MOM'S LAZY MAN COBBLER



Mom's Lazy Man Cobbler image

The easiest and most tasty cobbler ever. My mother was always able to whip up a wonderful and quick dessert thanks to this recipe.

1/2 cup butter
1 cup self rising flour
1 cup sugar
1 cup milk
1 teaspoon vanilla
1 (20 ounce) can peach slices in heavy syrup (or any other fruit you like. This is very good with a mix of blackberries and peaches!)

Steps:

  • Pre heat oven to 350.
  • place stick of butter in 9x13 size casserole pan and let sit in oven during preheating to melt butter.
  • Mix flour, sugar, milk and vanilla with blender until well mixed.
  • Pour batter over melted butter.
  • Pour fruit and juice evenly over batter. (My husband prefers more bread, less juice so I drain half.).
  • Bake for 1 hour.
  • Serve warm with ice cream.

This is phenomenal and easy. I varied it a little by doing half cherries and half peaches and adding a little cinnamon and lemon. Recipe posted as written. Serving size is estimated.

1/2 cup butter
1 cup milk
1 cup sugar
1 cup flour
1 teaspoon baking powder
1 dash salt
1 quart cherries or 1 quart blackberry

Steps:

  • Melt the butter in a baking pan.
  • In a bowl, mix together the flour, sugar, baking powder, salt, and milk and pour over butter.
  • Cover the batter with fruit and do not stir. The batter will rise and absorb the fruit flavor.
  • In a preheated 350 oven , bake the pie for 1 hour and serve it warm with whipped cream or ice cream.

½ cup margarine
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1 (29 ounce) can sliced peaches, juice reserved

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Once oven reaches desired temperature, melt margarine in a glass 9x13 baking pan.
  • In a large bowl, combine flour, sugar and baking powder. Pour reserved peach juice into dry ingredients and stir until smooth. Remove glass pan from oven and pour batter in starting in the center; batter will then spread itself over entire pan. Add peaches by placing them in center of pan; allow them to spread on their own.
  • Bake cobbler in preheated oven for 20 to 25 minutes, or until brown on top. Do not overcook.

This recipe uses cherries, but I've used blackberries with good results. This is about the simplest cobbler recipe that you will find.

1/2 cup butter or 1/2 cup margarine
1 cup sugar
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1 can pitted unsweetened cherries
1/2 cup sugar

Steps:

  • Preheat oven to 350 degrees.
  • Place butter in a 9" x 9" dish.
  • Place dish in oven to melt.
  • Beat together till smooth, 1 C sugar, flour, baking powder, salt and milk.
  • Pour over melted butter, but DO NOT STIR!
  • Empty can of undrained cherries over batter.
  • Sprinkle 1/2 C sugar over cherries.
  • Bake for 30 minutes.
  • Batter will rise to the top.

I make this all the time and take it to Potlucks at church. People love this so I'm always taking my dish home empty. When I make this with peaches I add about 1/2 teaspoon of cinnamon. You can also make this with self-rising flour but you have to leave out the baking powder and salt.

1 cup plain flour
2 cups sugar, divided
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
4 cups blackberries or 4 cups fruit, of your choice

Steps:

  • Melt butter in a 13x9-inch pan.
  • In a bowl combine flour, one cup of the sugar, baking powder and salt, and 1 cup milk.
  • Pour the contents of the bowl in 9x13-inch pan but do not stir.
  • Combine the four cups of berries and one cup of sugar in a sauce pan and heat to boiling.
  • Put this on top of batter but do not stir.
  • Bake at 375 degrees for 30 minutes or until browned on top.
