Time 50m

Yield 16

Number Of Ingredients 13

1 box Betty Crocker™ Super Moist™ spice cake mix
1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup butter, softened
1/4 cup milk
1 egg
1 teaspoon Betty Crocker™ neon orange gel food color
1/4 cup butter or margarine, softened
4 oz (half of 8-oz package) cream cheese, softened

Categories     Meat

Time 1h

Yield 10 biscuit cups, 10 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground beef
1 onion, chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 (15 ounce) can tomato sauce
1 cup shredded carrot
1 (6 ounce) can chopped black olives, drained
1 (12 ounce) can refrigerated biscuit dough
10 slices American cheese

Steps:

  • Preheat oven to 400°F (200°C). Grease 10 muffin cups.
  • Place ground beef and onion in a large skillet over medium heat; cook and stir until the meat is browned and crumbly, about 10 minutes. Drain excess grease. Stir in the chili powder, cumin, salt, garlic powder, tomato sauce, carrot and olives, and bring the mixture to a simmer. Cover the skillet, and cook until thickened and the carrot is tender, about 20 minutes. Stir occasionally.

Press the circles of biscuit dough into prepared muffin cups; bake in the preheated oven until the cups are lightly browned, about 10 minutes. Remove the biscuit cups from the pan and place onto a baking sheet.
  • Cut the 10 slices of American cheese into 3-inch circles and cut jack-o'-lantern faces into the circles with a sharp paring knife. Chop remanants of cheese and mix into the meat mixture. Fill the biscuit cups with the meat mixture, and place a cheese face on top of each.
  • Return to the oven and bake just until cheese begins to soften, 3 to 5 minutes.

HALLOWEEN JACK-O-LANTERN PASTA DINNER

Halloween Jack-O-Lantern Pasta Dinner image

I've made a variation of this for the past two years for Halloween dinner. We enjoy carving the 'pumpkins' and eating the 'worms'.

Provided by Air Force Wife

Categories     Spaghetti

Time 30m

Yield 6-8 peppers, 6-8 serving(s)

Number Of Ingredients 3

6 -8 medium orange bell peppers, washed and dried
8 ounces orzo pasta or 8 ounces spaghetti
1 (25 ounce) jar pasta sauce, warmed (I love Mezzetta Napa Valley Bistro Tomato and Basil sauce)

Steps:

  • Carve each bell pepper as you would a Jack-O-Lantern, cutting the top off and hollowing out the inside before carving a face.
  • Discard the tops.
  • Cook pasta according to package directions.
  • Drain Pasta.
  • Mix pasta with warm sauce and spoon into each individual pepper, making sure the pasta 'oozes' out the eyes, mouth, and top of pepper.
  • Serve with breadstick 'bones'--tie a knot at the end of each breadstick, bake, and enjoy!

Provided by My Food and Family

Categories     Home

Time 48m

Yield 8 servings

Number Of Ingredients 8

1/2 cup mashed sweet potatoes
1/2 cup rinsed canned black beans
1/4 cup frozen corn, thawed

1 drop each red and yellow food coloring

Steps:

HALLOWEEN JACK-O'-LANTERN BEEF PIES - REVIEW BY GOERLIE23
We really enjoyed making this recipe! So much easier and cleaner than carving pumpkins. Only, I used 1 pound of ground beef instead of 1.5 and it was still too much meat for the biscuit "cups." I kinda piled it on top. It sounds like the ramekin idea might be best. The cups were very hearty! I was surprised at how full I was.

HALLOWEEN JACK-O'-LANTERN BEEF PIES - REVIEW BY MINA Y
This was a fun way to make a dinner even a picky child will want to eat! I followed it exactly as written with the exception of leaving out the olives (personal taste). The filling was very tasty and would be easy to experiment with to fine-tune everything to your taste. The biscuit dough has a few issues: if you roll it thinly, it fits nicely in the cup and allows more filling, plus a …

HALLOWEEN JACK-O'-LANTERN BEEF PIES - REVIEW BY SANDRA
These are so yummy and easy to make! But they're a bit tedious and make quite a lot of mixture. I had at least 2 cups left over. Maybe use it for spaghetti another day, or the next time I make this, I'll use some sort of beans to weigh down the biscuit dough while they're baking/puffing up.
