Every time we have a party I'm requested to make this dish. Wonderful mixture of pasta, bacon, mushrooms, and onions.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in onions, and cook until translucent. In a separate pan, saute the mushrooms in butter.
- In a large bowl, combine pasta, bacon, onion, mushrooms, sauerkraut and condensed soup. Season with salt and pepper. Pour into a 9x13 inch baking dish.
- Bake in preheated oven for 45 minutes.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the lasagna noodles, about 3 or 4 at a time, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes per batch. Drain well in a colander set in the sink, and lay the cooked noodles flat on waxed paper or aluminum foil while you finish cooking the rest of the noodles.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x11-inch baking dish.
- Place the potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Using a potato masher, mash the potatoes with the milk and butter until smooth. Stir in 1 teaspoon of onion salt, and season with salt and pepper. Set the mashed potatoes aside to cool. When cooled, mix with shredded Cheddar cheese.
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and almost crisp, about 10 minutes. Place the onion into the hot bacon fat, and cook and stir until the onion is translucent, about 8 minutes. Break the bacon into pieces with a spoon or spatula, and set the bacon and onion aside. Mix the cottage cheese, egg, and 1 teaspoon of onion salt in a bowl.
- To make the casserole, place 3 lasagna noodles into the prepared baking dish, and spread with the cottage cheese mixture in an even layer. Top the cottage cheese with 3 more lasagna noodles, then spread potato-cheese mixture in a layer. Top the mashed potato layer with 3 more noodles, then spread the bacon and onion into an even layer on top of the casserole.
- Cover the casserole with aluminum foil, and bake in the preheated oven until the cheese is melted and the casserole is hot, about 30 minutes. Allow to set for about 10 minutes before serving.

POLISH NOODLES (COTTAGE CHEESE AND NOODLES)
This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

- Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.

- In a large bowl, combine cottage cheese and eggs. Stir in the flour, salt and 1 tablespoon butter. , In a Dutch oven, bring 3 qts. of water to a boil. Reduce heat. Drop batter by tablespoonfuls into simmering water, stirring gently to prevent sticking; cook pierogi in batches for 4-6 minutes or until slightly firm. LAZY PEROGY CASSEROLE
A great recipe from the "Barnwell Cookbook." I make this often, and it can be made ahead, and then just put in the fridge until you are ready to cook it. I often make it the night before, and let it sit in the fridge. A real keeper, and Canadian Favourite!

- Cook noodles as directed on package.
- Line the bottom of a 9x13-inch pan with the noodles.
- In medium sized bowl mix cottage cheese, egg and 1/2 tsp of onion salt together.
- Spread of noodles.
- cover with another layer of noodles.
- Now mix cheddar cheese with potato, salt, 1/2 tsp of onion salt and pepper.
- Spread this over noodles.
- Cover with yet another layer of noodles.
- Melt butter in frying pan and sauté onion slowly until clear and soft.
- Pour over noodles and cover.
- Bake 30 minutes in 350° oven.
- Let stand 10 minutes before cutting.
- Serve with sour cream and grated cheddar.

One of my employees made this for a Christmas party a few years back. I loved it and so did everyone else. I got the recipe from her and added some things over the years. No complaints were heard : )

Steps:
- Boil water for pasta.
- While water is boiling add 3 Tablespoons of Butter to a medium sized skillet.
- Dice up one medium sized onion and add to skillet.
- Saute until clear. Add mushrooms after being drained.
- Add Polish Sausage after being sliced.
- Sautee for about 5-7 minutes to heat through.
- Cook pasta according to package.
- Drain noodles.
- Add saurkraut to hot pot and turn heat to medium. Add 2 Tablespoons of Butter while noodles drain.
- Combine the saurkraut and sausage mixture into to pot. Mix around.
- Add noodles and combine thoroughly. Put heat to medium low for 5-7 minutes.
- Enjoy!

- Combine potatoes, onion, parsley, salt and pepper in bowl; mix well.
- Arrange 1/3 of the noodles in 9 x 13" pan.
- Spread with 1/2 of the potato mixture, dot with 1/3 of the butter and sprinkle with about a 1/2°C of each of the above cheeses.

- 1. Place sauerkraut in a colander. rinse sauerkraut well to get rid of some of the bitterness. Press on sauerkraut to remove some of the water.
- 2. Cook chopped onion with a little bit of the butter until golden in color. Set aside.
- 3. Place kielbasa in a Dutch oven.
- 4. Fill with water until kielbasa is covered. Boil kielbasa until heated through. About 5-10 minutes after the water starts to boil.
- 5. Remove kielbasa to a platter. Slice kielbasa. Cut each slice in half. You can cut them into quarters if you wish. I usually cut each slice in half.
- 6. Bring water to a boil for egg noodles. Cook per directions on the bag. Drain noodles. Place noodles back into the large pot.
- 7. Place burner on low heat. Fold remaining butter into noodles until melted. Add cooked onions, Parmesan cheese, salt, and pepper, Mix well and set aside.
- 8. Add sauerkraut and kielbasa to noodles. Stir well over medium heat until hot. Sprinkle with poppy seeds if desired. Salt and pepper to taste. Serve as a main dish or side dish.
CROCK POT LAZY PIEROGI CASSEROLE
Loaded with bacon, onions, potatoes and cheese, this lazy pierogi casserole is the tastiest thing next to a real pierogi!

- Cook the lasagna noodles according to the package instructions. Drain, rinse under cold water and set aside.
- Grease the inside of a large crockpot.
- Peel and dice the potatoes. Place in a large pot of water, bring to a boil and then cook until they fall apart when pierced with a fork.
- Drain the potatoes and place in a large bowl.
- Mash in the butter, salt, pepper and milk, and continue mashing the potatoes until smooth. Mix in the shredded Cheddar cheese
- Stir 1/2 tsp onion salt into the ricotta cheese and set aside.
- Place the bacon on a large foil lined cookie sheet and bake in a 350 degree oven for 20 minutes, until cooked but still soft (or cook in a pan on the stovetop).
- Slice the three onions and fry in a pan with the tablespoon of butter until soft.
- Cut the bacon with kitchen shears or cut it into smaller pieces with a knife.
- Place 3 lasagna noodles onto the bottom of the crockpot.
- Spread one cup of ricotta cheese on top of the noodles.
- Spread 1/3 of the potato cheese mixture on top of the ricotta.
- Spread one third of the bacon and one third of the onions on top of the potatoes.
- Place another three noodles on top and repeat layer.
- For the last layer, place the final three noodles on top, then potatoes and then bacon and onions, no ricotta cheese.
- Cook in the crockpot on low for 2 hours.

- 2. In large frying pan cook bacon, set aside. Crumble. Same pan toss in butter melt, and saute mushrooms and onion till softened, turn pan to med, toss drained kraut in pan cook for 5 minutes to marry flavors. Add soup and bacon stir well.
