This will cook merrily away while you go shopping or take a nap. It's also good if you have the flu and can't face the kitchen.

1 lb lean hamburger
2 large carrots, sliced lengthwise and cut into chunks
1 celery rib, sliced
1 can tomato soup
1/2 can water
1 bay leaf
1 teaspoon celery seed
2 medium potatoes, cut into chunks
1 onion, thinly sliced
1 can green beans
1 (6 ounce) can mushrooms

Steps:

  • Grease a casserole dish.
  • Put into it crumbled burger, carrots, celery, soup, water, spices, potatoes, onion, green beans and mushrooms.
  • Cover and bake at 275 degrees for 4 hours, adding a litle more water if necessary.

2 lbs beef stew meat
1 (10 ounce) can cream of celery soup
1 (10 ounce) can condensed golden mushroom soup
2 (10 ounce) cans water
1 (1 ounce) package dry onion soup mix
2 cups diced potatoes
1 cup diced carrot

Steps:

  • Mix all but vegetables in deep casserole.
  • Bake at 300 degrees for 3 hours.
  • Add carrots after 1 hour.
  • Add potatoes after 2 hours.
  • Add more water if needed.
  • I have also just put all ingredients into a crock pot on low all day.

Lazy Day Beef Stew (Fresh or Frozen Beef) I am now officially a convert. I had never cooked stew with frozen beef... In. My. Life. But a while ago, I had the flu for three days. Then I got hungry but had no energy. I decided to take a chance and make a "dump" stew using a solid block of frozen stew beef and go back to bed. The result was unbelievable. Tender, brown beef and great flavour. I still do it the old-fashioned way as I describe in my real Beef Stew recipe, but this is a quick and very good alternative for sick days, or just "those days".

1 large onion (chopped)
3 garlic cloves (minced)
1 1/2 cup beef or chicken broth
2 tbsp Worcestershire sauce
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp vinegar (any kind)
1 tsp salt
1/2 tsp pepper
1 - 1.5 lbs stew beef (frozen or fresh)
3 - 4 red-skinned potatoes (cut into 1 inch pieces)
2 to 3 carrots (cut into 1 inch pieces)
1 cup frozen peas
2 tbsp cornstarch
3 tbsp Water
2 tbsp chopped fresh parsley (optional)

Steps:

  • Toss the first ten ingredients, up to and including the frozen stew beef, into the Instant Pot. Close the lid and make sure the valve is set to Sealing. Push Pressure Cook (or Manual) and use the +/- button to get to 25 minutes.
  • While it's cooking, cut the potatoes and carrots into 1" pieces, with or without the skins. Make a slurry by stirring the cornstarch into the water until smooth.
  • When the pot beeps that it's done, leave it for a 10-minute natural release. Then flip the valve to Venting for a quick release of any remaining pressure and when the pin drops, open the pot.
  • Toss in the potatoes and carrots (not the peas) and gently push them into the liquid. Close the lid again and hit Pressure Cook (or Manual) . Set the cook time to 4 minutes. When it's done, do a quick release - pin drop - open the pot.
  • Hit Cancel, then Saute. Give the cornstarch slurry a stir and when the stew is boiling stir in about half the slurry. Boil to thicken it and if you want it thicker, add more of the slurry.
  • Hit Cancel and stir in the frozen peas. The heat of the stew will be enough to cook them without turning them to mush. Taste and add salt and pepper if needed. Add the parsley, if using, and You. Are. Done.
  • Go back to bed. And I hope you feel better soon.

This easy to make stew is so rich and delicious. Can be baked or made in a slow cooker.

2 lb beef cubes
2 c carrots, sliced or baby carrots
2 c potatoes, cut into chunks
2 medium onions, chopped
1 c celery, chopped
1-1/2 c green beans or 1 (10 ounces) pkge. lima beans
2 tsp quick cooking tapioca
1 tsp salt
1/2 tsp pepper
1 can(s) (8 ounces) tomato sauce
1 c water
1 Tbsp brown sugar

Steps:

  • 1. Place beef cubes in a single layer in a 2-1/2 quart casserole or roast pan. Add vegetables. Sprinkle tapioca, salt and pepper over top. Pour tomato sauce mixed with water over vegetables and seasonings. Crumble brown sugar over all.
  • 2. Cover tightly and bake at 325 degrees for 3 hours.
  • 3. SLOW COOKER: Place beef in bottom of slow cooker. Add vegetables. Sprinkle tapioca, salt and pepper over ingredients. Mix tomato sauce and water. Pour over top. Sprinkle brown sugar over all. Cover. Cook on low 8 hours.

This was my Mom's recipe, its soo good and so simple to whip up, *NOTE: I double this recipe to feed my family all but the onion soup mix I only use the one package. My kids love this one, the meat is so moist and tender.

1 lb stewing beef
1 can mushroom soup
1 can sliced mushrooms
1 onion chopped
1 envelope onion soup mix
1 can water

Steps:

  • 1. Mix all ingredients together in a roasting pan. Cover and bake at 350 for 3 hours, stir each hour. Serve over mashed potatoes, noodles or rice.

8 ounces day-old Italian bread or French bread, sliced
1 pound bulk pork sausage, cooked and crumbled
8 large eggs
2 cups milk
1/2 teaspoon pepper
8 ounces sliced Swiss cheese
1/4 cup minced fresh parsley

Steps:

  • Line a greased 13x9-in. baking dish with bread. Sprinkle with sausage. Beat the eggs, milk and pepper; pour over sausage. Press bread down with a spatula to absorb egg mixture. Top with cheese and parsley. , Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.
