SPICY BEEF TOTCHOS RECIPE BY TASTY
Here's what you need: frozen tater tots, ground beef, Frank's Red Hot Original, ground cumin, garlic, paprika, chili powder, salt, shredded mexican cheese blend, red onion, fresh scallion, diced tomato, sour cream, guacamole

Steps:
- Preheat oven to 425ºF (220°C).
- Spread tater tots out on a sheet tray. Bake for 20 minutes. Remove from oven and set aside.
- Heat a medium skillet over medium heat. Add ground beef, Frank's Red Hot Original, cumin, garlic powder, paprika, chili powder, and salt. Gradually break up beef with a spatula and sauté until beef is fully cooked, about 5 minutes. Remove from heat.
- Place an even layer of tater tots in an 8-inch oven-safe skillet. Top with half of the beef. Sprinkle a layer of cheese. Repeat layering of tater tots, beef, and cheese.
- Lower oven temperature to 375ºF (160°C). Place skillet in oven and bake for 5-7 minutes, until cheese is melted.
- Remove from oven and top with red onion, scallions, and tomatoes. Add a dollop of sour cream and guacamole to the center of the skillet. Serve immediately.

- Bake frozen TATER TOTS following package instructions (typically 450° for 20-25 min).
- Remove tots from oven and scatter BLACK BEANS, CHEDDAR CHEESE, and BACON over the surface. Return tots to the oven to melt the cheese (about 3 minutes).
- Meanwhile, whisk together SOUR CREAM and LIME JUICE (aka lime crema) in a small mixing bowl.
- Remove totchos from the oven and scatter TOMATOES, AVOCADO, LIME CREMA, CILANTRO, JALAPENO, and GREEN ONION.
- Serve warm...and watch them disappear!

- Heat oven to 425ºF.
- Bake TATER TOTS as directed on package.
- Meanwhile, cook sausage, peppers and celery in large skillet on medium heat 6 min. or until sausage is evenly browned and vegetables are crisp-tender, stirring frequently. Add pasta sauce; mix well. Cook on medium-low heat 3 to 5 min. or until heated through, stirring occasionally.
- Spread TATER TOTS onto platter; top with sausage mixture and remaining ingredients.

SPICY CAJUN CHICKEN PASTA
This has fettuccini tossed with sauteed chicken, mushrooms, onions, red and green peppers and a spicy, tomato creole sauce. It is an amazing combination of flavors, you'll be full long before you've had enough.

Steps:
- Melt 2 tbs butter in large skillet over medium-high heat. Saute the bell peppers, onions and garlic in the butter for 8-10 minutes until softened slightly. If you like your veggies blackened in this type of dish, like I do, give them a couple more minutes until the edges start to turn black.
- While the veggies are cooking, cut the chicken breast into bite size pieces.
- Prepare a medium size pan over high heat with the olive oil. When the pan is hot, add the chicken and cook, stirring for 5-7 minutes, or until the chicken is no longer pink.
- When the vegetables are softened or blackened to your liking, add the chicken to the pan.
- Add the tomatoes, mushrooms, chicken stock, 1/4 tsp salt, cayenne pepper, paprika, pepper and thyme and simmer for 10-12 minutes until thickened. If you like your sauce a little thicker, just add 1/2 teaspoon cornstarch to a couple tablespoons of the liquid from the saucepan. Stir until smooth, remove pan from heat and whisk in cornstarch/sauce mixture, then put back on the heat.
- While the sauce is simmering, prepare fettucini according to package directions and serve sauce over plated noodles. Sprinkle a little parsley over each serving to complete.
