Lamb With Herb Paste and Spinach image

This spring lamb offering is coated with an oil-based paste. The oil serves to give the lamb's crust a beautiful glossy appearance and helps infuse it with an herbal scent. You first make a pesto-like purée with a little oil, a lot of dill and parsley, a couple of cloves of garlic and a few anchovies. (The anchovies are optional but I believe invaluable.) Rub this herb paste all over the lamb and roast. When the lamb is done, and its flavorful fat has combined with the herbed oil that has run into the bottom of the pan, you use some of this fat to brown some bread crumbs, which become insanely delicious, and then to sauté a pile of fresh spinach. Voilà: a main dish, a side dish and a crunchy garnish, all in one. It's a meal fit for a celebration, whether religious or secular. Don't know how to carve a lamb? 1 5-to-7-pound leg of lamb, preferably at room temperature, shank removed if necessary
1/2 cup chopped fresh parsley
1/2 cup chopped fresh dill
3 tablespoons extra virgin olive oil
4 anchovies, optional
2 cloves garlic, peeled
Salt
2 cups coarse bread crumbs, preferably fresh
Freshly ground black pepper
2 tablespoons pine nuts
2 tablespoons raisins or currants
1 pound spinach, chopped

Steps:

  • Heat the oven to 425º. Remove as much of the surface fat as is practical from the lamb. Combine the parsley, dill, oil, anchovies and garlic in a food processor (if you're not using the anchovies, add some salt). Purée, adding a little water if necessary. Rub the lamb with this mixture.
  • Put the lamb on a rack in a roasting pan with about 1/2 cup of water. Roast for 30 minutes, then check; if the lamb threatens to burn, turn the heat down to 350º; otherwise leave it at 425º. If the bottom dries out (the rendering lamb fat should keep it moist), add a little more water. After about 1 hour (total), check the internal temperature with an instant-read thermometer. When it reaches 130 for medium rare (125 for very rare) in its thickest part (check it in several places), it's done. Total cooking time will be less than 1 1/2 hours. Remove and let it rest.
  • Pour off and reserve all but 2 tablespoons of the fat and put the pan over a burner (or two, if it fits better). Toast the bread crumbs over low heat, stirring and seasoning with salt and pepper until they're lightly browned. Remove; add another couple of tablespoons of the fat to the pan. Add the pine nuts, raisins and spinach and cook over high heat, stirring frequently, until the spinach is very tender and most of the liquid has evaporated. Carve the lamb and serve it on a bed of spinach, sprinkled with the bread crumbs.

3 cloves garlic, cut into slivers
3 teaspoons dried dill weed
1 ½ teaspoons salt

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).

2 Tbsp. fennel seeds
1 bunch cilantro
1 bunch dill
3 small bunches tarragon
4 scallions or spring onions, thinly sliced
2 small preserved lemons, skin and flesh chopped
4 garlic cloves, coarsely chopped
1/4 cup extra-virgin olive oil, plus more for serving
2 tsp. kosher salt, plus more
1 (6-7-lb.) bone-in leg of lamb
4 lb. baby Yukon Gold potatoes
2 lemons, cut into wedges

Steps:

  • Preheat oven to 325°F. Toast coriander and fennel seeds in a dry small skillet over medium-low heat, tossing occasionally, until very fragrant, about 2 minutes. Let cool.
  • Coarsely chop cilantro leaves and tender stems (you'll get about 2 cups) and transfer to a large bowl. Coarsely chop dill leaves and tender stems (you'll get about 2 cups) and add to bowl with cilantro. Pick leaves from tarragon bunches (do not chop; you'll get about 1 cup) and add to bowl; discard stems. Add scallions and toss to combine. Transfer 2 cups herb mixture to a small bowl, cover with a damp kitchen towel, and chill until ready to use. Transfer remaining herb mixture to a food processor. Add coriander and fennel seeds, preserved lemons, garlic, 1/4 cup oil, and 2 tsp. kosher salt. Purée until a paste forms.
  • Roll out a piece of foil that's more than double the length of a rimmed baking sheet. Center foil on baking sheet, then place lamb on foil. Rub lamb all over with herb paste. Bring up foil around lamb and wrap tightly to seal. Roast until lamb is super tender and is falling off the bone, 4-4 1/2 hours. (It's important that you don't open the foil packet once sealed. To check the meat, slide a skewer or small knife through the top of the foil; the meat should yield and shred easily.)
  • Meanwhile, place potatoes in a large pot. Pour in water to cover; season with salt. Cover pot and bring water to a boil. Cook until potatoes are tender, about 30 minutes. Drain, then transfer to a medium bowl.
  • Unwrap lamb (juices will run everywhere, so be careful to make sure they stay on the baking sheet) and let cool 20 minutes. Transfer lamb to a cutting board. Pull meat off bone and shred into pieces. Return meat to baking sheet and toss in herby juices.
  • Transfer lamb to a platter. Pour juices over lamb and potatoes. Top lamb with reserved herb mixture. Drizzle lamb and potatoes with oil and lemon juice, then sprinkle with sea salt.

LAMB WITH SPINACH

Lamb and spinach is always a good combination in Indian curries. Not Indian but very nice is this Greek style dish which has that combination. It is very simple and this was "born" after a holiday in Greece and trying to re-create the taste and with that the memories of a holiday! My husband likes this with rice, I prefer it with orzo.

