Steps:
- Preheat oven to 350 degrees.
- Mix meat and other ingredients.
- Shape into a firm oval loaf in shallow baking pan.
- Bake for 1 hour.
- Makes 6 servings.
- Laurie's Note: Total 11 carbs.
- This was really good- very moist.
- When I removed it from the oven the baking pan was full of fat.
- I didn't pour it off; just let the meatloaf sit and soak it back up.
- Lana's Note: We like our meatloaf a little drier, so I drained off the fat.
- I have tried this recipe both ways& both are very good.

Steps:
- Preheat oven to 375°F.
- Mix together ingredients thoroughly.
- Shape into a loaf and place in a greased loaf pan.
- Bake for 60 minutes, then remove from oven and drain any fat.
- Top with any additional topping you prefer, such a low carb bbq sauce, low carb ketchup, or low carb steak sauce.
- Bake 15 minutes more.
- Allow to sit for 15 minutes before slicing and serving.

LOW CARB MEATLOAF
After lots of tweaks, here is my final version of Low Carb Meatloaf. It turns out very moist. The recipe also contains low carb ketchup.

Steps:
- Preheat oven to 350 degrees.
- Mix ketchup ingredients together and set aside. Thickness can be adjusted with more or less water. I used 1 packet of an aspartame sugar substitute but feel free to use your preferred sweetener.
- Beat eggs slightly. Mix with all the meatloaf ingredients except the prosciutto and provolone. Press into a 9x13 rectangle. Lay the prosciutto on top then layer on the provolone slices (I used 6 slices of provolone). Roll up jelly roll style and place in pan/baking dish. Top with half the ketchup.
- Bake at 350 degrees for 1 hour 15 minutes. Pour off grease and let sit for 5 minutes. Serve with remaining ketchup.

- Mix all ingredients together with hands and mold into a loaf.
- Bake on pizza sheet for 1 hour on 350°F or until cooked through, about 45 minutes into cooking process.
- Cover with desired amount of low-carb barbecue sauce and finish cooking.

- Preheat the oven to 350 degrees F. Grease a 9x5 in loaf pan and set aside.
- In a large bowl, combine all ingredients except ketchup. Mix together until well incorporated, but don't overmix.
- Transfer the mixture into the loaf pan. Bake for 30 minutes.
- Spread the ketchup on top of the meatloaf (if using). Return to the oven and bake for 25-45 more minutes, until cooked through and internal temperature reaches 160 degrees F. (Time will vary depending on thickness of the loaf.).

- Mix up all ingredients except the hard-boiled eggs.
- Pat just under half of the meat mixture into a loaf pan.
- Lay the hardboiled eggs on top and form remainder of meat around them.
