaving it attached on one side. Open it, lay it flat and brush the insides with 2 to 3 tablespoons olive oil. Tuck in the mozzarella, then sprinkle with salt and ¼ teaspoon oregano. Close, then wrap tightly with foil. Place on a sheet pan, and bake for 20 minutes.
  • Meanwhile, in a medium saucepan, heat the remaining 2 tablespoons of oil, garlic, remaining ½ teaspoon oregano and red-pepper flakes over medium-high, stirring occasionally, until fragrant, about 1 minute. Pour in the marinara sauce and adjust the heat to bring it to a gentle boil, then stir in the sherry vinegar, if using. Reduce the heat to maintain a gentle simmer, stirring occasionally, until the bread is ready, about 15 minutes more. Season to taste with salt and pepper.
  • Transfer the sauce to a bowl or serve from the pan, and top with grated Parmesan. Slice the bread, or let everyone pull the pieces apart themselves. Keep wrapped until ready to eat.

1 1/2 cups Italian-style dried breadcrumbs
1 1/3 cups freshly grated Parmesan
1 teaspoon salt
2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
4 cups Marinara Sauce, recipe follows
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 (32 ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
  • Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

Steps:

24 egg roll wrappers
24 pieces string cheese

Steps:

  • In a large saucepan, saute onion and garlic in oil. Add the tomatoes, tomato paste, water, sugar, salt and bay leaf. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened., Meanwhile, place an egg roll wrapper on a work surface with a point facing you. Place a piece of cheese near the bottom corner. Fold bottom corner of wrapper over cheese; roll up just until cheese is enclosed. Fold sides of wrapper over top. Using a pastry brush, wet the top corner with water.
