LAZY GIRL COBBLER
I make this all the time and take it to Potlucks at church. People love this so I'm always taking my dish home empty. When I make this with peaches I add about 1/2 teaspoon of cinnamon. You can also make this with self-rising flour but you have to leave out the baking powder and salt.

Steps:
- Melt butter in a 13x9-inch pan.
- In a bowl combine flour, one cup of the sugar, baking powder and salt, and 1 cup milk.
- Pour the contents of the bowl in 9x13-inch pan but do not stir.
- Combine the four cups of berries and one cup of sugar in a sauce pan and heat to boiling.
- Put this on top of batter but do not stir.
- Bake at 375 degrees for 30 minutes or until browned on top.

LAZY PEACH PIE
This is quick and easy. Great w/ some ice cream. I haven't made this for quite sometime, and my recipe is torn at the bottom, so I approximated the exact cooking time. If you make this before I do again, please let me know if cook time is accurate.

Steps:
- Preheat oven to 350.
- Place butter in a 8" glass square pan and microwave until butter is melted; evenly distrubute melted butter on bottom of pan.
- In a small bowl, mix together SR flour, sugar, and milk and evenly pour over melted butter.
- Place peach slices evenly over batter and pour reserved peach juice over peaches.
- Combine cinnamon, nutmeg and brown sugar in a small bowl, and evenly sprinkle on top.
- Bake in 350 degree oven about 30-45 minute or until brown.

- For the crust: Put the frozen rolls on a baking sheet. Cover with a tea towel and let thaw and rise for 2 to 3 hours.
- For the filling: Add the oil to a large skillet and set it over medium heat. Cook the peppers and onion until soft, about 5 minutes. Add the red pepper flakes and garlic, then cook for another minute. Transfer to a bowl or plate and set aside.
- Put the same skillet over medium-high heat, add the beef and cook, breaking up any lumps. Add the chili powder, cumin and 3/4 teaspoon salt and cook until the meat is no longer pink, 5 to 7 minutes. Add the tomato paste and 1/4 cup water and stir until combined. Mix in the cooked vegetables. Transfer to a bowl and set aside to cool. When the meat is cool, add the cheese and parsley, then season with salt and pepper.
- Preheat the oven to 400 degrees F.
- To form: Roll out each dinner roll on a lightly floured surface into a 4-inch circle about 1/4 inch thick. Put 1 1/2 tablespoons of the meat mixture in the center of each circle. Brush around the outside of the circles with the egg wash and fold over the dough to form half-moon shapes. Press the edges together and crimp them with a fork. Put on a parchment-lined baking sheet and brush the tops with the egg wash.
- Bake until golden brown, 10 to 12 minutes.
EASY BOOZY LEMONADE PIE
Make sure the sorbet is super soft (really!) so that it can be blended together with cream and vodka and then refrozen. This makes for a refreshing and boozy pie perfect for any weather.

- Put the sorbet, sweetened condensed milk and vodka in a medium bowl. Beat with an electric mixer on low until smooth and no lumps of frozen sorbet remain, 1 to 2 minutes.
- Put the cream in another medium bowl and beat with an electric mixer until it is thick and holds soft peaks, 1 to 2 minutes. Fold the whipped cream into the lemon sorbet mixture and pour into the pie crust. Freeze until set, about 4 hours and up to overnight.
- Serve each slice garnished with a dollop of whipped cream and a lemon jelly fruit wedge.
LAZY WOMAN'S CHEESE PIE
Steps:
- Preheat the oven to 430?F (225°C). Line a baking sheet with parchment paper and brush with olive oil. Make the egg wash: In a bowl, whisk together the milk and the eggs. If using homemade phyllo: Stretch or crimp one sheet of phyllo as necessary to fill the baking sheet. Brush with olive oil and sprinkle with half of the feta or ricotta. Pour half of the egg wash over the feta or ricotta and sprinkle with herbs and Mara? pepper, if you like. Lay the second sheet of phyllo over the egg wash and brush with olive oil. Crumble more feta or ricotta on top and drizzle with the remaining egg mixture. Sprinkle with more pepper, to taste. Proceed to baking. If using frozen phyllo: Lay one sheet of frozen phyllo on the baking sheet, brush with olive oil, and sprinkle with half the Parmesan, then lay one more sheet on top and brush again with olive oil. Sprinkle half the feta mixture over the second sheet. Place the third sheet on top, brush with olive oil, sprinkle with the rest of the Parmesan, then lay the last sheet on top and brush again with olive oil. Crumble more feta on top and drizzle with the remaining egg mixture. Sprinkle with more pepper, to taste. Proceed to baking. Bake on a rack in the lower part of the oven for 25 minutes, or until golden brown and crisp. Check to make sure the pie is well browned at the bottom. If the top browns too quickly, cover loosely with foil and continue baking. If it is well browned underneath but the top is not yet crispy enough, heat the broiler and bake for a few minutes right under the broiler. Serve at once, cutting pieces with a pizza wheel. - Put baking chips and contents of can of frosting into a microwave-safe bowl.
- Heat on high for 1 minute at a time, stirring in between to prevent scalding.
- Keep stirring and reheating until melted.
- Pour into a well greased 8x8 pan and put in the refrigerator until set.
- Cut into pieces (the size depends on your mood at that particular moment!) and enjoy!

- Melt the butter in a baking pan.
- In a bowl, mix together the flour, sugar, baking powder, salt, and milk and pour over butter.
- Cover the batter with fruit and do not stir. The batter will rise and absorb the fruit flavor.
- In a preheated 350 oven , bake the pie for 1 hour and serve it warm with whipped cream or ice cream.
LAZY WOMAN'S PIE
Steps:
- Preheat oven to 350 degrees.
- 1. In a 9 x 13 inch cake pan, pour both cans of pie filling spreading evely.
- 2. Take the dry cake mix and pour it over the cherry pie filling evenly.
- 3. Pour the margarine evenly over the cake mix.
- 4. Add walnut if desired.
- 5. Bake for 45 minutes or until golden brown.
- 6. Let cool, serve with Cool whip.