1 3/4 lbs cubed lamb
salt and pepper
2 -3 tablespoons olive oil
1 onion, chopped
1 -2 garlic clove, crushed
1 cup bouillon or 1 cup stock
1 3/4 lbs fresh spinach
2 teaspoons oregano
1 tablespoon lemon juice
2 ounces crumbled feta cheese, to taste

Steps:

  • Sprinkle salt and pepper over the cubed lamb, heat the oil in a dutch oven and brown the meat on all sides.
  • Add the onion and garlic and fry until the onion gets translucent.
  • Add the stock, bring to the boil, lower the heat, cover and simmer slowly for 40- 50 minutes or until the meat is tender.
  • Was the spinach and cook for about 5-7 minutes, without adding any water, drain very well and chop roughly.
  • When the lamb had its cooking time, add the spinach together with the oregano and the lemon juice.
  • On a medium heat and stirring regularly, cook until most cooking juices have evaporated, but it should still be moist.
  • Transfer to a serving dish and sprinkle with the feta cheese.

1 (6 pound) boneless leg of lamb, with shank
Salt and freshly ground black pepper to taste
3 tablespoons pureed garlic
2 tablespoons chopped chipotles (canned)
1/2 cup chopped fresh oregano
2 tablespoons olive oil
Pimento Sauce (recipe follows)
2 tablespoons olive oil
5 shallots, finely sliced
1/2 cup mushrooms, sliced
3/4 cup dry white wine
5 cups lamb stock or beef broth
1 teaspoon tomato paste
3 tablespoons pimento or roasted red pepper pureed in a blender
1 teaspoon pureed garlic
1 tablespoon unsalted butter, cold
Salt and freshly ground pepper to taste

Steps:

  • Ask a butcher to remove all bones, except shank, and to clean meat of all sinew and excess fat inside and out. Butterfly leg for stuffing.
  • Preheat oven to 375 degrees. Lay lamb flat on counter. Using a sharp knife, make several slits, about 2 inches long by 1/4 inch deep, so seasonings can penetrate meat. Sprinkle generously with salt and pepper. Puree whole garlic cloves with a little olive oil in a food processor. Add canned chipotles and blend into a paste. Spread the paste on the lamb and cover with the oregano. Roll meat to enclose stuffing and tie with string at 1inch intervals, keeping the diameter of the roll the same so that the roast cooks evenly. Shank bone will protrude at one end. Generously season outside with salt and pepper.
  • Heat oil in a large skillet over high heat. Brown lamb on all sides. Roast on rack in roasting pan 30 to 40 minutes for medium rare, 1 hour for well done. (A meat thermometer inserted to the center should read 160 to 165 degrees or a thin blade knife inserted to the center for 20 seconds should feel lukewarm on your lips.) Let sit at room temperature about 10 minutes before carving, so juices can run to center. Remove strings and slice meat thinly across the roll. Top with Pimento Sauce.
  • By removing the center bone, leg of lamb is much easier to carve and serve to guests.
  • Heat oil in a medium saucepan over moderate heat. Cook shallots and mushrooms until golden. Add wine, turn heat to high, and reduce by half. Add stock and reduce again by a quarter. Whisk in tomato paste, pimento puree and garlic. Break butter into small pieces and whisk into sauce until smooth. Adjust seasonings and strain through a fine sieve.

ROAST LAMB WITH SPRING HERB CRUMBS

100g good-quality white bread
2 garlic cloves
zest 1 lemon
1 tsp thyme leaf , chopped
small bunch parsley , chopped
3-4 anchovy fillets, chopped (optional)
5 carrots , cut into chunks
2 onions , cut into chunks
4 bay leaves
small bunch rosemary
2 tbsp olive oil
large leg of lamb , about 3kg/6lb 8oz
3 garlic cloves , thickly sliced, plus a whole bulb, halved
5 tbsp plain flour
200ml white wine , plus a splash
600ml lamb stock

Steps:

  • Heat oven to 160C/140C fan/gas 3. For the lamb, scatter the vegetables, bay leaves and a few rosemary sprigs into a large roasting tin and drizzle with the olive oil. Use a sharp knife to make little slits all over the lamb. Poke a slice of garlic and a small sprig of rosemary into each one. Sit the lamb on top of the veg in the roasting tin, add a splash of wine, then cook for 2 hrs if you like it pink, or 2 hrs 15 mins for cooked through. Remove from the oven, transfer to a board and cover with foil, then rest for 45 mins-1 hr.
  • To make the gravy, pour off most of the fat from the tin but leave the veg and any meat juices. Place the tin on the heat to caramelise the veg, then stir in the flour and cook to a paste. Gradually stir in the wine, cook for a min, then stir in the stock and simmer until you have a tasty gravy. Push the gravy through a sieve into a small pan and keep warm.
  • Turn oven up to 220C/200C fan/gas 7. For the crumbs, blitz everything in a food processor and scatter over a tray. Bake in the oven for 10-15 mins until crisp, then re-blitz or break up with your fingers to crumbs again. These can be made in advance and kept in an airtight container for 2 days. Serve the lamb carved into slices, sprinkled with crumbs and a jug of gravy alongside.

With a sharp knife, make slits on the outside of meat; insert garlic slivers. Sprinkle with rosemary and remaining salt and pepper., Place seam side down on a rack in a shallow roasting pan. I love the taste of fresh herbs with lamb. Use this marinade recipe as a guide, or adjust to your own tastes. Love mint? Add more. Hate oregano? Leave it out and add more of the other herbs. There is enough marinade for about 3 pounds of lamb chops. Double or triple it for a leg of lamb roast.

1 teaspoon ground black pepper, or to taste

1 medium lemon, sliced

Steps:

  • Pour olive oil into a 1-gallon (or larger) resealable bag. Add salt and pepper and stir to combine. Stir in oregano, mint, and parsley until evenly distributed.
