EASY LAZY LASAGNA
Fast, easy and delicious! You can make this recipe with different kinds of noodles and vegetables and also you can add more or less hot peppers (or Tabasco!) if you enjoy spicy food!

Steps:
- In a large pot of boiling water, cook pasta until tender but firm; drain.
- In a large skillet, cook beef over medium-high heat until browned. Add onions and carrots; cook for 3 to 4 minutes. Stir in pasta sauce and Italian seasoning (oregano or basil). Remove from heat and set aside.
- In a bowl, combine ricotta cheese, egg and 1/2 cup of the mozzarella cheese. Set aside.
- To Assemble: Spread half of the meat mixture on bottom of greased 13x9-inch baking dish. Top with all of the pasta. Spread all of the cheese mixture over pasta. Top with remaining meat mixture. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
- Bake in preheated oven, uncovered for 35 to 45 minutes or until bubbling.
- Let stand for 10 minutes before serving.
5 MINUTE 4 INGREDIENT LAZY WOMAN'S LASAGNA
Steps:
- Boil your lasagna noodles. Or use the ready to bake noodles.
- While noodels are boiling, spread a thin layer of spaghetti sauce (I prefer using Hunt's Garlic and Herb or Ragu's Garden Vegetable) in a 9 X 13 pan.
- After noodles are cooked, lay 3 noodles on top of your spaghetti sauce (I typically lay my noodles on a paper towel to dry of excess water before making my lasagna)
- Layer these noodles with a few spoonfuls of cottage cheese, spaghetti sauce, and mozzarella cheese (in this order)
- Lay 3 more noodles on top of mozzarella cheese and continue layering with cottage cheese, spaghetti sauce, and mozzarella cheese (I typically do around 5 layers)
- Finish lasagna by spreading a thin layer of spaghetti sauce over top layer of noodles and covering with mozzarella cheese (sometimes I sprinkle Italian seasoning or oregano on top)
- Cover with tin foil and bake for 30 minutes (leave tin foil on for all but last 10 minutes, this way the cheese doesn't fry on top)

- In a large skillet over medium-high heat, saute the hamburger, sausage and garlic until brown. Drain off the excess fat. Add the tomatoes with their juice, tomato paste, 1/2 teaspoon salt and some freshly ground black pepper. Stir together well. Simmer over low heat, uncovered, for 45 minutes, stirring occasionally.
- Meanwhile, bring a large pot of water to a boil. Add the olive oil and a dash of salt. Cook the lasagna noodles according to the package directions until al dente. Drain the noodles and lay them flat on a piece of aluminium foil to keep their shape.
- Preheat the oven to 350 degrees F.
- Grate the mozzarella cheese and set aside.
- Cut the basil into a chiffonade by stacking the leaves on top of one another, rolling them tightly and then cutting across. Finely chop the parsley. Add half the herbs to the meat mixture and stir together. In a medium bowl, combine the other half of the herbs, the cottage cheese, 1/2 cup of the Parmesan and the eggs, and stir together well.
- Now let's assemble the lasagna! Begin by laying 4 lasagna noodles in the bottom of a deep rectangular baking pan; the noodles should slightly overlap. Spoon half the cottage cheese mixture onto the noodles; spread to distribute evenly. Sprinkle half the mozzarella on top of the cottage cheese mixture. Spoon just under half the meat mixture on top of the mozzarella, and spread evenly, being careful not to disrupt the layers below. Now repeat the process, beginning with a layer of lasagna noodles, followed by the cottage cheese mixture, followed by the mozzarella and ending with a thick layer of the meat mixture.
- Sprinkle the remaining 1/2 cup Parmesan over the top. Bake until the lasagna is hot and bubbly, 35 to 45 minutes. Allow to stand 10 minutes before cutting into squares.
LAZY NO-BAKE LASAGNA

- Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
- Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.
EASY LAZY LASAGNA

- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.

