LAYERED STRAWBERRY CREAM PUFF CAKE (MILLE-FEUILLE) RECIPE BY TASTY

Steps:
- In a microwave-safe bowl, whisk the yolks and sugar until pale in color.
- Add cornstarch and whisk well. Add the vanilla extract and milk. Whisk until well combined.
- Loosely cover the bowl with plastic wrap and microwave for 4 minutes, stirring halfway through. Remove plastic and stir.
- Cover with a plastic wrap and chill at least 30 minutes.
- Cut the thawed puff pastry into three equal-sized rectangles.
- Pierce each piece of puff pastry with a fork.
- Heat a nonstick pan over low heat. Place the puff pastry in the pan and cook for 10 minutes.
- Flip the puff pastry sheets, and place a lid on the top of the pan. Cook for 10 minutes.
- Remove the lid and sprinkle 1 teaspoon of sugar on sheet of puff pastry. Flip the pastry over so that the sugared side is on the bottom.
- Bring the heat up to high. Place a piece of parchment paper over the puff pastry and weigh it down with another pan. Once the surface is caramelized, about 1-2 minutes, remove from the heat and let cool to room temperature on a cooling rack.
- Place the custard in a piping bag fitting with an large round tip.
- Pipe the custard on one sheet of puff pastry. Top with a layer of sliced strawberries, then pipe another row of custard. Top with another sheet of puff pastry, custard, sliced strawberries, custard, and the remaining puff pastry sheet.
- Dust the top with powdered sugar.

NAPOLEON DESSERT | MILLE FEUILLE CREAM PASTRY
Layers of flaky French pastry and the most perfect vanilla pastry cream come together in this popular cream pastry, also known as a Mille Feuille. If you like this recipe, you'll also probably like this Cannoli Filled Napoleon.

- Thaw the puff pastry according to the package directions.
- Preheat the oven to 400 degrees F (204.4 degrees C) and cover a baking sheet with parchment paper.
- Unfold both sheets of pastry and divide each into thirds by cutting along the fold lines, giving you 6 rectangles of pastry. Lay the rectangles on the parchment covered baking sheet, spacing them about 1/4-inch apart.
- Cover the pastry with another sheet of parchment paper and lay another baking sheet on top. This will prevent the puff pastry from rising too much and give the pastry nice, flaky layers.
- Bake for 35-40 minutes. Remove the top baking sheet and the top layer of parchment and bake for another 5-10 minutes, until the pastry is golden brown. (*Please read the note below abotu preventing your puff pastry from burning.)
- Remove from the oven and let cool completely before assembly.
- Lay one sheet of baked puff pastry on a serving dish and spread about a 1/2-inch thick layer of pastry cream evenly over the top. Layer another rectangle of pastry over the cream, repeat with another 1/2-inch thick layer of pastry cream and top with a third pastry rectangle. Press on the top of the Napoleon slightly just to evenly distribute the layers.
- Repeat with the remaining pastry rectangles and pastry cream. Cover the Napoleons with plastic wrap and refrigerate for at least 2 hours. (*See note below.)
- Dust the tops of each Napoleon with a thick layer of powdered sugar right before serving.
- Slice each Napoleon into 6 slices, using a serrated knife.

STRAWBERRY MILLE FEUILLE

Steps:
- Preheat oven to 220C (425F).
- Roll out pastry to a thin rectangle and cut into 3 even sections.
- Place rectangles onto baking sheets and prick all over with a fork.
- Bake for 15-20 minutes or until golden brown and crisp. Cool on a wire rack.
- When cold trim the edges with a very sharp knife. Reserve the trimmings.
- Cut half of the strawberries in half and reserve for decorating the top.
- Slice the remaining strawberries.
- Whip the cream until stiff and stir through the sugar and vanilla. Fold in the sliced strawberries.
- Place a pastry slice on a serving plate and spread with half of the cream mixture. Lay another slice on top and spread with the remaining cream. Place the third slice on top.
- Put the redcurrant jelly and 2 Tblspn water in a small saucepan and heat gently until the jelly is liquid.
- Brush the top pastry slice with some of the jelly and arrange the halved strawberries on top. Brush with the remaining jelly.
- Crush the reserved pastry trimmings and press onto the sides of the slice with the blade of a knife.

- In a large saucepan, bring the water and butter to a boil over medium heat. Add flour all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add the eggs, 1 at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Spread into a greased 13x9-in. baking dish. Bake at 400° for 30-35 minutes or until puffed and golden brown. Remove to a wire rack to cool completely., For filling, beat the cream cheese, milk and pudding mix in a large bowl until smooth. - Prepare the custard first; it needs to cool before being used in the cake. Pour the milk into a medium-sized saucepan and whisk in the 1 tablespoon flour. Heat the milk over medium heat until steaming hot, not boiling. Meanwhile, in a mixing bowl combine the sugar, egg yolks and raspberry extract. Whisk until the mixture is light and pale and ribbons off of your whisk. Prepare the cornstarch slurry. Combine the cornstarch and milk and stir until smooth. Pour the slurry into the egg and sugar mixture and whisk until well combined.
- Once milk is hot, slowly add it to the egg yolk mixture; pour in a little bit at a time and whisk vigorously after each addition until all of the milk is added. Pour the custard back into the sauce pan and cook over medium heat, stirring non-stop, for about 3 to 4 minutes. The mixture should thicken into pudding-like consistency. If any clumps form, whisk until the custard is smooth. Transfer the custard into a small bowl, covered with plastic wrap and set into the refrigerator to cool completely. The custard can also be prepared the day before.
- Prepare the puff pastry layers next. Preheat oven to 375F. Thaw the puff pastry sheets overnight in the refrigerator or at room temperature, until soft. Unfold the sheets on parchment paper. Using an 8 or 9-inch round plate or pan, cut out a circle from each pastry sheet. Pierce each layer with a fork to keep the layer flat while baking. Transfer the layers on baking sheets lined with parchment paper, brush the tops with the beaten egg, and sprinkle with sugar for a caramelized finish. Bake the puff pastry until golden brown on top. Allow the pastry to cool on the pan until cool enough to touch, then transfer onto a wire rack to cool completely.
- Prepare the whipped cream filling. Place the softened butter and cream cheese into a mixing bowl and whisk on high speed until light and fluffy. Add the cold heavy cream and sweetened condensed milk. Mix on medium speed until a smooth and fluffy frosting forms. Take care to not overmix the filling as overmixing will cause it to separate. Transfer the cream into a pastry bag; I used tip #4FT.
