1 cup uncooked white rice
1 ½ cups water
1 (6.5 ounce) can tomato sauce

Steps:

  • Heat canola oil in a skillet over medium-high heat. Season oil with onion powder and garlic powder. Cook and stir rice in seasoned oil until rice is golden, 2 to 4 minutes.
  • Pour water and tomato sauce over the rice; stir. Bring the mixture to a boil, cover the skillet, reduce heat to medium-low, and simmer until the rice is tender, about 15 minutes.

2 tablespoons butter
1 teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon salt
½ teaspoon onion powder
8 ounces tomato sauce
2 cups chicken broth

Steps:

  • In a large skillet (one that has a lid) over medium heat, melt butter.
  • Stir in cumin, chili powder, salt, onion powder and rice for 1-2 minutes.
  • Whisk in tomato sauce and chicken broth.
  • Bring a boil, then reduce to a high simmer.
  • Cover and cook for 25 minutes (see note).
  • Uncover, fluff with a fork, and serve.

1 ½ cups uncooked brown rice
3 cups water
1 (1 ounce) package taco seasoning mix
1 (15.25 ounce) can kidney beans, drained
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, drained
salt and pepper to taste
½ cup shredded lettuce

Steps:

  • In a saucepan bring 3 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 45 minutes. Remove from heat and let stand for 15 minutes.
  • Stir in taco seasoning, kidney beans, tomato sauce, diced tomatoes, salt, pepper and lettuce.
  • Cook over medium heat until heated through.

I love this simple and tasty recipe for Mexican rice. It was taught to me by a Mexican family friend. It really does not take that long to make. It doesn't have extensive ingredients either.

1 1/2 cups long grain rice (not instant)
3 cups water
1 (1 g) packet sazon goya (con cilantro y achote)
1/2 small sweet onion
1/2 garlic clove
1 plum tomato
oil
2 teaspoons salt

Steps:

  • Coat the bottom of a big frying pan with oil.
  • Fry the rice over medium-high heat stirring constantly until it turns golden brown.
  • In a blender put the water, sazon, onion, garlic, tomato, and salt and blend until everything is mixed about 20 seconds.
  • Pour into frying rice. It will sizzle and pop.
  • Stir to mix cover with lid bring temperature to medium and let cook.
  • It should only take about twenty minutes to cook. Do not stir frequently it messes up cooking time, but do watch so it doesn't burn on bottom.
  • If rice is still hard it needs to cook longer.

2 chicken bouillon cubes
2 tablespoons tomato paste
1 3/4 water
1/2 teaspoon salt

Steps:

  • In a large skillet, heat 1 tablespoon oil and saute onions and garlic.
  • Add the chicken bouillon to the pan and crush the cubes.
  • Add 1 tablespoon oil and the rice and fry the rice until the rice turns slightly brown.
  • Add the salt, water and tomato paste and mix well.
  • Cover the pan and simmer 25 minutes.
  • Mix rice thoroughly and serve.

1 onion, chopped
1 teaspoon minced garlic
1 teaspoon chili powder
1 tablespoon ground cumin
1 cup uncooked short-grain white rice
1 ¾ cups chicken broth
¼ cup tomato paste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat the oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until onion is translucent. Stir in the chili powder and cumin, and cook for about 30 seconds. Add the rice, chicken broth and tomato paste, and bring to a boil. Transfer to a 1 quart casserole dish, and cover with aluminum foil or a lid.
  • Bake for 35 to 40 minutes, or until liquid has been absorbed and rice is tender. Let rest for 3 to 5 minutes before serving.

2 -3 tablespoons olive oil (or bacon drippings)
1 1/4 cups parboiled long-grain rice
1 (14 ounce) can chicken broth
1 (8 ounce) can tomato sauce
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Over medium-high heat, sauté onion in olive oil until tender; add rice and continue sautéing for 3-5 minutes until rice becomes opaque.
  • Add chicken broth, tomato sauce, and seasonings; bring to boil then reduce heat to low; cover and simmer 20-25 minutes until rice is cooked.
  • Remove pan from heat; let stand covered for 5 minutes until liquid is absorbed; fluff with fork and serve.
  • Note: My best ever success with this recipe was achieved using bacon drippings for sautéing, rounded measuring scoops of rice, and only a half can (4 ounces) of tomato sauce with water added to almost fill the can.

2 garlic, minced
1/4 cup Spanish onion, minced
1/4 cup celery, minced
2 tablespoons tomato bouillon (I recommend Knorr)

2 1/4 cups water
1/2 tablespoon olive oil

Steps:

  • In a small sauce pan, bring the water to a boil.
  • Meanwhile,in a medium nonstick saucepan, heat the olive oil over medium low heat.
  • Add the garlic, onion, and celery and cook for 1 minute.
  • Add the rice and cook, stirring frequently until the rice turns light brown.
  • Add the bouillon and cumin to the water, stir.
  • Add the water to the rice and stir.
  • Bring the heat to low and cover.
  • Cook the rice for 20 minutes.
