LAVENDER MAYONNAISE FOR ELEGANT SALADS, FISH AND CHICKEN
This is a fabulous recipe, or rather a recipe idea. I use this lavender mayonnaise throughout the summer months; it marries so well with poached salmon and is wonderful when served with canapés, salads, cold roast chicken and most types of fish and seafood. It is easy; simply add a drop or two of lavender infused vinegar to homemade or good quality readymade mayonnaise for a floral fantasy at your dinner table! By all means add a few lavender buds when serving this, as a garnish, it adds to the whole dining experience. I have a recipe for lavender vinegar: Recipe #416577

LAVENDER DIJON DRESSING/MARINADE FOR SALADS, CHICKEN AND FISH
This lavender suffused dressing is fabulous drizzled over a plateful of fresh salad greens; it is also a wonderful marinade for various meats, poultry, and fish! Marinating time is 15 minutes to overnight.

ELEGANT BRUNCH CHICKEN SALAD
I made this for a baby shower and was bombarded with requests for the recipe! It is delicious on its own, or with small bread slices or crackers. Don't skimp by not using the homemade mayonnaise, it really adds a special flavor! Makes a 2-quart serving dish full, so if there will be other foods, this will serve at least six, maybe even up to ten!

- Bring a large pot of water to a boil. Add the chicken and simmer until cooked through, approximately 10 minutes. Drain, cool and cut into cubes.
- While boiling chicken, make the mayonnaise: Using a blender or hand-held electric mixer, beat the egg, mustard, salt, water and vinegar until light and frothy. Add the oil a tablespoon at a time, beating thoroughly after each addition. Once mixture begins to thicken, you can add oil more quickly. Continue until mixture reaches the consistency of creamy mayonnaise. NOTE: The more oil you add, the thicker it gets; you may not need the full cup of oil.
- In a large bowl, toss together the chicken, grapes, pecans, blue cheese and 1 cup of the mayonnaise. Stir until evenly coated, adding more mayonnaise if necessary. Refrigerate until serving.

ELEGANT LAVENDER AND LEMON POACHED CHICKEN BREASTS
An easy, romantic and elegant dish to make with chicken breasts, which are gently poached in a lavender infused broth and then served with a creamy shallot and lemon sauce. Use low fat creme fraiche or cream if you are watching your fat intake - it works just as well. Serve these delightful lavender poached chicken breasts with wild rice, pasta or new potatoes and mange tout. This recipe is for two people - but the ingredients can be increased with ease!

Steps:
- Place the stock and lavender essence in a saucepan and bring to boil. Add the chicken breasts and return to boil and poach for 10-15 minutes until chicken is cooked through.
- Remove the chicken to a dish and keep warm while making the sauce. Pour the stock into a jug.
- Melt the butter in the pan and soften the shallot gently for 3-5 minutes. Sprinkle on the cornflour and stir to mix.
- Gradually add the stock and stir while bringing to the boil. Simmer for 5 minutes then add the creme fraiche, salt and pepper. Simmer for a few minutes. Add lemon juice and season to taste.
- Pour the sauce over the chicken, garnish each chicken breast with some lavender flowers and serve with wild rice or pasta; new potatoes and mange tout would also be good.

- Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. , For dressing, in a small bowl, combine mayonnaise, sugar, oregano, zest, mustard, salt and pepper.