- Preheat oven to 400°. Cook lasagna noodles according to package directions. Meanwhile, in a large bowl, mix ricotta cheese, 1/2 cup mozzarella cheese and Parmesan cheese. LAZY MAN'S (OR LAZY MOM'S LASAGNA)
Steps:
- Preheat the oven to 350 degrees F.
- Brown the beef with the optional onion, optional garlic, herbs, and salt and pepper in a large, ovenproof skillet (I use one that's made of castiron). When the meat is thoroughly cooked -- it will take 8 to 10 minutes -- drain off any fat and take everything out of the pan. Now put the still-frozen ravioli into the pan, breaking them up if they are clumped. Spread the ground beef mixture evenly over the ravioli, and ladle the spaghetti sauce evenly over the ground beef mixture. Over medium heat, without stirring, cook until the ravioli is heated through and beginning to brown on the bottom -- about 10 minutes.
- Take the skillet off the heat, lay the provolone slices over the ground beef mixture, and sprinkle the whole thing with the Parmesan. Bake for 10 minutes, or until the cheese is melted. Serve hot.
LAZY LASAGNA WITH LAMB RAGU, SPINACH AND RICOTTA

- For the ragu: Heat 2 tablespoons extra-virgin olive oil in a Dutch oven over medium-high heat. When the oil smokes, pat the ground lamb dry and add to pan, brown to caramelize the meat, season with rosemary, marjoram, cloves, salt, and pepper. Once the meat has browned, add the onion, carrot, garlic and cook to soften 10 minutes more, stirring frequently. Stir in tomato paste, cook 1 minute or until fragrant. Stir in stock then wine, reduce heat to low and gently simmer.
- In salted boiling water, undercook the pasta by 2 minutes from package directions. Reserve a cup of starchy pasta liquid.
- Meanwhile, heat the butter in a saucepot over medium heat, whisk in 2 tablespoons flour, 1 to 2 minutes, whisk in the milk and simmer to thicken. Season the bechamel sauce with salt, pepper, and nutmeg, to taste.
- Drain the pasta and add back to the pasta pot. Toss the pasta with the lamb ragu and some of the reserved starchy cooking water to loosen. Pour the pasta into a large casserole. Scatter the spinach around on top of pasta.
- Combine the ricotta with mint and/or parsley, dot the pasta with ricotta evenly around the casserole. Pour the bechamel sauce in even layer around the casserole and top with grated cheese. Cool and store for make-ahead meal. Reheat in 350 degree F oven, covered, for 30 minutes then raise the heat to 425 degrees F and bake uncovered, until brown and bubbly, 15 to 20 minutes.
- To serve immediately, transfer the casserole to a preheated 425 degree F oven and bake about 15 to 20 minutes, to brown.
LAZY MAN'S LASAGNA
Steps:
- To assemble:
- Preheat the oven to 400 degrees F. Cover the bottom of a deep baking dish with a layer of Bolognese sauce. Lay out the uncooked pasta sheets over the sauce until they cover the baking dish entirely. Cover the pasta with another generous layer of Bolognese sauce. The liquid from the sauce will cook the dried pasta so be sure to add enough sauce. Drizzle the bechamel sauce and sprinkle the mozzarella on top, until both are distributed evenly. Add another layer of dried pasta, laying the sheets in the opposite direction. Repeat the process of adding sauces, mozzarella, and pasta for another 2 to 3 layers or until two-thirds of the baking dish's depth is filled. Top off the last layer of sauces and mozzarella with a generous sprinkle of the Parmigiano cheese.
- Place the pan in oven for approximately 40 minutes and let rest for 20 minutes before serving.
- In a hot saucepan, melt the unsalted butter with the olive oil, and add the carrots, onion, celery, and chili pepper. Cook the ingredients over medium heat, until they are soft. Add a sprig of rosemary. Add the ground beef and pork, and cook until golden brown. Remove the rosemary sprig, and add the white wine. Let reduce. Add the tomato sauce or La Salsa di 5 Minuti, and let simmer on low heat for 1 hour. Before serving, add basil leaves and salt to season. Serve immediately.
- Salsa di 5 Minuti:
- Heat olive oil in a saucepan and add onion, garlic, and chili peppers. Gently fry ingredients together. Add pureed plum tomatoes to saucepan. Simmer on low to medium heat for 10 minutes.
- Season with salt to taste. Add basil leaves at the very end.
- Bechamel:
- In a saucepan, heat up the milk, and bring to a gentle simmer. In another saucepan, melt the butter and immediately add the flour.
- Lower the heat, and mix until the butter has absorbed all the flour and is the consistency of thick dough. Make sure the butter-flour mixture does not burn or brown.
- Remove the saucepan from the heat, and whisk in a couple of ladles of heated milk into the butter-flour mixture. Whisk until the flour has absorbed all of the milk. Put the saucepan back on the burner over medium heat, and whisk in the remainder of the milk.
- Continue whisking until the sauce thickens and becomes a creamy velvety consistency.
LAZY WOMAN'S LASAGNA
I have never made this.It is a requested recipe for a lasagna made without ricotta cheese. It came from an old cookbook of mine from the 70s.

- Prepare water to boil and pre-grease a deep casserole dish.
- Brown beef, onions and garlic in a medium sized sauce pan (if you don't like your onions a tad crisp, saute your onions and garlic until soft, prior to adding the beef).
- Add spaghetti sauce AND spinach to the beef, onion and garlic; cover and simmer for 15 minutes.
- Pre-heat oven to 350, and add noodles to boiling water and cook until al dante.
- Drain noodles and return to pot.
- Pour the sauce mixture into the noodles, RESERVING two or so cups, and mix thoroughly. Set remaining sauce aside.
- Pour half of the pasta mixture into the pre-greased casserole dish, layer with 6 slices of provolone cheese, pour in the remaining pasta, break the remaining provolone into pieces, layer, and sprinkle mozzarella cheese on top. Finally, pour on the reserved sauce.
- Bake, covered, on 350 for 35 minutes.
- Uncover, sprinkle parmesan cheese on top, and bake for an additional 5 minutes.
WORLD'S EASIEST LAZY LAZAGNA
Craving rich lasagna taste, but have no time to slave over this elaborate dish? Not a problem. I put lazy in lasagna - you'll have it ready for the oven in 10 minutes or less - promise. AND... drum roll... it's made with uncooked egg noodles! I came up with this idea after I spent almost an entire day making a lasagna from scratch. I make a great noodle kugel with uncooked egg noodles, so I thought - why not a lasagna?

- Reserve about 2/3 cup of shredded mozzarella and 1 cup of pasta sauce.
- Brown ground beef, sausage and onion, adding crushed garlic when almost done. Stir in pasta sauce and all dried spices.
- In a separate bowl, combine cottage cheese, mozzarella and 2 raw eggs.
- Spread one-third of meat sauce in a lightly greased 13x9 inch baking dish. Follow with a layer of uncooked egg noodles. (Simply "dump" the noodles on top of the sauce and spread with your hand to create a thin even layer, completely covering the sauce. Follow by a layer of the cheese mix, and a layer of meat sauce. Repeat procedure until all ingridients are used. Mix remaining pasta sauce with hot water, 50/50. Slowly pour the mixture around inside edge of dish, until the entire top layer of noodles is lightly covered with liquid. If necessary, simply pour the mixture straight on top. Don't worry - it will cook away. Let stand for 5 minutes before putting the dish in the oven. Lightly sprinkle with mozzarella. Tightly cover baking dish with 2 layers of heavy-duty aluminum foil.
- Bake in a preheated 350 degree F (175 degree C) oven for 35-40 minutes. Uncover. If the egg noodles seem cooked (they're so small - you can just pinch one off and taste) -- top with the remaining mozzarella. Bake for an additional 10 minutes, uncovered. Remove from oven, and let stand 10 to 15 minutes before serving.
- *** If you have no sausage on hand, just substitute ground beef. I've tried this recipe with ground turkey, and even with a mix of browned ground beef and zucchini, and it came out great. If you prefer - you can broil the top mozzarella layer for a couple of minutes for extra sizzle. Enjoy!

- Brown meat in skillet, add spaghetti sauce and heat through.
- In 3 quart oblong pan spread 1/3 of meat mixture to cover bottom, top with 4-5 uncooked noodles, half the cottage cheese and one cup of the mozzarella.
- Spread on 1/3 of meat mixture, remaining noodles, remaining cottage cheese, remaining cup of mozzarella, then top with the final 1/3 of the meat mixture.
- Right before baking pour 1/2 cup of water around inside edges of the pan, cover and bake 45 minutes at 375 degrees.
- Remove cover, sprinkle with desired amount of Parmesan, and bake 10 more minutes.
- Let stand 10 minutes before cutting and serving.
